2 cups uncooked elbow macaroni
4 tablespoons butter
2 tablespoons all-purpose flour
2 cups milk
¼ onion, minced
salt and pepper to taste
¼ pound processed cheese food
¼ pound shredded Cheddar cheese
¼ pound shredded Swiss cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Prepare the elbow macaroni according to package directions.
  • Meanwhile, melt the butter in a small saucepan over medium high heat. Stir in the flour until a cream colored paste forms. Then pour in the milk and stir constantly until this comes to a hard boil, then stir for 1 more minute. Remove from heat and set aside.
  • When the macaroni is cooked, spread 1/2 of it into the bottom of a lightly greased 9x13-inch baking dish. Then layer 1/2 of the grated onion, 1/2 of the salt and pepper and 1/2 of each of the cheeses. Repeat this one more time: macaroni, onion, salt and pepper and cheeses, and then pour the reserved white sauce over all. Top off with small pats of butter to taste.
  • Cover and bake at 350 degrees F (175 degrees C) for 45 minutes.

This is the macaroni I grew up on. Nothing is added to it like meat or soup etc. I like a creamy sharp cheesy taste like my mom made. The secret ingredient is what makes this the best I've tasted.

1 lb. box elbow macaroni, cooked al denta
16 oz. extra sharp cheddar cheese (store brand works fine)
1/2 gal. butter milk (or however needed for your particular dish so that the elbows are completely covered)
1 stick butter
1 teaspoon dry mustard
2 eggs beaten
pepper to taste

Steps:

  • 1. Boil elbows in highly salted water. Drain. While elbows are boiling, in large saucepan, heat butter and cheese until melted. Add 4 cups buttermilk, dry mustard and eggs. Heat until thoroughly melted and blended. Add to drained elbows. Stir together. Pepper to taste. Add more buttermilk to just the top of elbows. Put 4 or 5 slices of American Cheese on top. Bake uncovered in a 350 degree preheated oven for 55 minutes or until hot and bubbly.
  • 2. NOTE: Even if you hate buttermilk you will love this. The buttermilk just gives it that sharp pungent taste that you crave in macaroni and cheese dishes.

This is an old recipe from Grandma Carr. She got surplus cheese in large blocks and used it to make this dish.

1 block cheese, 8 ounces, grated, (cheddar or colby)
1 can(s) evaporated milk (regular size - not small)
2 eggs, beaten
2 Tbsp butter
1 pkg elbow macaroni (1 pound)
salt and pepper to taste
OPTIONAL:
1/4 c finely crushed soda cracker crumbs or crumbs from toasted bread

Steps:

  • 1. Preheat oven to 350 degrees. Cook and drain macaroni. Heat milk, eggs, butter, and cheese in a small saucepan until cheese is melted. Stir together macaroni, cheese mixture and salt and pepper. Pour into a buttered casserole and bake for 20-30 minutes until just beginning to brown.
  • 2. Optional: Grandma often added some finely crushed soda crackers on top of casserole during the last 10 minutes of baking to give the dish a little crunch.

This recipe is from my 30 year old Betty Crocker Cook Book. I am always asked for this great old recipe by friends so I thought that I would share it with my new friends. This is also a great start for milk gravy and sauage gravy. Not to state chipped beef ,add your beef after step 4. Also good if you add tuna ( 6 1/2 oz) or hot dogs(1 cup) or ham(1 cup) after step 4. 1 1/2 cups uncooked elbow macaroni
1/4 cup margarine
1 small onion, chopped (about 1/4 cup)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup flour
1 3/4 cups milk
8 ounces cheddar cheese, shredded

Steps:

  • Cook macaroni as directed on package.
  • Cook and stir butter, onion,salt and pepper over medium heat until onion is slightly tender.
  • Blend in flour. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat.
  • Stir in milk. Heat to boiling, stirring constantly, Boil and stir 1 minute ; remove from heat.
  • Stir in cheese until melted.
  • Place macaroni in ungreased 1 1/2 quart casserole. Stir cheese sause into macaroni.
  • Cook uncovered in 375 degree oven for 30 minutes.

12 -16 ounces cubed mild cheddar cheese
12 -16 ounces cubed sharpsharp white cheddar cheese or 12 -16 ounces colby-jack cheese
1 (8 ounce) can condensed celery soup or 1 (8 ounce) can cheddar cheese soup
8 ounces milk
2 lbs ziti pasta or 2 lbs preferred pasta

Steps:

  • preheat oven 375.
  • boil pasta as per package directions cut off about 4 mins cooking time.
  • while pasta cooks cube cheese set about half of one flavour cheese aside, I personally set aside about half of the mild cheese.
  • drain pasta when finished cooking.
  • in pan or large baking dish combine remaining cheese celery soup or cheddar cheese soup, milk, and pasta. Stir to combine well.
  • Place set aside cheese over top.
  • Place in oven about 45 mins or until cheese on top is a golden brown.
