One Pan Roasted Sweet Potatoes image

Quick and easy oven roasted sweet potatoes recipe, made with simple ingredients in one pan/ pot. This 30 minute side dish has hints of cinnamon and ginger.

3 medium Sweet potatoes (About 2 pounds, Peeled and cut into 1 inch cubes)
2 tbsp Olive oil
1/4 tsp Cinnamon powder
1/8 tsp Ginger powder
1/4 tsp Paprika
Salt (To taste)
Pepper (To taste)

Steps:

  • Spread potatoes in a baking tray, lined with foil paper.
  • Drizzle olive oil and sprinkle cinnamon, ginger, paprika, salt, pepper.
  • Mix until evenly coated.
  • Spread out the potatoes so that they are not overlapping and bake evenly.
  • Bake at 425 degrees for 20-25 minutes or until crisp and golden brown on the outside but soft on the inside. Be sure to toss everything halfway through.
  • Serve immediately and enjoy!

My Granny made this for Easter dinner. We were all sitting at the table commenting on how delicious it was. She sat down took a bite and sighed, Ahhh, I'll never make this again. We all told her she was crazy and asked for the recipe.

4 cups chopped peeled sweet potato
1 sweet onions (such as Vidalia®), cut into wedges
2 cloves garlic, sliced
3 tablespoons olive oil
1 tablespoon balsamic vinegar, or more to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Mix sweet potatoes, sweet onion, and garlic in a bowl. Drizzle olive oil over the mixture and toss to coat; pour into a shallow roasting pan.
  • Roast sweet potato mixture in preheated oven, turning frequently, until the vegetables are soft and golden brown, 30 to 35 minutes. Drizzle balsamic vinegar over the vegetables; season with salt and pepper.

One-Pot Sweet Potatoes image

This is an easy and delicious way to prepare fresh sweet potatoes on the stove top. I have adapted this recipe from one I found in the "Mamma Dip's Kitchen" cookbook. This is a family favorite in my home.

Number Of Ingredients 10

2 lbs fresh sweet potatoes
1/2 cup white sugar
1/2 cup light brown sugar
1 1/4 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon self-rising flour
3/4 cup water
1/4 cup butter, cut into pieces

Steps:

  • Wash the ptoatoes.
  • Peel and slice them into 1/4 inch widths. Place slices in a bowl of ice cold water to keep their color.
  • Mix together the sugars, cinnamon, nutmeg, salt, pepper and flour in a seperate bowl.
  • Drain the ptoato slices and place them in a 3 QT pot.
  • Sprinkle the sugar mixture over the potatoes.
  • Add the water and butter.
  • Let the potatoes come to a boil, reduce the heat, cover and let simmer until tender, about 20 minutes.
  • Stir lightly and serve.
