This homey, comforting cereal is like warm granola, especially with the crunchy honey-toasted walnut topping.

1/4 cup coarsely chopped walnuts
1 tablespoon honey
3 cups water
2 cups old fashioned oats
1 teaspoon salt
1 cup unsweetened apple juice
1 cup apple, finely chopped peeled
1/4 cup packed golden brown sugar
1/4 cup raisins
1/2 teaspoon ground cinnamon
1/2 cup nonfat vanilla yogurt

Steps:

  • Stir chopped walnuts in small nonstick skillet over medium heat until lightly toasted, about 3 minutes.
  • Drizzle honey over and stir until honey thickens and coats nuts, about 2 minutes.
  • Remove skillet from heat.
  • Stir to loosen nuts from skillet and cool.
  • Bring 3 cups water to boil in heavy medium saucepan.
  • Add oats and salt and stir over medium heat until oats are softened and very thick, about 5 minutes.
  • Stir in apple juice, chopped apple, brown sugar, raisins and cinnamon. Reduce heat to low, cover and cook until apples are tender, about 3-5 minutes.
  • Divide cereal among 4 bowls.
  • Top with vanilla yogurt and honey-toasted walnuts and serve.

2 cups milk
1 1/4 cups water
1 apple, peeled and chopped
1/4 cup dried cranberries or 1/4 cup raisins
1/2-1 teaspoon cinnamon (saigon cinnamon is my preference)
1 teaspoon vanilla
honey (optional) or maple syrup, to taste (optional)

Steps:

  • Place milk, water and sugar in saucepan.
  • Chop apple into small, thin chunks. Add it and the dried fruit to the milk mixture.

Steps:

  • Heat oven to 350°F.

This isn't my Grandmother's recipe. I have had it over 10 years and don't remember where I got the recipe. I am guessing at the time it takes to make this.

2 1/2 cups water
1/8 teaspoon salt
2 cups dry oatmeal
2 tablespoons sugar
1/2 teaspoon cinnamon
1 (5 ounce) can evaporated milk
3 tablespoons butter
2 tablespoons brown sugar, to taste

Steps:

  • Bring the 2 1/2 cups water to a boil.
  • Then add the salt.
  • While stirring constantly, gradually add the oatmeal.
  • Continue to stir the oatmeal and add the sugar and cinnamon.
  • Cook 1 minute and add the evaporated milk.
  • After adding the evaporated milk reheat to boiling.
  • Pour oatmeal in a serving dish and top with the butter and brown sugar.
