1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons cinnamon, ground
1/4 teaspoon nutmeg, ground
1 cup butter, room temperature (2 sticks)
1 cup sugar
2 large eggs
1 teaspoon vanilla extract
3 apples, peeled, cored and diced (about 3 cups)
2/3 cup pecans or walnuts, chopped
1/4 cup raisins
ice cream, any flavor (optional, for serving)
caramel sauce, homemade or store bought (optional, for serving)

Steps:

  • Preheat your oven to 350 degrees.
  • Prepare a springform pan with butter or cooking spray and place on a rimmed baking sheet. Set aside.
  • In a medium sized mixing bowl combine flour, cinnamon, baking soda, salt and nutmeg. Set aside.
  • In another bowl, place your butter and sugar.
  • In another bowl, using a handheld mixer, on medium speed, beat butter and sugar together until smooth, about 5 minutes.
  • Add eggs and vanilla.
  • Scrape sides of bowl with a spatula.
  • Add in flour mixture and blend on low speed until combined.
  • Fold in apples, raisins and nuts. Pour batter into your prepared pan.
  • Bake for 45 to 55 minutes or until a toothpick inserted in center comes out clean.
  • Allow cake to cool completely.
  • Use a knife to loosen cake from the outside of your springform pan.
  • Serve cake warmed and sliced with a scoop of ice cream and some caramel sauce. !
  • This cake can easily be reheated at 325 degrees for 7-9 minutes or in your microwave. Enjoy

1 cup butter, softened
2 cups sugar
3 large eggs, room temperature
2 teaspoons vanilla extract
3 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground mace
3 cups chopped peeled tart apples
2 cups chopped walnuts

Steps:

  • In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Add vanilla. Combine flour, baking powder, cinnamon, salt and mace; gradually add to creamed mixture. Stir in apples and nuts. (Batter will be very stiff.) , Spoon into a greased and floured 10-in. tube pan bake at 325° for 1 hour and 25 minutes or until cake tests done. Cool 10 minutes in pan before removing to a wire rack to cool completely.

3 cups apples, granny smith, peeled, cored and grated
1 1/2 cups sugar
1/2 cup brown sugar
1 1/2 cups vegetable oil
3 eggs, beaten
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
2 1/2 cups flour
3 3/4 teaspoons baking powder
1 1/2 teaspoons salt
glaze
1 1/2 cups confectioners sugar, sifted
2 teaspoons vanilla extract
3 tablespoons water

Steps:

  • Preheat oven to 350 degrees. Combine grated apples, sugars and vegetable oil in a large bowl. Add the eggs, vanilla and cinnamon. Gradually add the flour mixed with the baking powder and salt, mixing well to combine. Pour into a greased bundt pan and bake 1 hour, or until a toothpick inserted in the center of the cake comes out clean. Cool in the pan for 10 minutes, then invert onto a cooling rack.
  • Combine the glaze ingredients in a small bowl and drizzle over the top of the cake before serving.
