1/2 cup unsalted butter, softened
1 cup sugar
1 egg
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup flour
2 granny smith apples, peeled, chopped fine
1/2 cup chopped pecans
1/2 cup unsalted butter
1 cup minus 1 tbl. brown sugar
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup whipping cream

Steps:

  • Cake:.
  • Cream butter and sugar, then add egg and beat.
  • Add rest of dry ingredients and beat til mixed.
  • Fold in apples and pecans. Pour into greased and floured large round, deep cake pan. *Use greased and lightly floured parchment paper
  • on the bottom for easier removal.
  • Bake at 350º for 35-40 minutes.
  • Cool a bit, turn out onto rack to cool completely. *Can serve warm, too.
  • Meanwhile, make caramel sauce.
  • Caramel sauce:
  • Melt butter, brown sugar and salt in pan over low-med heat,
  • stirring, for about 2-3 minutes.
  • Remove from heat, stir in vanilla and cream and stir well till not grainy.
  • Drizzle lots of caramel sauce over cut cake slices when serving.
  • Sprinkle chopped pecans on top of that if desired.
  • 8 servings.

Steps:

2 cups white sugar
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
3 eggs
1 ¼ cups vegetable oil
¼ cup orange juice
1 teaspoon vanilla extract
1 cup apple - peeled, cored, and chopped
1 cup chopped walnuts
1 cup flaked coconut
6 tablespoons butter
1 cup white sugar
½ teaspoon baking soda
½ cup buttermilk

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.
  • In a large bowl, combine flour, 2 cups sugar, baking soda, salt and cinnamon. Make a well in the center and pour in the eggs, oil, orange juice and vanilla. Mix well. Stir in the chopped apple, nuts and coconut. Pour into prepared pan.
  • Bake in the preheated oven for 75 to 90 minutes, or until a toothpick inserted into the center of the cake comes out clean. Pour glaze over cake and let stand for 1 hour before turning out.

CAKE INGREDIENTS
1/2 c vegetable shortening
1/2 c sugar
1/2 c buttermilk
1/3 c molasses
1 large egg, slightly beaten
1 tsp vanilla extract
3 1/2 c all purpose flour
1 tsp ground ginger
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
pinch of nutmeg
powdered sugar for dusting
APPALACHIAN APPLE BUTTER FILLING
4 c roughly chopped dried apples
3/4 c dark brown sugar, firmly packed
1 tsp ground ginger
1 tsp cinnamon, ground
6 c apple cider (not juice)

Steps:

  • 1. Preheat oven to 350 degrees. Spray 6 (9-inch) cake pans with nonstick cooking spray. Line bottoms of pans with parchment paper, and spray parchment paper with cooking spray.
  • 2. In a medium bowl, beat shortening and sugar at medium speed with a mixer until creamy. Add buttermilk, molasses, egg and vanilla, beating well. In a large bowl, combine flour, ginger, baking soda, salt, cinnamon and nutmeg. Make a well in center of flour mixture. Add shortening mixture, stirring just until combined.
  • 3. On a lightly floured surface, form dough into a log; cut into six equal portions. Place one portion in each prepared pan, and use fingers to lightly pat dough to edges of pans. Bake for 10 to 12 minutes or until lightly browned. Remove from pans and cool completely on wire racks. Cake will have the consistency of a gingerbread cookie.
  • 4. Cook time: Depends on how big you want your stack. This recipe makes one 9-inch cake with six stacks. Three stacks were baked simultaneously for 10 to 12 minutes The filling (recipe below) takes about an hour. Allow 24 hours for the cake to chill in the refrigerator.
  • 5. Make filling: In large saucepan, combine dried fruit and all dry ingredients. Add enough liquid to cover. Bring to a low boil and cook, stirring often, for 45 minutes. Remove from heat, and let stand for 10 minutes or until cooled slightly. Transfer to the work bowl of a food processor or container of a blender; process until smooth. Use while still warm.
  • 6. To put cake together, place one cake layer on a serving plate or cake stand; spread with about 3/4 cup warm fruit butter filling. Repeat procedure with remaining layers and fruit butter filling, stacking each on previous layer. Do not spread fruit butter filling on top layer. Cover and refrigerate cake for at least 24 hours. Just before serving, dust with confectioners' sugar.

Steps:

  • Preheat oven to 375.
  • Lightly grease and flour a cake pan: 7"x11" (you can substitute an 8" or 9" square cake pan if needed).
  • Pare and core the apples and slice them thinly (about 1/4" to 1/2" thick). Mix the cinnamon and sugar and set aside.
  • For the cake batter:.
  • Cream the 3/4 cup of sugar, the shortening, and egg together until fluffy. Gradually add the milk.
  • Sift the flour, baking powder, and baking soda together and stir into the first mixture.
  • Spread the batter in the prepared cake pan.
  • Arrange the apples on top of the batter in rows, overlapping slightly. Sprinkle the cinnamon sugar over the apples.

3/4 cup butter, softened
1 1/2 teaspoons vanilla

1/2 cup powdered sugar
1/4 teaspoon vanilla

Steps:

  • Preheat oven to 325°F; grease a 12-cup Bundt pan or a 10x4-inch tube pan.
  • Prepare apple-nut filling: Cook all ingredients, except nuts, over medium heat, stirring constantly. Cook until apples are tender. This will take approximately 3 to 4 minutes. Stir in nuts. Set aside.
  • Combine sugar, butter, vanilla and eggs in a large mixing bowl. Beat at medium speed, 2 minutes, scraping bowl occasionally.
  • Alternately add the dry ingredients and the sour cream, beginning and ending with the dry ingredients. Beat well between each addition on low speed.
  • Spread 1/3 of the batter (about 2 cups) in the baking pan. Top with 1/3 of the filling. Repeat this pattern 2 more times, until all batter and filling have been used.

1 c white sugar
3 Tbsp butter, softened
1/2 c sorghum
2 eggs, beaten
5 c all purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp vanilla

1/2 c milk (or less)
APPLE BUTTER FILLING
2 c apple butter
3/4 c brown sugar
3 Tbsp butter, cut in chunks

Steps:

  • 1. Preheat oven to 375 degrees. Lightly grease or spray with oil several 8-inch cake pans, skillets, etc.
  • 2. FOR CAKE: Mix first four ingredients. Stir flour together with baking powder, soda, salt, and nutmeg. Stir vanilla into milk. Add flour and milk to liquid ingredients, blending well. Turn out on floured surface and knead like a biscuit dough.
  • 3. Divide dough into 7 portions. Roll out on wax paper to fit greased 8-inch cake pans. You may have to bake in batches. Bake until done and very lightly browned, about 10 minutes. Layers do not need to cool before assembling.
  • 4. FILLING: Stir together apple butter and brown sugar in a medium saucepan over medium high heat. Bring just to boiling. Remove from heat and stir in the butter until it melts completely.
  • 5. Place first cake layer on cake plate that has a cover. Spread hot filling between cake layers, stacking 7 high. Smooth some filling over top of stack and let drip slightly down sides. Cover and allow to set 12 hours before serving. May sprinkle with powdered sugar just before serving if desired. Or, top of stack may be decorated with little red hot cinnamon candies.
  • 6. NOTE: Layers may be frozen with wax paper in between, and filled later.

1/2 cup buttermilk
1 1/2 cups tart apples, diced
1/2 cup raisins

Steps:

  • Preheat oven to 350 degrees. Prepare an 8 x 8-inch baking pan with nonstick baking spray.
  • Sift together flour, sugar, baking soda and spices.
  • In a mixer bowl, put egg, egg whites, vanilla, apple sauce and milk. Mix with electric mixer. Gradually add dry ingredients, blending well. Stir in apples and raisins by hand.

1/2 cup unsalted butter, softened
1 cup sugar
1 egg
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup flour
2 granny smith apples, peeled, chopped fine
1/2 cup chopped pecans
1/2 cup unsalted butter
1 cup minus 1 tbl. brown sugar
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup whipping cream

Steps:

  • Cake:.
  • Cream butter and sugar, then add egg and beat.
  • Add rest of dry ingredients and beat til mixed.
  • Fold in apples and pecans. Pour into greased and floured large round, deep cake pan. *Use greased and lightly floured parchment paper
  • on the bottom for easier removal.
  • Bake at 350º for 35-40 minutes.
  • Cool a bit, turn out onto rack to cool completely. *Can serve warm, too.
  • Meanwhile, make caramel sauce.
  • Caramel sauce:
  • Melt butter, brown sugar and salt in pan over low-med heat,
  • stirring, for about 2-3 minutes.
  • Remove from heat, stir in vanilla and cream and stir well till not grainy.
  • Drizzle lots of caramel sauce over cut cake slices when serving.
  • Sprinkle chopped pecans on top of that if desired.
  • 8 servings.

1 box duncan hines deluxe ii spice cake mix
1 can(s) (1 lb, 5 oz) apple pie filling
3 large eggs
3 Tbsp water
1/2 c chopped pecans or walnuts
TOPPING
1 c sugar
1 c all purpose flour
1 tsp ground cinnamon
1/2 c (1 stick) unsalted butter, slightly softened

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. For cake: In a large bowl combine dry cake mix, eggs, water and nuts. Blend at low speed until completely moistened, about 1 minute. Beat 2 minutes at medium speed. Fold in pie filling.
  • 3. Spread batter in a greased and floured 13x9x2-inch pan.
  • 4. For topping: In a medium bowl combine the sugar, flour, cinnamon and softened butter with a pastry blender. (Mixture will be crumbly.) Sprinkle evenly over batter.

  • Preheat oven to 325°F; grease a 12-cup Bundt pan or a 10×4-inch tube pan.Prepare apple-nut filling: Cook all ingredients, except nuts, over medium heat, stirring constantly. Cook until apples are tender. This will take approximately 3 to 4 minutes. Stir in nuts. Set aside.Combine sugar, butter, vanilla and eggs in a large mixing bowl. Beat at medium speed, 2 minutes, scraping bowl occasionally. Alternately add the dry ingredients and the sour cream, beginning and ending with the dry ingredients. 3 quarts of apples, 3/8" slices (greening apples are fine)
9x13x2" oblong cake pan
Sugar Mixture:
1 1/4 - 1 1/2 cup sugar
2 Tablespoon flour
3/8 teaspoon cinnamon
1/4 cup butter
Shortcake dough:
2 1/4 cups sifted cake flour
4 teaspoons baking powder
1 3/4 Tablespoons Sugar
1/4 Butter ("or 2/3 lard")
1/2 cup cream more or less
1 1/2 Tablespoon Egg Yolk

Steps:

  • 1. Peel core apples. Slice 3/8" thick. Needs firm apple that holds its shape after cooking line Greenings, but arrive late in the fall. 2. Make shortcake dough using fingers to mix butter into sifted flour (I'd use the flat beater on my Kitchenaid), sugar, salt, baking powder mixture. Add beaten egg yolk and cream as needed slowly. Roll dough on floured board. Knead only slightly. Roll 1/4" thick. Use 2/3 dough for bottom of pan. Dough should come halfway up sides of pan. 3. Place apples on dough, layer evenly in rows. Sprinkle with 1/2 sugar mixture (flour and sugar) and a little cinnamon. Dot with butter. Repeat 2nd layer. Trim dough on sides of pan so apples are even with it. 4. In preheated 375 degree oven, bake approximately 1 hour 10 minutes. Cover cake with aluminum foil last 15 minutes to puff apple. (Set timer for 55 minutes; cover with foil then reset timer for 15 minutes). 5. Cut cake 5x3". Serve warm with whipped cream.
