SOPA SECA: MEXICAN NOODLE CASSEROLE



Sopa Seca: Mexican Noodle Casserole image

Made by lightly frying vermicelli noodles and then cooking them in a rich broth flavored with spices, chipotle and tomatoes, sopa seca is considered comfort food in Mexico. We added smoked turkey to the mix, topped the noodles with grated Cheddar, and finished cooking in the oven for a cheesy, bubbly finish.

1/4 cup extra-virgin olive oil, plus extra for pan
12 ounces fideos (bundled vermicelli)
1 medium onion, chopped
3 cloves garlic, minced
1 teaspoon ground coriander
1 teaspoon dried oregano, preferably Mexican
1 teaspoon New Mexican chili powder
1 bay leaf
1 1/2 cups canned whole tomatoes
1 to 2 chipotles en adobo sauce, minced
1 1/2 cups chicken broth, homemade, or low-sodium canned
1 teaspoon kosher salt
Freshly ground black pepper
2 cups shredded smoked turkey
1 cup coarsely grated cheddar cheese (4 ounces)
Mexican crema, or sour cream thinned with a bit of milk, optional

Steps:

  • Preheat the oven to 375 degrees F. Brush a 9-inch square baking dish with oil. Heat the extra-virgin olive oil in a large skillet over medium heat. Add the fideos and cook, turning them with tongs, until golden brown on both sides, about 5 minutes. Transfer the bundles and any broken pieces to a plate. Add the onion to the skillet and cook over medium heat, stirring occasionally, until golden brown, about 8 minutes. Stir in the garlic, coriander, oregano, chili powder, and bay leaf, and cook until fragrant, about 30 seconds. Crush the tomatoes over the pot with your hand and add them to the pot along with their juices. Add the chipotles, increase the heat to high, and cook until thickened, about 2 minutes. Stir in the broth, the toasted fideos, salt, and pepper, to taste. Bring mixture to a boil, reduce heat, and simmer gently, uncovered, breaking up the fideos with a spoon, for about 5 minutes. Stir in the turkey. Remove the bay leaf. Transfer the mixture to the prepared baking dish, sprinkle the grated cheese over the top, and cover loosely with foil. Bake until the cheese melts and the casserole is hot through and through, about 20 minutes. If desired, serve with some crema drizzled over the top. 6 cups uncooked egg noodles (about 12 ounces)
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 cup sour cream
3/4 cup 2% milk
1/4 teaspoon salt
1/4 teaspoon pepper
3 cups cubed cooked chicken breasts
1 cup crushed Ritz crackers (about 20 crackers)
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. Cook noodles according to package directions for al dente; drain., In a large bowl, whisk soup, sour cream, milk, salt and pepper until blended. Stir in chicken and noodles. Transfer to a greased 13x9-in. baking dish. In a small bowl, mix crushed crackers and butter; sprinkle over top. Bake until bubbly, 30-35 minutes.

1 lb ground beef
1 (15 ounce) can sweet corn, drained
1 cup mild chunky salsa
3 1/2 cups cooked egg noodles
1 (15 1/4 ounce) can kidney beans, drained and rinsed
1/4 cup taco sauce
1 (1 1/4 ounce) package taco seasoning mix
1/2 cup tomato sauce
2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a skillet over medium heat, cook the ground beef until brown; drain.
  • In a 9x13 inch baking dish combine the beef, corn, salsa, cooked noodles, beans, taco sauce, seasoning mix and tomato sauce.
  • Bake in the oven for 30 minutes, or until cooked through. Add cheddar cheese to top and brown 5 minutes or until cheese is melted.

I got this recipe from a cooking group on freezer meals. It comes from the book Frozen Assets Lite & Easy by Deborah Taylor Hough. My family loves this, and bonus, if you make it ahead and freeze it, it is a very fast meal on a night you don't feel like cooking! This recipe makes a lot, so I usually freeze half and bake half when I make it. We had this again last night for dinner and I wanted to post it so everyone else could enjoy it too! This is good served with sour cream and salad.

2 tablespoons oil
1 cup onion, chopped
1 cup green pepper, chopped
1 cup celery, sliced
1 (1 1/4 ounce) package taco seasoning
1 (15 ounce) can black beans, drained & rinsed
1 (15 ounce) can red kidney beans, undrained
1 (16 ounce) can tomato sauce
1 (16 ounce) can diced tomatoes
2 cups elbow macaroni, dry
1 cup cheddar cheese, grated

Steps:

  • Cook macaroni according to package directions, drain and rinse in cold water, set aside.
  • In a large skillet, saute onion, pepper and celery in oil until softened.
  • Stir in taco seasoning, beans, tomatoes and tomato sauce.
  • Simmer for 10 minutes.
  • Remove from heat and stir in cooked noodles.
  • Spread mixture in a 9 x 13 pan. (or, put in gallon ziploc bag and freeze--write baking instructions on the bag, then when you are ready to eat it, thaw in warm water for about 10 minutes, put in pan and bake).
  • Bake, uncovered at 375 for 45 minutes.
  • Sprinkle cheese on top and bake five more minutes or until cheese is melted.

1/4 cup extra virgin olive oil, plus extra
extra virgin olive oil, for pan
12 ounces fideos (bundled vermicelli)
1 medium onion, chopped
3 garlic cloves, minced
1 teaspoon ground coriander
1 teaspoon dried oregano, preferably Mexican
1 teaspoon new mexico chile powder
1 bay leaf
2 (14 1/2 ounce) cans diced tomatoes
1 -2 chipotle chile in adobo, minced
1 1/2 cups chicken broth
1 teaspoon kosher salt
fresh ground black pepper
2 cups shredded cooked chicken
1 cup coarsely grated cheddar cheese (4 ounces)
Mexican crema (optional, or sour cream thinned with a bit milk)

Steps:

  • Preheat the oven to 375 degrees F.
  • Brush a 9-inch square baking dish with oil.
  • Heat the extra-virgin olive oil in a large skillet over medium heat.
  • Add the fideos and cook, turning them with tongs, until golden brown on both sides, about 5 minutes.
  • Transfer the bundles and any broken pieces to a plate.

Two 10-ounce cans diced tomatoes with chiles, such as Rotel
1 cup chicken broth
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon kosher salt
One 15.5-ounce can black beans, drained and rinsed
One 10-ounce bag frozen corn
5 cups shredded cooked chicken (from about 1 small rotisserie chicken)
12 small corn tortillas, cut into quarters
One 8-ounce block Monterey Jack cheese, shredded (about 2 cups)
1/2 cup sour cream
1/3 cup diced red onion
1/3 cup loosely packed fresh cilantro, chopped

Steps:

  • Preheat the oven to 375 degrees F. Brush a 9-by-13-inch casserole dish with the oil.
  • Stir together the diced tomatoes with chiles, chicken broth, chili powder, cumin and salt in a large bowl. Add the black beans, frozen corn, chicken, tortilla wedges and half the cheese and stir to evenly distribute and moisten all of the ingredients. Transfer to the prepared casserole dish and spread into an even layer. Loosely cover with aluminum foil and bake for 25 minutes.
  • Raise the oven temperature to 400 degrees F. Remove the foil and sprinkle the top with the remaining cheese. Continue to bake until the cheese is melted and just starting to brown, about 10 minutes. Top with dollops of sour cream and sprinkle with the red onion and cilantro. Serve hot.

1 envelope taco seasoning
1 can (15 ounces) tomato sauce
1/4 cup chopped green pepper

8 ounces uncooked spiral pasta, cooked and drained
1 cup shredded cheddar cheese, divided
1/2 cup sour cream

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the taco seasoning, tomato sauce, green pepper and spices. Bring to a boil; remove from the heat. , Meanwhile, combine the pasta, 1/2 cup cheese and sour cream. Spoon into a greased 2-qt. baking dish. Top with meat mixture and remaining cheese.
