A nice change from your typical tomato sauce! If you're worried about the alcohol, don't be! It cooks off and cannot be tasted. It simply helps to enhance the flavors.

1 pound uncooked penne pasta
¼ cup extra virgin olive oil
4 cloves garlic, minced
½ teaspoon crushed red pepper flakes
1 (28 ounce) can crushed tomatoes
¾ teaspoon salt
2 tablespoons vodka
½ cup heavy whipping cream
¼ cup chopped fresh parsley
2 (3.5 ounce) links sweet Italian sausage

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In large skillet, heat oil over moderate heat. Remove casing from sausage and add to skillet. Cook, breaking up the meat, until brown. Add garlic and red pepper and cook, stirring until garlic is golden brown.
  • Add tomatoes and salt; bring to boil. Reduce heat and simmer 15 minutes.
  • Add vodka and cream and bring to boil. Reduce heat to low and add pasta, toss for 1 minute. Stir in fresh parsley and serve!

1 large onion, chopped
1 tablespoon olive oil
4 garlic cloves, minced
2 cans (one 28 ounces, one 14.5 ounces) diced tomatoes
1/4 cup vodka
1 package (12 ounces) whole wheat penne pasta
2 teaspoons prepared pesto
1/4 teaspoon salt
1/4 teaspoon crushed red pepper flakes
2 tablespoons all-purpose flour
1/2 cup heavy whipping cream
1 cup whole milk
1/2 cup shredded Parmesan cheese

Steps:

  • In a large saucepan, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in tomatoes and vodka. Bring to a boil. Reduce heat; simmer, uncovered, for 30-35 minutes or until slightly thickened, stirring occasionally., Meanwhile, cook penne according to package directions., Stir the pesto, salt and pepper flakes into tomato mixture. In a small bowl, combine flour and cream until smooth; stir into pan. Add milk. Bring to a boil; cook and stir for 2 minutes or until slightly thickened. Drain penne; serve with sauce. Sprinkle with cheese.

Oh, YUM! I got this from Campbell's Fall Family Favorites magazine...I just HAD to try it -- what with 4 kids and all, I was hoping to "knock them out" with the Vodka! (JUST KIDDING!!!!! LOL!!!!!) No, but seriously, I saw Emeril make something similar to this, so I tried this simplified version, and it was GOOD! Even the kids liked it (although they would have frowned if I told them I put Vodka in it...Hee hee!) NOTE: I usually add 1/2 lb. pepperoni slices, cut into 1/4" strips to the sauce.

16 ounces penne pasta
2 (26 ounce) jars prego pasta sauce (Chunky Tomato, Onion & Garlic flavor)
1/4 cup vodka
1/4 cup fresh basil, finely chopped
1/8 teaspoon crushed red pepper flakes
1 tablespoon butter
salt & pepper
1/2 cup heavy cream
1/2 cup parmesan cheese, grated

Steps:

  • Prepare the pasta according to the package directions. Drain well. Return pasta to the saucepot, add salt & pepper to tast and 1 tablespoons butter.
  • In a 1 1/2 quart saucepan, stir the pasta sauce, vodka, basil, and red pepper flakes. Heat over medium heat to a simmer, stirring occasionally. Remove from heat and gently stir in the cream.
  • Pour the sauce over the paste. Toss to coat.
  • Spoon pasta into a serving bowl and sprinkle with Parmesan cheese.
  • Serve with additional cheese, if desired.

This dish is sinfully good, and its known to have powers that make you crave it while you sleep. LOL, so enjoy! Mmmm!

Number Of Ingredients 9

2 medium garlic cloves
5 tablespoons olive oil
2 (28 ounce) cans whole tomatoes
salt and pepper
1/2-1 teaspoon red chili pepper flakes
450 g dry penne pasta
15 sprigs parsley (Leaves only)
2 tablespoons grain alcohol or 2 tablespoons vodka
1 cup heavy cream

Steps:

  • Roughly chop garlic. Heat the oil in a medium-sized saucepan over medium heat. When the oil is warm add the garlic and sauté for 3 mins or until golden along the edges.
  • Add the canned tomatoes to a saucepot and cook for 20 minutes. Add salt and pepper taste, and then add the chili flakes. Pass the sauce mix through a food mill or process until smooth and pour into a large skillet.
  • Reduce heat to low and let the sauce simmer. Meanwhile bring a pot of water to boil for the Penne. While the pasta is cooking coarsely chop the parsley and set aside. Drain the pasta when it is al dente and pour it into the skillet with the tomato sauce. Add the vodka and mix very well. Increase the heat to medium and sauté for 1 minute. Add the cream and mix until the evenly spread. Pour into a nice serving dish and garnish with the chopped parsley. Serve hot.
