Easy 4 Ingredient No Bake Chocolate Cookies made with rice cereal, coconut, white chocolate and milk chocolate.

80 grams (2 cups) Rice Bubbles or Rice Krispies
60 grams (1 cup) shredded coconut
100 grams (2/3 cup) white chocolate, cut into chunks
400 grams (2 and 2/3 cups) good quality milk or dark chocolate*

Steps:

  • Line a baking tray with baking or parchment paper. In a large mixing bowl, add the rice cereal, shredded coconut and white chocolate chunks and stir.
  • Melt your milk or dark chocolate in the microwave, stirring every 20 seconds. Pour the melted chocolate over the cereal mixture and stir until completely covered. Spoon out tablespoons of the mixture onto your prepared tray. Place in the fridge for at least 1 hour or until set. Enjoy!

This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.

2 cups white sugar
½ cup milk
½ cup unsalted butter
2 tablespoons cocoa powder
3 cups old-fashioned oats
½ cup peanut butter, or more to taste
1 teaspoon vanilla extract

Steps:

  • Combine sugar, milk, butter, and cocoa powder in a large saucepan over medium heat; bring to a boil. Cook and stir until butter is melted and mixture is smooth, 2 to 3 minutes.
  • Remove from heat and add oats, peanut butter, and vanilla extract; mix until thoroughly combined. Drop tablespoonfuls of dough onto sheets of waxed paper. Let cool until solid, 20 to 30 minutes.

These were one of my dad's favorite recipes. My grandma used to make them for her kids and dad made them for us. I use them to get a certain friend to come and visit by offering some fresh no-bakes. I love them, but they're absolutely impossible to eat without milk.

1/2 cup butter
1/2 cup milk
2 cups sugar
1/3 cup cocoa
1/2 cup peanut butter
1 teaspoon vanilla
3 cups oatmeal

Steps:

  • Combine first four ingredients in saucepan. Bring to a boil and cook for about 1 minute, stirring constantly.
  • Remove from heat and stir in peanut butter, vanilla and oatmeal.
  • Drop by spoonfuls onto cookie sheet covered with wax paper. Let cool.
  • I usually do a double recipe and, more often than not, they don't last more than two days.
