1 teaspoon chicken bouillon granules
1/4 cup water
1 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 teaspoon plus 1 tablespoon olive oil, divided
2 cups fresh broccoli florets
2 medium carrots thinly sliced
1 large onion, sliced and quartered
1 cup sliced celery
2 medium zucchini, halved lengthwise and thinly sliced
1 medium sweet red pepper, thinly sliced
1 cup sliced fresh mushrooms
2 cups thinly sliced cabbage

Steps:

  • In a small saucepan, heat bouillon and water for 1 minute; stir well. Stir in the salt, garlic powder, pepper and 1 teaspoon oil., In a large nonstick skillet or wok, stir-fry the broccoli, carrots, onion and celery in remaining oil for 2-3 minutes. Add the bouillon mixture; cook and stir for 3 minutes. Add zucchini and red pepper; stir-fry for 3 minutes. Add mushrooms and cabbage; stir-fry 1-2 minutes longer or until crisp-tender.

This divine combination of sweet red peppers and sweet red onions goes very well with lamb. To add a little variety, add 1/4 cup raisins before serving, it's delicious!

2 red bell pepper, cut into strips
2 red onions, cut into strips
1 tablespoon olive oil
1 teaspoon butter
¼ cup red wine
1 pinch salt
1 pinch ground black pepper
1 pinch dried basil

Steps:

  • In a hot saucepan over a medium heat, combine red peppers, onion, oil and butter; saute for 2 minutes. Reduce heat to medium-low and continue cooking, stirring occasionally, until the onions and peppers soften.
  • If desired, stir red wine into the vegetables and cook until the wine evaporates; approximately 30 minutes. Season with salt, pepper, and basil.

2 tablespoons extra virgin olive oil
1 large yellow onion, peeled and sliced into ¼-inch strips
4 bell peppers, stemmed, seeded and cut into ¼-inch strips
½ teaspoon salt
½ teaspoon freshly ground black pepper
2 teaspoons balsamic vinegar
1 teaspoon fresh thyme, finely chopped (or ½ teaspoon dried thyme)

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onions, peppers, salt and pepper.
  • Reduce the heat to medium-low and cook, stirring frequently, until the onions are caramelized and the peppers are tender and slightly browned, 15 to 20 minutes. If a brown coating forms on the bottom of the pan during the cooking process, add a few tablespoons of water and stir; repeat as necessary.
  • Add balsamic vinegar and thyme and turn the heat down to low. Cook for a few more minutes. Taste and adjust seasoning, if necessary. Serve hot or at room temperature.

I am making this for our family holiday celebration pot luck this year. I cut the sausages into 1" bite size pieces and the peppers and onions into 2"x 1/2" slices to make it easy to eat with a fork! you can use any of your favorite sausages and/or peppers you choose!

1 lb smoked sausage
1 lb polska kielbasa
1 whole green pepper
1 whole red pepper
1 whole yellow pepper
1 whole medium onion
1 tablespoon salt

1 teaspoon cayenne pepper
1 tablespoon italian seasoning
1 tablespoon oil

Steps:

  • cut sausages into 1" bite sized rounds.

1 large purple onion, sliced
1 red bell pepper, sliced

1 teaspoon sea salt

Steps:

  • Preheat oven to 450 degrees Fahrenheit. Wash and trim asparagus, removing tough ends; cut spears in half and place in large bowl with sliced onions, peppers, celery and garlic. Toss vegetables together with balsamic vinegar and olive oil; mix well and allow to marinate at room temperature 15 minutes. 6 small Italian pearl onions (cipolline), thinly sliced (1/2 cup)
2 cloves garlic, finely chopped
1 tablespoon olive oil
1/2 teaspoon Italian seasoning
1 tablespoon balsamic vinegar
1 teaspoon honey
1/2 teaspoon Dijon mustard
1/2 teaspoon salt
Freshly ground black pepper to taste

Steps:

  • Heat oven to 400°F. Cut bell peppers in half; remove seeds. (For larger peppers, cut lengthwise in half again.)
  • In medium bowl, toss bell peppers, onions, garlic, oil and Italian seasoning. Spoon mixture into 13x9-inch pan.
  • Roast 10 to 12 minutes or until bell peppers are crisp-tender.
  • Meanwhile, in small bowl, beat remaining ingredients except ground pepper with wire whisk.

2 tablespoons tarragon vinegar
1 tablespoon Dijon mustard
2 teaspoons sugar
2 teaspoons caraway seeds

1 teaspoon grated lime zest
1/4 teaspoon pepper
1/4 teaspoon Louisiana-style hot sauce

Steps:
