2 medium onions, peeled,sliced and separated into rings
3 tablespoons butter or 3 tablespoons margarine
1 (8 ounce) package refrigerated biscuits
1 egg
1 cup sour cream
1/2 teaspoon salt
1 teaspoon poppy seed

Steps:

  • Sauté onions slowly in the butter just until soft in a medium-sized frying pan.
  • Separate the biscuits; place in a single layer in any ungreased 8-inch cake pan.
  • Spoon onion mixture on top.
  • Beat egg slightly in a small bowl; blend in sour cream and salt.
  • Spoon over onion mixture; sprinkle with poppy seeds.
  • Bake at 375 for 30 minutes or until topping is set.
  • Slice in wedges and serve warm.

This is a great accompaniment to a dinner entree, or may be served as the entree, with a salad. Delicious!

2 tablespoons butter
4 large onions, sliced
4 slices rye bread
2 eggs
1 cup sour cream
¼ teaspoon salt
ground white pepper, to taste
½ teaspoon caraway seeds
4 slices bacon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C.) Heat butter in a large skillet. Saute the sliced onions until soft and translucent; set aside.
  • Line a 10 inch quiche pan with bread. Place cooked onions in an even layer over the bread. In a small bowl, combine eggs, sour cream, salt, white pepper and caraway seeds. Pour egg mixture over bread and onions, then lay bacon strips over top.
  • Bake in the preheated oven 25 to 30 for minutes, or until filling is set.

dough
1 yeast cake, or 1 pkg of dry yeast, i haven't seen yeast cakes in the store in years
3 Tbsp cane sugar
1/4 c whole milk, scalded and cooled to 120*
1/4 c half and half or cream. warmed to 120*
2 Tbsp sweet butter
1/4 tsp sea salt, fine
1 exlarge egg, separated
1 1/4 c flour, sifted before measuring
TOPPING
2 Tbsp sweet butter
2 large texas sweet onions. thinly sliced
1 Tbsp flour
2 exlarge eggs
1/2 tsp fine sea salt
1/4 tsp freshly grated nutmeg
3 slice thick bacon, cooked until crisp and crumbled

Steps:

  • 1. I use a 9" springform pan, greased sides and bottom. My grandpa used a cast iron skillet.
  • 2. Stir yeast into the warm milk with 1 1/2 teaspoons of sugar. Let it foam. Then add to warm half/half or warm cream.
  • 3. Slightly beat the yolk with a fork. Combine the flour, salt, butter, yolk and remaining sugar in bowl. Mix well. Add the yeast mixture and mix well. Refrigerate in a covered bowl. The next day take the dough out of the refrig. and let it rest to warm sightly to room temp. Beat the egg white till it well foamed, just before it starts to peak. Fold in the batter.
  • 4. Topping: Cook the bacon until crisp, drain, and crumble it. Set aside. Melt butter or use the bacon greased in a skillet on high heat, do not brown the butter. When hot add the onions, turn down heat and cook until soft and slightly golden. Add the flour and mix it well to incorporated into the onions and butter. Transfer onions to a bowl and cool.
  • 5. In another bowl add the eggs, salt, and nutmeg and beat until foamy. Add the onions. Add the bacon on top.
  • 6. Roll the dough out on a lightly floured surface. Place in pan and let rest for 30 minutes. Place dough in well greased pan and add the topping. Bake in center oven at 375* for about 50 minutes or until golden brown.
