CHOCOLATE KAHLUA CAKE

Number Of Ingredients 21

I use the reverse creaming method with this recipe
2 cups (400g) granulated sugar
2 3/4 cup (322g) all-purpose flour
1 cup (82g) unsweetened cocoa (lightly spoon into cup then sift)
2 teaspoons ((10g) baking soda
1/2 teaspoon (2g) baking powder
1/2 teaspoon (2g) salt
1 cup (2 sticks) (226g) unsalted butter, softened (do not soften in microwave) I cut the butter into 1 inch pieces onto waxed paper leaving on the countertop for 8 to 10 minutes it will still be quite cool when adding to the dry ingredients. If it becomes too soft, just refrigerate a few minutes
1/4 cup (54g) vegetable oil
4 large eggs at room temperature
1/2 cup (110g) milk
1/2 cup (110g) Kahlua
1 teaspoon (4g) vanilla extract
1 cup (220g) hot coffee, it can be instant or brewed
3/4 cup (165g) hot espresso coffee or strong coffee (brewed or instant)
1/4 cup (55g) Kahlua
2 Tablespoons powdered sugar
3 sticks (339g) unsalted butter, slightly softened
8 cups (920g) powdered sugar
1/2 cup (110g) Kahlua
3 teaspoons espresso granules dissolved in 1 teaspoon hot water

Steps:

  • Grease and flour THREE 8 inch cake pans
  • In a mixing bowl, add the dry ingredients: sugar, flour, cocoa, baking soda, baking powder, and salt. Whisk for 1 minute to blend.
  • Add softened butter a few pieces at a time while the mixer is on low speed. Mix until the dry ingredients look like coarse sand and the dry ingredients are moistened. Scrape the bottom and sides of the bowl.
  • In a separate bowl whisk the eggs, milk , Kahlua, oil and vanilla until blended.
  • Method is important when using the Reverse Creaming Method. With the mixer on low speed, SLOWLY add approximately 1/2 of the egg and milk mixture to the dry ingredients. Increase the speed to medium and mix for 1 1/2 minutes at medium speed. Don't mix above medium speed. Scrape the bottom and sides of bowl. Add the remaining egg mixture in 2 pourings, beating for 20 seconds after each pour. Scrape the sides and bottom of bowl.
  • Slowly add the cup of hot coffee and mix another 30 seconds until blended. The batter will be very runny. Don't worry!
  • Pour into 3 prepared 8" pans and bake at 350 degrees for 25 to 30 minutes or until the center of the cake springs back to the touch and a toothpick comes out clean.
  • Cool the cakes 10 minutes on a rack and then turn out of the pans.
  • Beat the butter on medium speed until smooth. Dissolve espresso granules into 1 teaspoon hot water.
  • Add half of the powdered sugar, espresso, and half of the Kahlua. Beat at medium speed until the powdered sugar is incorporated.
  • Add the remaining powdered sugar and Kahlua and mix at medium speed another 3 to 6 minutes scraping the sides of the bowl occasionally.
  • This recipe makes 6 cups of frosting, enough to fill and frost a three layer 8 inch cake with borders.

1 pkg plain chocolate cake mix (mix without pudding) Duncan Hines
1 pkg chocolate instant pudding mix, 5.9 oz
3/4 c Kahlua
1/2 c water
1/2 c vegetable oil
4 large eggs
GLAZE
1 c powdered sugar
1/4 c Kahlua

Steps:

  • 1. Preheat oven to 350. Spray Bundt pan with oil spray then dust with flour. Shake out excess flour. Set pan aside.
  • 2. Place cake mix, pudding mix, Kahlua, water, oil and eggs in a large mixing bowl. Blend with an electric mixer for 1 minute. Scrape down the bowl with a spatula and beat for 2 more minutes. The batter should look thick and smooth.
  • 3. Pour batter into the prepared pan, smoothing it out with the spatula.
  • 4. Bake cake for 45 to 47 minutes or until a toothpick inserted in the middle comes out clean.
  • 5. Prepare the glaze.
  • 6. Spoon the glaze over the top of the warm cake.
  • 7. Store in covered in plastic wrap or a cake dome for up to 4 days or in the refrigerator for up to 1 week. Freezes well. If frozen, allow to thaw overnight.

For the crumb topping:
1 cup all-purpose flour
3/4 cup chilled unsalted butter, cubed
1/4 cup (packed) light brown sugar
1/4 cup powdered sugar
2 teaspoons instant espresso powder
1/4 teaspoon kosher salt
For the chocolate swirl:
6 ounces semisweet chocolate, coarsely chopped
2 tablespoons unsalted butter
4 ounces pecans (about 3/4 cup), lightly toasted and coarsely chopped
1/4 cup strong brewed coffee
1 tablespoon granulated sugar
For the cake:
1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
2 1/2 cups all-purpose flour, plus more for pan
2 tablespoons instant espresso powder
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon kosher salt
1/4 teaspoon ground cardamom
3/4 cup strong brewed coffee, room temperature
1/2 cup sour cream
1 teaspoon vanilla extract
1 1/4 cups granulated sugar
3 large eggs plus 1 egg yolk, room temperature
For the glaze:
1 cup powdered sugar
2 tablespoons coffee liqueur
1 tablespoon sour cream
Special Equipment:
A 10-inch tube pan

Steps:

  • Make the crumb topping:
  • Using your fingers, combine flour, butter, brown sugar, powdered sugar, espresso powder, and salt in a medium bowl until mixture sticks together when pressed. Chill until ready to use.
  • Make the chocolate swirl:
  • Melt chocolate and butter in a heatproof bowl set over a pot of simmering water (water should not touch bowl) or in the top of a double boiler over medium heat. Remove from heat and stir in pecans, coffee, and granulated sugar.
  • Make the cake:
  • Preheat oven to 350°F. Butter and flour tube pan, tapping out excess flour. Whisk 2 1/2 cups flour, espresso powder, baking powder, baking soda, cinnamon, salt, and cardamom in a medium bowl. Whisk coffee, sour cream, and vanilla in another medium bowl.
  • Beat granulated sugar and 1/2 cup butter in a stand mixer fitted with the paddle attachment until light and fluffy, about 3 minutes. Beat in eggs and egg yolk one at a time, mixing well after each addition. Add dry ingredients in 3 additions, alternating with coffee mixture in 2 additions, scraping down sides of bowl after each addition.
  • Scrape one-third of the batter into prepared pan; smooth the surface. Drizzle half of the chocolate swirl mixture over. Add another one-third of the batter; smooth the surface. Drizzle the remaining chocolate swirl mixture over, then scrape in the remaining batter; smooth the surface. Sprinkle crumb topping over. Bake cake until a tester inserted into the center comes out clean and cake springs back when pressed, 40-50 minutes. Let cool completely in pan on a wire rack.
  • Run a butter knife around the perimeter of pan to loosen cake. Gently invert cake onto a large plate, then return cake (crumb side up) to rack.
  • Glaze the cake:
  • When cake is cool, prepare the glaze. Whisk powdered sugar, coffee liqueur, and sour cream in a medium bowl. Using a spoon, drizzle glaze over cooled cake, holding the spoon a few inches above the cake.
  • Do Ahead
  • Cake can be made up to two days before serving. Store wrapped in plastic until ready to serve.

1 (18.25 ounce) package German chocolate cake mix
1 (3.9 ounce) package instant chocolate pudding mix
4 eggs
½ cup vegetable oil
½ cup coffee flavored liqueur
½ cup water
½ cup ground pecans
1 cup white sugar
¼ cup water
¼ cup coffee flavored liqueur
½ cup margarine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Generously grease a 10 inch Bundt pan. Place the ground nuts in pan and roll the pan around to coat the inside with nuts.
  • In a large bowl, stir together cake mix and pudding mix. Make a well in the center and pour in eggs, oil, coffee liqueur and water. Beat on low speed until blended. Scrape bowl, and beat 4 minutes on medium speed. Pour batter into prepared pan.
  • Bake in the preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Pour sauce over the cake while still in the pan. Let stand 30 minutes before removing from pan.
  • To make the sauce: In a saucepan, combine sugar, 1/4 cup water, 1/4 cup coffee liqueur and margarine. Bring to a boil, then continue to boil for 2 minutes.
