BALSAMIC ONION AND GARLIC RELISH



Balsamic Onion and Garlic Relish image

1/4 cup olive oil
2 Spanish onions, peeled and sliced 1/2-inch thick
6 garlic cloves, thinly sliced
3 tablespoons balsamic vinegar
1 tablespoon sugar
3 teaspoons salt
1 teaspoon red pepper flakes
2 tablespoons chives, chopped

Steps:

  • Pour the olive oil into a large skillet and place over high heat. Add the onions and garlic and cook, stirring to coat in oil. Reduce the heat to medium, add the balsamic, sugar, salt and red pepper flakes and cook 15 to 20 minutes, until the onions are velvety soft. Remove from the heat and let cool and add the chopped chives. Serve room temperature in a decorative bowl.

2 medium yellow onions or sweet onions, when available
1/4 cup vegetable oil
1 teaspoon freshly ground black pepper
1 tablespoon crushed red pepper flakes
3 cloves fresh garlic, crushed
1 cup light brown sugar
48 ounces root beer
Hot dogs, cooked, for serving
Brown mustard, for serving
Mayonnaise, for serving

Steps:

  • Peel the onions, cut in half and slice into 1-inch pieces. Add the onions and the vegetable oil to a large saucepan, over medium-low heat, and saute until soft. Stir in the black pepper, crushed red pepper flakes, garlic and brown sugar until incorporated. Add half of the root beer and let reduce until starting to get thick. Stir in the remaining root beer and continue to reduce until the liquid is almost completely evaporated.
  • Serve on top of good quality, natural casing hot dogs with a good brown mustard and a little mayonnaise, to taste.

4 large sweet onions, chopped
2 tablespoons canola oil
3 garlic cloves, minced
1/3 cup bourbon
4 plum tomatoes, peeled, seeded and chopped
1/2 cup golden raisins
1/4 cup sugar
1/4 cup packed dark brown sugar
1/4 cup cider vinegar
1 teaspoon mustard seed
1/2 teaspoon salt
1/2 teaspoon ground turmeric
1/2 teaspoon ground mustard
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
Cooked sausage or meat of your choice

Steps:

  • In a large saucepan, cook onions in oil over medium heat 40-45 minutes or until onions are golden brown, stirring occasionally. Add garlic; cook 1 minute longer. Remove from heat. Add bourbon, stirring to loosen browned bits from pan., Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until thickened. Store in airtight containers in the refrigerator up to 1 week. Serve with sausage or other meat.

4 medium sweet onions, halved and thinly sliced
1/2 cup sugar
1/3 cup water
1/3 cup cider vinegar
1 cup mayonnaise
1 teaspoon celery seed

Steps:

  • Place onions in a large bowl. In a small bowl, combine the sugar, water and vinegar; stir until sugar is dissolved. Pour over onions. Cover and refrigerate for at least 3 hours. , Drain onions, discarding liquid. Combine mayonnaise and celery seed; add to onions and mix well. Store in the refrigerator.

3 medium yellow onions (about 1 1/2 pounds total), finely chopped (about 2 1/2 cups)
1/3 cup canned diced plum tomatoes with juice
1 teaspoon sugar
3 tablespoons plus 1 teaspoon cider vinegar
2 teaspoons coarse salt
Pinch of cayenne pepper

Steps:

  • Heat the oil in a medium skillet over medium-high heat. Add onions; cook, stirring occasionally, until beginning to soften, about 7 minutes. Reduce heat to medium. Add tomatoes; cook, stirring occasionally, 10 minutes.

4 teaspoons vegetable oil
2 boneless, skinless chicken breasts, about 1 pound (450g), sliced lengthwise into 4 flat 1⁄2-inch-thick (1.3cm-thick) pieces
1 teaspoon kosher salt
1⁄2 yellow onion, sliced
1 teaspoon distilled white vinegar
1⁄2 red onion, thinly sliced
1⁄2 bunch scallions, white and green parts, thinly sliced
2 tablespoons fried shallots (store-bought is totally great)
3 tablespoons salted butter
4 slices rye bread
4 slices good melting cheese, such as Colby Jack or Muenster

Steps:

  • Heat a large sauté pan with 2 teaspoons of the vegetable oil over high heat until it is smoking. Season the chicken with 3⁄4 teaspoon of the salt and gently place it in the pan. Cook on one side until almost cooked all the way through, about 5 minutes. Flip the chicken and cook on the other side for about 30 seconds, or until it is no longer pink. Transfer the chicken to a plate to rest.
  • Immediately add the yellow onion and the remaining 2 teaspoons vegetable oil to the pan. Stir and cook for 5 minutes, or until the onion is dark and smells amazing but is not burnt. If it's getting too dark, lower the heat. Add the vinegar, along with the liquid that has collected on the plate where the chicken is resting, and turn the heat to low. Simmer the onion for 2 to 4 minutes, or until the liquid has evaporated. Transfer the onion to a bowl, using a rubber spatula to scrape the pan out completely. When the onion has cooled down a little, about 5 minutes, add the red onion, scallions, fried shallots, and remaining 1⁄4 teaspoon salt and stir to combine.
  • Melt 2 tablespoons of the butter in the same pan. Lay out two slices of bread on your work surface and place a slice of cheese on each. Top each piece of cheese with half of the onions, two pieces of chicken, and another slice of cheese, and cover with another slice of bread. Place the sandwiches in the pan with the melted butter. Cook over medium heat, about 3 minutes, until the cheese on the bottom slice is melted and the bread is nicely toasted. Add the remaining 1 tablespoon butter to the pan and flip the sandwiches. Cook them for another 1 to 2 minutes, until the cheese is melted and the bottom is toasty. Remove the sandwiches from the pan, cut them in half, and insert a frilly toothpick or cocktail sword near the top in each half and serve.

2 celery ribs, chopped finely
1 medium red bell pepper, chopped
1 -2 tablespoon melted butter
3/4 cup apple cider vinegar
1/4 cup water
2 tablespoons brown sugar (or to taste)
1 teaspoon celery seed
1/4 teaspoon salt (or to taste)

Steps:

  • Saute onions, celery and red bell pepper in the butter in a Dutch oven for about 15 minutes or until tender (do not brown).
  • Add in vinegar and remaining ingredients to the mixture; bring to a boil, reduce heat and simmer uncovered for about 20 minutes.
  • Store in refrigerator for 1 day before using.
  • Serve chilled or at room temperature.

REDCURRANT & RED ONION RELISH

Number Of Ingredients 10

2 medium red onions , peeled and cut into thin wedges
1 small red pepper , seeded and cut into small chunks
2 tbsp olive oil
1 plump red chilli , seeded and chopped
2 large garlic cloves , chopped
1 small knob fresh ginger , chopped
200ml red wine vinegar
140g light muscovado sugar
1 tsp five spice powder
200g redcurrants , stripped from stalks

Steps:

  • Toss the onions with the red pepper and the oil, then fry in a frying pan for 5-8 mins over a high heat until lightly charred and softened. Remove from the pan and set aside.
  • Put the chilli, garlic and ginger in the pan with half the vinegar. Bring to the boil then simmer for 2-3 mins. Add the onions and pepper plus the remaining vinegar, all the sugar, spice and 1 tsp salt.
  • Bring to the boil then bubble away for about 5 mins until thickened. Add redcurrants and simmer for about 5 mins more, or until they have burst, but still have some shape and the liquid is syrupy.
  • Remove and pour into a large heatproof jar. Cover and seal while hot. Keeps in the fridge for up to 3 weeks.

I often serve grilled meats at my parties, and with them I like to serve this unusual relish. Can be prepared in 45 minutes or less.

Yield Makes about 1 1/2 cups

Number Of Ingredients 9

3/4 pound onions, halved lengthwise and sliced very thin crosswise (about 4 cups)
2 tablespoons vegetable oil
2 teaspoons minced garlic
1 1/2 tablespoons minced peeled fresh gingerroot
1 teaspoon salt, or to taste
1/2 cup dry red wine
1/2 cup red-wine vinegar plus additional to taste
2 dried red hot peppers, each about 2 inches long, seeded and crumbled (wear rubber gloves)
1/2 pound pitted dates, chopped (about 1 1/2 cups)

Steps:

  • In a large heavy skillet cook the onions in the oil over moderately low heat, stirring, until they are softened, add the garlic, the gingerroot, and the salt, and cook the mixture, stirring, for 2 minutes. Add the wine, 1/2 cup of the vinegar, and the peppers and cook the mixture over moderately high heat, stirring occasionally, until most of the liquid is evaporated. In a food processor combine the onion mixture with the dates and pulse the motor 3 or 4 times. Add the additional vinegar and pulse the motor 2 or 3 times, or until the mixture is combined well but still chunky. The relish keeps, covered and chilled, for 1 week. Serve the relish with grilled pork or chicken or with mild cheese and crackers.
