Our area has the right kind of soil for growing beautiful onions, so we always have plenty to enjoy. My mother got this recipe 30 years ago and said it originated in a Pennsylvania Dutch kitchen.

Number Of Ingredients 10

1-1/3 cups biscuit/baking mix
1 teaspoon rubbed sage
1/2 teaspoon salt
4 to 5 tablespoons milk
FILLING:
5 cups thinly sliced onions (about 5 medium)
2 tablespoons canola oil
1/2 teaspoon salt
1 egg
1 cup half-and-half cream

Steps:

  • In a large bowl, combine the biscuit mix, sage and salt. Add enough milk until mixture hold together. Press onto the bottom and up the sides of a 9-in. pie plate; set aside. , In a large skillet, saute onions in oil until tender. Sprinkle with salt. Spoon into crust. In a bowl, beat egg and cream; pour over onions., Bake, uncovered, at 375° for 15 minutes. Reduce heat to 325°. Bake 25-30 minutes longer or until a knife inserted in the center comes out clean.

This delicious pie has a buttery cracker crumb crust and is stuffed with sweet onions. It is superb along side any barbequed meat -- especially pork.

1 ½ cups buttery round crackers, crumbled
6 tablespoons butter, softened
2 cups thinly sliced sweet onions
2 cloves garlic, minced
1 tablespoon minced fresh chives
¾ cup whole milk
2 eggs
½ teaspoon salt
¾ cup shredded Cheddar cheese
1 pinch paprika
1 tablespoon chopped fresh parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine crackers and 4 tablespoons of butter in a bowl until well blended. Press into the bottom and 1 inch up the sides of 8 inch pie plate to form a shell. Refrigerate until needed.
  • Melt remaining 2 tablespoons butter in heavy skillet over medium heat. Saute onions and garlic slowly until tender, about 12 minutes. Arrange onions in the cracker crust.
  • Beat eggs, whole milk, chives, and salt in a bowl until blended. Pour the mixture over the onions. Sprinkle with cheese and paprika.
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 35 minutes, or until a knife comes out clean. Garnish with the parsley. Serve hot or at room temperature.

1/2 cup crushed butter-flavored crackers (about 12 crackers)

Steps:

  • Preheat oven to 350°. In a large skillet, saute onions in butter until tender. Place half of onions in a greased 2-qt. baking dish; sprinkle with half of the cracker crumbs and cheese. Repeat layers. , Bake, uncovered, until golden brown and bubbly, 25-30 minutes.

3 large sweet onions, sliced
4 ounces Ritz crackers
3 tablespoons milk
3 tablespoons butter, melted
1 cup cheddar cheese, shredded

Steps:

  • Cook onions in 2 Tablespoons butter in skillet until onions are soft but not brown, 6-8 minutes.
  • Crush crackers (4 oz. is equal to one 1 sleeve).
  • Add 1 tablespoon butter, 3 tablespoons milk and ½ cup cracker crumbs on bottom.
  • Add onions and then cheese and crumbs on top. Bake 20 to 30 minutes at 350°F, uncovered.
  • Note: I put a few drops of milk on top of crackers before I put them in oven.

1 cup crushed saltine crackers
1/4 cup melted butter or 1/4 cup margarine, divided
1 1/2 cups sliced yellow onions (Texas 1015 or other sweet onion preferred)
1 cup milk, scalded
2 eggs, beaten
1 1/2 cups shredded sharp cheddar cheese
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 300.
  • Lightly spray a 1 1/2 quart casserole dish with cooking spray.
  • Combine the cracker crumbs with half of the melted butter.
  • Press the crumb mixture into the casserole dish, forming a crust.
  • Saute the remaining butter with the onions until onions are transparent.
  • Spread the onions over the cracker crust.
  • Combine the scalded milk, eggs and cheese, and pour over the onions.
  • Sprinkle the salt and pepper on top.
  • Bake for 40 minutes.

6 large vidalia onions, peeled and sliced very thinly
salt and pepper
1/2 cup butter
30 Ritz crackers (use one sleeve of crackers, coarsely crushed)
1 cup grated parmesan cheese

Steps:

  • Set oven to 350 degrees.
  • Butter a 2-qt casserole dish.
  • In a large saucepan, melt butter.
  • Add onions to pan, over high heat, saute until soft, and just starting to brown, about 20-25 minutes
  • Remove from heat.
  • Place half of the onions in the baking dish; cover with half the crackers, and half of the Parmesan.
  • Repeat to make another layer of onions, crackers and Parmesan Bake, uncovered, until cheese on top is lightly browned, about 25 mins Serve warm.
  • Note: if made a day ahead, let cool, and keep refrigerated until time to reheat for serving.

5 large sweet onions, cut into 1/4 inch slices and separated into rings
¼ cup margarine
¼ cup sour cream
¾ cup grated Parmesan cheese
10 buttery crackers

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
  • Melt the margarine in a large skillet over medium heat. Add onions; cook and stir until tender. Turn off the heat, and stir in the sour cream and Parmesan cheese. Transfer to the prepared baking dish, and crumble the crackers over the top.
  • Bake uncovered for 30 minutes in the preheated oven, until the top is browned and the sauce is bubbly.
