SPINACH ALFREDO SAUCE (BETTER THAN OLIVE GARDEN®)

Spinach Alfredo Sauce (Better than Olive Garden®) image

Better than Olive Garden®! Top with grilled chicken on fettuccine pasta for a complete meal or use as a dip for bread sticks. Delicious rich and creamy spinach Alfredo everyone will love. When I make this dish, everyone raves over it! Add more spinach if you're a spinach lover or leave it out if you're not a fan. I like adding lots of garlic! For a thicker sauce, add more cream cheese.

OLIVE GARDEN ALFREDO SAUCE

Olive Garden Alfredo Sauce image

This is one of the best recipes to make your own version of Olive Garden's famous Alfredo sauce. This recipe is for a large dinner party. Please feel free to scale the recipe down for a small family. Note: Make sure you whisk in the flour early while you are melting the butter with the garlic to avoid a "floury" flavor. The flour is important to avoid a thin sauce. This sauce is very versatile. Add grilled marinated chicken for a great Chicken Alfredo. Add sautéed shrimp and scallops with Old Bay Seasoning, white wine, shrimp stock, and chopped green onions for Seafood Alfredo. Extra sauce can be frozen for later use.

Number Of Ingredients 8

2 quarts heavy cream
1 lb butter
2 tablespoons flour
1 lb freshly grated parmesan cheese

Steps:

  • On medium heat, add butter, garlic, and flour until butter is melted. Do not brown garlic.
  • Whisk in the heavy cream until hot.
  • Slowly add the freshly grated cheeses into the hot cream mixture. Finally add the salt and pepper. Stir often to make sure no cheese settles at the bottom.

"OLIVE GARDEN" ALFREDO SAUCE (SERIOUSLY!)

This is really Olive Garden Alfredo Sauce. I absolutely love OG Alfredo and I got this recipe from a general manager. He told me after I bugged and bugged and bugged him! I haven't figured out the reheating yet...except for to reheat sauce slowly. Very slowly. The butter starts to separate if you reheat it too fast. The only place that I could find "white sauce base/mix" in my town was at Gordon's Food Service (restaurant supply store), which I guess can also be used to make biscuits. And I thought that 8 fl. oz and 1 cup were the same thing...even on a measuring cup...so I just measure to the 8 oz. line on a measuring cup. That was something that the manager emphasized to me.

Number Of Ingredients 5

1 pint of heavy cream
1 stick of butter
2 tablespoons. cream cheese
1/2-3/4 cups Parmesan cheese
1 teaspooon garlic powder

Steps:

  • In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and garlic powder - whisk to combine. Simmer this for 15 to 20 minutes on low, being careful not to burn the bottom. You may wish to season with a little salt and pepper, but I usually don't. I have done this with half-and-half, but we prefer the heavy cream. I wouldn't try it with plain milk. I use the Parmesan cheese in the green can. The fresh seems too salty.
