Oven-Baked Omelet image

Set out everyone's favorite toppings so they can make their omelet slice however they like.

Number Of Ingredients 8

12 large eggs
1 cup heavy cream
2 medium scallions, finely chopped (½ cup)
1 teaspoon kosher salt
1 teaspoon garlic powder
½ teaspoon ground black pepper, plus more for serving
8 ounces shredded Cheddar-Jack cheese (about 2 cups), divided
½ cup coarsely chopped soft fresh herbs (such as parsley, chives, dill, tarragon, or cilantro)

Steps:

  • Preheat oven to 400°F. Grease a 13- x 9-inch baking dish with cooking spray. Whisk together eggs, heavy cream, scallions, salt, garlic powder, black pepper, and 1 cup of the cheese in a large bowl. Pour egg mixture into prepared baking dish; top with remaining 1 cup cheese.
  • Bake in preheated oven until eggs are puffed and lightly golden around edges, about 25 minutes. Top with herbs and additional black pepper. Serve immediately with desired toppings (below). The omelet will deflate as it cools.

4 large eggs
1/4 cup whole milk
1/4 teaspoon salt
1/8 teaspoon pepper
4 teaspoons olive oil, divided
1 cup thinly sliced zucchini
4 small fresh mushrooms, chopped
1/4 cup finely chopped green pepper
1 cup fresh baby spinach
2 green onions, thinly sliced
2 garlic cloves, thinly sliced
1/4 cup crumbled goat cheese
Additional thinly sliced green onions

Steps:

  • In a small bowl, whisk eggs, milk, salt and pepper. In a large nonstick skillet, heat 2 teaspoons oil over medium-high heat. Add zucchini, mushrooms and green pepper; cook and stir 3-5 minutes or until tender., Add spinach, green onions and garlic; cook and stir 1-2 minutes longer or until spinach is wilted and garlic is tender. Transfer vegetable mixture to a small bowl. In same pan, heat remaining oil. Pour in egg mixture. Mixture should set immediately at edge., As eggs set, push cooked portions toward the center, letting uncooked eggs flow underneath. When eggs are thickened and no liquid egg remains, spoon vegetable mixture on one side; sprinkle with cheese. Fold omelet in half; cut in half and slide onto plates. Sprinkle with additional green onions.

I'll save this breakfast for a saturday morning when I know I have the time to fully enjoy it. So simple, so good. This recipe comes from a Rose Reisman book. Make it a little more healthy by using egg whites and a multi grain or rye bread.

1 ounce goat cheese, crumbled
1/4 cup green onion, chopped
2 tablespoons cilantro, chopped
1/8 teaspoon salt
1/8 teaspoon black pepper
1 slice bread, toasted

Steps:

  • Beat eggs.
  • In a small skillet sprayed with vegetable spray add the beaten eggs and begin to cook on medium heat.
  • After 2 minutes sprinkle the goat cheese, green onions, cilantro, salt and pepper over top and cook for 3 more minutes or just until omelette is no longer runny.
  • Flip in half and serve overtop the toast.

3 large eggs
1 tablespoon heavy cream
1 tablespoon minced mixed fresh herbs, such as chives, thyme leaves, flat-leaf parsley leaves and tarragon leaves
1 tablespoon unsalted butter
Pinch kosher salt
2 tablespoons crumbled goat cheese or feta or shredded Cheddar or Gruyère
Lyonnaise Potatoes, recipe follows
Ham and Toast, recipe follows
1 teaspoon sweet paprika
1/4 teaspoon cayenne
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 medium red potatoes (about 1 1/2 pounds), cut into 1/2-inch slices
1 medium onion, halved and thinly sliced
1/4 cup maple syrup
1 to 2 tablespoons apple cider vinegar
Vegetable oil, for cooking
1 ham steak, halved lengthwise
2 slices Texas toast
Unsalted butter, for the toast

Steps:

  • In a 4-cup liquid measuring cup or large bowl with a spout, gently whisk the eggs with the heavy cream until blended. Whisk in the herbs.
  • Heat an 8-inch nonstick skillet over medium-low heat. Add the butter to the pan and swirl to coat the bottom and sides. Stir the egg mixture again, then pour into the pan. Immediately start stirring with a rubber spatula and scraping around the edges of the pan without stopping. Add the salt. As soon as the eggs are just scrambled but still quite wet, spread the eggs in an even layer on the bottom of the pan. Add the cheese in a line down the eggs, perpendicular to the pan handle. Tilt the pan at a 45-degree angle to your serving plate and start nudging the edge of the egg closest to you to roll the top third of the egg over the filling in the center. Keep nudging to roll again into a three-fold omelet. The final roll should flip the omelet out of the pan and onto your plate.
  • Mix the paprika, cayenne and 1 teaspoon salt together in a small bowl. Heat the oil in a large skillet over medium heat. Add the potatoes and a pinch of salt; cook, tossing about every 5 minutes, until evenly golden brown, about 15 minutes total. Add the onions and cook, stirring occasionally, until the onions are golden brown and tender, 5 to 7 minutes. Stir in the paprika mixture and season with salt and pepper to taste.
  • Combine the maple syrup and apple cider vinegar in a small bowl. Preheat a flat top grill or cast-iron pan over medium-high heat and brush with oil. Sear the ham until golden, flipping halfway through, 2 minutes per side. Glaze the ham with the maple syrup mixture with a heatproof brush and cook 1 minute longer.
  • Add the toast to the flat top and toast 1 to 2 minutes per side. Spread with butter and cut in half diagonally.

Goat Cheese and Apple Omelet image

This omelet of green apples and goat cheese is an unusual pairing -- at least in the omelet world -- but a wonderful one from Garrett Oliver, the brewmaster of Brooklyn Brewery. On the day we made this recipe, he paired the dish with a glass of Blanche de Chambly, a Belgian-style wheat beer made in Canada.

3 tablespoons butter
1/2 Granny Smith apple, peeled and sliced 1/4-inch thick
Pinch sugar
1 small log of fresh goat cheese, about 4 ounces
2 extra-large eggs
1 tablespoon milk
Coarsely ground black pepper

Steps:

  • Melt half the butter in a small nonstick saucepan or wok over medium heat. Add apple and cook until slices start to brown, then add sugar. Stir slices until nicely browned, about 5 minutes. Remove from heat and set aside. Cut 3 slices of goat cheese, 1/2 inch thick.
  • Beat eggs and milk together, just until uniform; do not overbeat. Heat remaining butter in an omelet pan or small nonstick pan over high heat. When butter foams, add eggs and reduce heat to medium-low. When omelet is about half firm, carefully turn it over.
  • Arrange goat cheese on one half of omelet; cover cheese with apple slices. Fold omelet in half, turn off heat and leave for one minute. Place omelet on a warm plate, and sprinkle with black pepper. Serve immediately, with a witbier.

2 teaspoons olive or canola oil
2 green onions, trimmed and chopped, plus about 2 inches of green tops, chopped
1/8 teaspoon Lawry's or other seasoned salt
2 large eggs
Ground black pepper to taste
1/4 cup grated mild cheddar cheese

Steps:

  • Combine the oil, green onions, and seasoned salt in a small nonstick skillet. Cook over medium heat until the onions have softened, about 3 minutes. In a bowl, beat the eggs with the black pepper. Add the mixture to the skillet and stir briefly to lightly scramble the eggs. Without stirring, continue to cook until the eggs are softly set, about 2 minutes. Sprinkle the cheese on top. Tilt the pan away from you and, using a spatula, fold half of the omelet over to enclose the filling. Cook for 1 minute more to melt the cheese. Slide the omelet onto a plate and serve.

1/2 cup egg whites (from about 4 eggs)
Coarse salt and ground pepper
1 teaspoon olive oil
1 heaping tablespoon crumbled goat cheese
2 to 3 tablespoons prepared salsa

Steps:

  • In a medium bowl, whisk egg whites with 1 tablespoon water; season with coarse salt and ground pepper.
  • Heat olive oil in an 8-inch nonstick skillet over medium-high heat. Add egg whites to skillet; cook until nearly set, using a flexible heatproof spatula to repeatedly pull in sides of omelet to allow uncooked egg to run underneath, 1 to 2 minutes.
  • Sprinkle crumbled goat cheese and prepared salsa over the top. Gently slide omelet onto serving plate, folding it over by tipping skillet slightly.
