I have to thank my sister for this one, I got this from her, and it is yummy.She says that the ice cream makes all the difference, use a good brand.If you want to jazz it up a little, add some strawberry liqueur or strawberry flavored vodka. You could use any fruit you like, we made blueberry ones, and they were great. We had to make our own blueberry ice cream,since we couldn't find it in our grocery, and it was really good!

1 (10 ounce) package frozen strawberries in syrup, thawed
3 cups strawberry ice cream, divided
1 (12 ounce) can cream soda, divided
whipped cream
4 whole strawberries

Steps:

  • Mash thawed strawberries with a fork until strawberries are well blended with syrup. Add 1 cup ice cream and 1/4 cup cream soda; stir well.
  • Spoon equal amount of strawberry mixture into 4 (14 ounce) soda glasses, top with remaining ice cream, and fill glasses with remaining soda. garnish each glass with whipped cream and a strawberry.

1 lb. strawberries (rinsed, hulled, and diced)
1½ cups granulated sugar ((can use less if desired))
1½ cups water
2-3 teaspoon lemon juice (optional)
Club Soda, chilled (or lemon-lime soda) (*see note*)

Steps:

  • Place the strawberries, water, and sugar in a large saucepan. Stir.
  • Bring to a simmer over medium heat.
  • When strawberries are soft, mash them with a potato masher.
  • Let strawberries continue to simmer gently until the juices begin to reduce, thicken and become syrupy. (reduce heat if needed)
  • Strain mixture through a mesh strainer, using a rubber spatula to press out the excess syrup. Discard the pulp. (You should have about 1 ¼ cups of syrup.)
  • Stir in lemon juice if using. Let syrup mixture cool and then place in the refrigerator until chilled.
  • To make a glass of soda, pour 8 oz of cold club soda into a cup. Stir in the chilled strawberry syrup by the tablespoon, tasting until you've reached your desired sweetness.

2 pounds very ripe strawberries, hulled and cut into chunks
3 cups cold water
2 cups white sugar

Steps:

  • Place strawberries into a heavy saucepan, add water, and bring to a boil. Stir, reduce heat to low, and simmer until strawberries soften, about 15 minutes.
  • Strain juice into a separate saucepan, using a fine mesh strainer; discard strawberry pulp. Stir in sugar until dissolves. Bring strawberry juice back to a boil a second time.
  • Reduce heat to medium and simmer for 5 minutes. Skim any foam from the top of the syrup. Turn off heat and let cool to room temperature.
  • Pour syrup into a lidded container and refrigerate.

6 cups sliced fresh strawberries
1/2 cup sugar
1 teaspoon vanilla extract
SHORTCAKE:
3 cups all-purpose flour
5 tablespoons sugar, divided
3 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup cold butter, cubed
1-1/4 cups buttermilk
2 tablespoons heavy whipping cream
TOPPING:
1-1/2 cups heavy whipping cream
2 tablespoons sugar
1/2 teaspoon vanilla extract

Steps:

  • Combine strawberries with sugar and vanilla; mash slightly. Let stand at least 30 minutes, tossing occasionally., Preheat oven to 400°. For shortcakes, whisk together flour, 4 tablespoons sugar, baking powder, baking soda and salt. Cut in butter until crumbly. Add buttermilk; stir just until combined (do not overmix). Drop batter by 1/3 cupfuls 2 in. apart onto an ungreased baking sheet. Brush with 2 tablespoons heavy cream; sprinkle with remaining 1 tablespoon sugar. Bake until golden, 18-20 minutes. Remove to wire racks to cool completely., For topping, beat heavy whipping cream until it begins to thicken. Add sugar and vanilla; beat until soft peaks form. To serve, cut shortcakes in half; top with strawberries and whipped cream.

8 scoops chocolate ice cream (about 2-2/3 cups), divided

2 cups milk
2 cups strawberry syrup, recipe follows
2 quarts strawberry ice cream, slightly softened
chilled club soda or seltzer water
8 whole strawberries, for garnish
3 cups hulled and thinly sliced strawberries
2/3 cup sugar
2/3 cup water

Steps:

  • In each glass combine 1/4 cup each of the milk and strawberry syrup.
  • Put 2 or 3 scoops of the ice cream into each glass and fill the glasses with the club soda or seltzer.
  • Divide the remaining syrup among the sodas and garnish each soda with a strawberry.
  • In the food processor or in a blender in batches puree the strawberries, transfer the puree to a stainless steel or enameled saucepan, and stir in the sugar and water.
  • Bring the mixture to a boil over moderate heat, stirring, and simmer it for 1 minute.
  • Force the mixture through a fine sieve set over a bowl and chill the syrup, covered, for at least 3 hours.
