Pecan Chewy Cake (aka Pecan Chewies) has a dreamy texture similar to a blonde. This delicious southern dessert is filled with gooey butter, brown sugar, and pecans!

10 tbsp butter (melted, (1 1/4 sticks))
1 pound brown sugar
2 cups self rising flour
3 each large eggs
1 1/2 cups pecans (roughly chopped (you can also use walnuts))
2 tsp vanilla

Steps:

  • Preheat oven to 375 degrees and grease or spray cooking spray in 9 X 13 pan.
  • Melt Butter. Add one box of brown sugar and mix together until well incorporated.
  • Next add two cups of self rising flour, three eggs, one and one half cups of pecans and vanilla. Mix until combined.
  • Pour into greased 9 X 13 pan and bake for 20-25 minutes. Remove pan and drop the pan onto the counter top to settle the cake and bake for 5 more minutes.

2 stick butter
2 c brown sugar
1/2 c granulated sugar
2 c flour ,self rising
2 tsp vanilla extract
2 eggs
1/2 c pecans, in pieces

Steps:

  • 1. Melt butter in a mid size pot,And take off heat, let cool.
  • 2. Stir in both Sugars and Vanilla and mix well.
  • 3. Put eggs in a separate bowl and beat well.add to cool butter and sugar mixture.mixing well.
  • 4. Then pour in flour, stir until well incorporated then stir in pecans , mixture will be thick. pour batter into greased pan, at least 2 inches deep and 13 inches long.bake at 350 until golden brown and tooth pick comes out clean in center. about 30 to 40 minutes.cut into squares while warm.

1/4 cup butter, melted
2 cups packed light brown sugar
2 large eggs
1/4 teaspoon salt
2 cups sifted flour (sift before measuring)
1 teaspoon vanilla extract
1 cup pecans

Steps:

  • Combine butter and brown sugar in mixing bowl and beat well.
  • Beat in eggs, one at a time.
  • Add salt and sifted flour, mixing well.
  • Stir in vanilla and pecans.
  • Pour into a greased and floured (or use Bakers' Joy) 9x13-inch cake pan.
  • Bake at 325 degrees for 30 minutes or until cake tests done.
  • Cut into bars.

3/4 cup crushed vanilla wafers
1/3 cup butter, melted
3 packages (8 ounces each) cream cheese, softened
1 cup sugar
3 large eggs, lightly beaten

TOPPING:
2 cups sour cream
3 tablespoons sugar

  • In a small bowl, combine almonds and wafer crumbs; stir in butter. Press onto the bottom and 2 in. up the sides of an ungreased 9-in. springform pan. Bake at 350° for 5 minutes. Cool on a wire rack., In a large bowl, beat cream cheese and sugar until smooth. Add eggs; beat on low speed just until combined. Beat in vanilla and lemon zest just until blended. Pour into crust. Place pan on a baking sheet. Bake at 350° for 40-45 minutes or until center is almost set., Combine the sour cream, sugar and vanilla; carefully spread over filling. Bake 10 minutes longer or until edges appear dry. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Cover and chill overnight. Remove sides of pan. Top with fresh fruit. Refrigerate leftovers.

2 cups/360 grams sugar
1 tablespoon baking powder
3 cups/270 grams sifted cake flour
3/4 cup milk
6 large egg whites, stiffly beaten
1/2 cup butter (1 stick)
1 cup/180 grams sugar
6 large egg yolks
Grated zest and juice of 2 lemons
2 egg whites, unbeaten

I found this recipe when we were first married 48 yrs ago. My family had always loved it. I hadn't made it now for several years but came across it again a couple of months ago and we still love it just as much!

1 c raisins
1/2 c dates, chopped
1/2 c dried apricots, chopped
1 c hot water
2 1/2 Tbsp butter, cold
1 1/2 c all purpose flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp cloves or allspice
1/4 tsp salt
3/4 c white sugar

Steps:

  • 1. In a large saucepan combine dried fruits, sugar, hot water, and butter. Bring to a boil and simmer for 5 minutes. Cool.
  • 2. Combine flour, baking soda, cinnamon, cloves or allspice, salt. Stir into cooled boiled mixture.
  • 3. Bake in 8X8 greased pan at 350 degrees for 35-40 minutes. Cool before cutting.
  • 4. You could frost it, but we've always liked it just plain.
