CROCKPOT CHICKEN AND DRESSING CASSEROLE

2 lb boneless skinless chicken breasts
1 tsp poultry seasoning
1 tsp granulated garlic or garlic powder
1/2 tsp salt
1 tsp lemon pepper
1 medium onion (diced)
1 rib celery (diced)
4 Tbsp butter
1 10 oz can cream of chicken soup
1 10 oz can cream of celery soup
1 cup low sodium chicken broth
1 0.8 oz dry chicken gravy mix
1-2 6 oz box cornbread stuffing/dressing mix

Steps:

  • Spray the inside of a 6 quart oval slow cooker with cooking spray.
  • Arrange chicken in a single layer on bottom. Season with poultry seasoning, lemon pepper, garlic and salt.
  • In a skillet on the stovetop, cook the onion and celery with butter over medium-high heat. Cook until softened and beginning to brown. about 3-5 minutes Season with black pepper to taste..
  • In a medium-size mixing bowl whisk together, both soups, chicken broth and gravy mix. Pour 3/4 evenly over chicken in crockpot.
  • Add the stuffing/dressing mix and cooked vegetables to remaining soup in bowl. Mix well then spread on top. Cover opening with doubled paper towels, then place lid firmly into place.
  • Cook for 3-4 hours on high or 6-7 hours on low. Allow to sit uncovered for 15 minutes prior to serving. May fluff dressing with a fork, if desired.

What a lovely tribute to Cindy's grandmother by taking her recipe and making it easier for everyday use. After one bite, I could taste why Cindy didn't just want this at Thanksgiving. This dressing is almost a meal in itself! We baked up a batch of Cindy's cornbread and it's the perfect base for this moist dressing. Delish!

3 - 4 frozen boneless, skinless chicken breasts
1 can(s) cream of chicken soup
1 small onion, diced
1 tsp celery salt
1 tsp poultry seasoning
3/4 c chicken broth
1 tsp pepper
3 hard boiled eggs
1 Tbsp rubbed sage
3 c chicken broth
1 skillet cornbread
CORNBREAD
1 c all-purpose flour
1 c cornmeal
1 Tbsp baking powder
2 Tbsp sugar
1/2 tsp salt
1 c milk
1/4 c vegetable oil
1 egg, beaten

Steps:

  • 1. First, put your frozen chicken breasts, cream of chicken soup, onion, salt, pepper & poultry seasoning into the crockpot with 3/4 c of the chicken broth. Put lid on & cook for 4 hours. (This is high for my crock pot.)
  • 2. While this is cooking, hard boil 3 eggs. Set aside to cool. Next, make cornbread. You can use your own cornbread recipe, but this isn't a sweet cornbread. For my recipe, put a cast iron skillet with a tablespoon of oil into the oven and preheat to 425. Mix the dry ingredients first, then add the rest.
  • 3. Mix well. Pour into hot skillet and bake for 25 minutes. Remove to cool.
  • 4. When chicken is done, take 2 forks & shred chicken breasts. If you like it chunky - leave it chunky, if not then keep shredding.
  • 5. Take the 3 boiled eggs from earlier and chop them up - not too fine, you want to see the egg whites in there. Then finely crumble the cornbread and add into the crock pot with the eggs. Add sage & stir. You want the dressing to be moist so add a little bit of chicken broth at a time, stirring until moistened.
  • 6. Then with the back of your spoon even then dressing out in the crock pot & cook for an additional 2 - 3 hours (high). Keep an eye on it so as not to burn it. It should be browned around the edges.

1 cup butter, cubed
1/2 cup chopped onion
1/2 cup chopped celery
1 can (4 ounces) mushroom stems and pieces, drained

1 teaspoon poultry seasoning
1 teaspoon salt

12 cups day-old bread cubes (1/2-inch pieces)

Steps:

  • In a large saucepan, combine the first 10 ingredients. Simmer for 10 minutes; remove from the heat. Place bread cubes in a large bowl. Combine eggs and soup; stir into broth mixture until smooth. Pour over bread and toss well. , In a 5-qt. slow cooker, layer half each of the stuffing and chicken; repeat layers. Cover and cook on low for 4-1/2 to 5 hours or until a thermometer inserted into the stuffing reads 160°.

1 (9x9 inch) pan cornbread, cooled and crumbled
8 slices day-old bread, torn into small pieces
4 eggs, beaten
1 onion, chopped
1 teaspoon salt
1 teaspoon ground black pepper
2 teaspoons dried sage
2 (14.5 ounce) cans chicken broth
2 (10.75 ounce) cans condensed cream of chicken soup
2 tablespoons margarine

Steps:

  • Place chicken in a pot with water to cover, and bring to a boil over medium heat. Boil 20 minutes, or until cooked through. Cool, and cut into pieces.
  • In a slow cooker, stir together chicken, cornbread, bread, eggs, onion, salt, pepper, sage, chicken broth, and chicken soup. Stir until well blended. Dot with margarine.
  • Cover, and cook on Low for 3 to 4 hours. Remove lid, and fluff with fork. Let rest 15 minutes before serving.

Holidays are so much easier since I started making this slow cooker chicken and dressing. Making the dressing in the slow cooker frees up the ovens for other dishes on holidays. Sometimes I add the chicken; sometimes I don't. I often assemble it weeks in advance and freeze it; then I let it thaw in the refrigerator before putting it in the slow cooker.

1 (9 x 13 inch) pan cornbread, crumbled
2 cups chopped onion
2 cups chopped celery
½ cup butter, melted
2 teaspoons dried sage
1 ½ teaspoons salt
1 teaspoon poultry seasoning
½ teaspoon ground black pepper
2 eggs, beaten
1 (10.75 ounce) can cream of chicken soup
1 (10.75 ounce) can cream of mushroom soup
1 ½ cups chicken broth, or more as needed
3 cups coarsely shredded cooked chicken

Steps:

  • Mix crumbled cornbread with onion, celery, and butter. Lightly stir in sage, salt, poultry seasoning, black pepper, eggs, cream of chicken soup, and cream of mushroom soup until thoroughly combined. Pour chicken broth over the dressing to moisten.
  • Layer half the dressing into a slow cooker, spread half the cooked chicken over dressing, layer remaining dressing over chicken, and top with remaining chicken.
  • Set cooker on High and cook for 45 minutes. Reduce cooker setting to Low and cook at least 5 more hours.

  • Combine stuffing mix and water. Spoon over chicken and soup mixture.
  • Cover cooker and cook on low heat 3-4 hours. Check to see if chicken is done. Usually it needs just a short time to finish cooking in a crockpot; do NOT overcook.
