½ cup brown sugar
¼ cup chili powder
1 tablespoon dried parsley
2 teaspoons salt
2 teaspoons garlic powder
2 teaspoons ground black pepper
2 teaspoons ground cumin
2 teaspoons onion powder
1 teaspoon smoked paprika
2 racks baby back ribs, membranes removed
1 cup water
½ cup apple cider vinegar
1 (12 ounce) bottle barbeque sauce (such as Sweet Baby Ray's®)

Steps:

  • Mix brown sugar, chili powder, parsley, salt, garlic powder, black pepper, cumin, onion powder, and paprika in a bowl using a fork, breaking up any large clumps. Rub spice mixture over both sides of the ribs.
  • Place a steam rack inside a multi-functional pressure cooker (such as Instant Pot®). Pour water and cider vinegar into the bottom of the pot. Lower ribs into the pot by curving them around the edge. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil; place ribs on the foil. Top with barbeque sauce.
  • Broil ribs until sauce is bubbling, about 3 minutes.

You don't need a barbecue to make flavorful baby back ribs - in fact, all you really need is one sheet tray. After slowly roasting the ribs on it, load it up with corn and asparagus in the final ten minutes of cooking and dinner is done. The ribs will be falling off the bone, and the veggies will be perfectly tender yet crisp. The best part? You'll only have to wash one dish.

1 rack baby back ribs, halved
2 teaspoons cumin
2 teaspoons chili powder
1 teaspoon pepper
2 teaspoons garlic powder
2 teaspoons salt
2 teaspoons paprika
1 cup BBQ sauce
3 corns, husked and halved
10 stalks asparagus
4 tablespoons olive oil
2 teaspoons salt
½ teaspoon pepper

Steps:

  • Preheat oven to 275°F (140°C).
  • Place the half racks on a baking sheet lined with foil. Sprinkle evenly with cumin, chili powder, pepper, garlic powder, salt, and paprika. Rub in the seasoning evenly on both sides.
  • Cover with the foil and bake for 2 hours.
  • Increase oven temperature to 500°F (260°C).
  • Remove the ribs from the foil and place on baking sheet. Spread the bbq sauce evenly on the top.
  • Place the corn on one side of the pan, and the asparagus on the other. Drizzle the olive oil, salt, and pepper evenly over the veggies, and rub the seasoning in evenly.
  • Bake for 10 minutes. Rest the ribs at least 10 minutes.
  • Slice and serve!

One Pot Ribs-n-Taters image

Number Of Ingredients 7

4 pounds country-style pork ribs
Salt and Pepper
1 cup beef broth
1 cup barbecue sauce
4 medium russet potatoes, scrubbed, unpeeled
3 tablespoons flour
1/4 cup water

Steps:

  • Season ribs with salt and pepper or other seasonings as desired. Place on trivet in cooker. Combine beef broth and barbecue sauce and pour over ribs. Place clean russets atop the ribs, ensuring pot is only 2/3 full. Lock lid and bring to full pressure according to manufacturer's instructions. Cook for 15 minutes. Quick-release pressure. Remove ribs and potatoes from pan and set aside to keep warm. Return sauce to a boil. Whisk flour into water until forms a smooth paste, and then whisk into boiling sauce to thicken. Ladle some of the sauce over the ribs, and serve the rest at the table for gravy.
