A soul-food favorite and a Chesapeake tradition dating back to colonial days, Maryland White Potato Pie is a bright and beautiful take on the simple potato with a healthy helping of sweetness and a ripping citrus zest.

2 large potatoes, cooked, peeled and mashed
2/3 cup unsalted butter
1 cup sugar
½ tsp baking powder
½ tsp salt
½ cup heavy whipping cream
½ cup milk
4 eggs, beaten
4 lemons for juice and zest
2 lemons, sliced for garnish (optional)
1 ½ tsp vanilla extract
¼ tsp nutmeg
1 9-inch pie crust using your favorite recipe, or frozen

Steps:

  • Combine the potatoes, butter, sugar, baking powder and salt in medium bowl and mix well.
  • Slowly add whipping cream and milk stirring as you go until you've got a smooth and even consistency.
  • Add lemon juice, zest from two lemons, vanilla extract, nutmeg, and eggs. Mix well.
  • Pour into crust and bake at 350° for 55 minutes. For a beautiful pie, top with thinly sliced lemon circles around the edge of the pie or, halve the circles and twist each into a bow, placing one for each slice with another slice in the middle. Your pie will look like a Maryland sunrise!

My Mom-Mom Beatrice taught me how to make a white potato pie when I was 12 years old. I always remembered the recipe and I make it every holiday for parties. 3/4 cup plus 1 tablespoon sugar, divided
3-1/2 teaspoons ground cinnamon, divided
2 frozen deep-dish pie crusts (9 inches)
3 pounds potatoes, peeled and cubed
1/2 cup butter, softened
3 large eggs
1/2 cup sweetened condensed milk
1/8 teaspoon vanilla extract
3/4 cup evaporated milk
1-1/2 teaspoons ground nutmeg
Confectioners' sugar, optional

Steps:

  • Preheat oven to 350°. In a small bowl, combine 1 tablespoon sugar and 1/2 teaspoon cinnamon. Sprinkle half the mixture in the bottoms of both pie crusts; bake until lightly browned, 7-10 minutes. , Meanwhile, place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, about 10-15 minutes, stirring occasionally. Drain. , In a large bowl, mash potatoes with butter; beat until fluffy. Add eggs, condensed milk and vanilla; mix well. Stirring continuously, slowly add evaporated milk; mix until smooth. Add remaining sugar, cinnamon and nutmeg; mix well. Pour potato mixture into prepared crusts; do not over-fill. Sprinkle with remaining cinnamon sugar mixture. Bake until pie is set or until a knife inserted in the center comes out clean, about 45 minutes. Cool on a wire rack 1 hour before serving. If desired, sprinkle with confectioner's sugar.

⅔ cup butter
1 cup white sugar
½ teaspoon baking powder
⅛ teaspoon salt
½ cup heavy whipping cream
½ cup milk
2 teaspoons lemon zest
2 tablespoons lemon juice
1 teaspoon vanilla extract
¼ teaspoon nutmeg
4 eggs, beaten
2 (9 inch) pie shell

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium mixing bowl mix sugar, baking powder, and salt, then add potatoes and butter or margarine; mix well. Gradually add whipping cream and milk, stirring until well blended. Stir in lemon rind, juice, vanilla, and nutmeg. Add beaten eggs and mix well.

1 cup evaporated milk

2 cups peeled cooked sweet potatoes
1 1/4 cups sugar
1/4 cup melted butter
2 eggs
1 teaspoon vanilla extract or 1 -2 tablespoon Bourbon
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1 cup milk
1 (9 inch) unbaked pie shells
3 egg whites

Steps:

  • Preheat the oven to 350°F.
  • For the filling, using an electric hand mixer, combine the potatoes, 1 cup of the sugar, the butter, eggs, vanilla, salt, and spices. Mix thoroughly.
  • Add the milk and continue to mix.
  • Pour the filling into the pie crust and bake for 35 to 45 minutes, or until a knife inserted in the center comes out clean.
  • Place the pie on a rack and cool to room temperature before covering with meringue.
  • For the meringue, using an electric mixer, beat the egg whites until soft peaks form;.
  • Beat in the remaining 1/4 cup sugar 1 tablespoon at a time.
  • Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry.

2 eggs
2 c light cream
2 c mashed potatoes
1 c sugar
1 1/2 tsp vanilla
1/4 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
2 9 in unbaked pie shells

Steps:

  • 1. Preheat oven at 350. Separate egg yolks from whites. Set yolks aside. Beat whites with mixer til stiff peaks form. Put this bowl in refrigerator. In lg bowl beat yolks; stir in cream, potatoes, sugar, vanilla & salt. Beat til smooth. Pour into both pie shells; sprinkle with cinnamon & nutmeg.
  • 2. Wrap edges of pie with aluminum foil, covering the rim. Place on center rack of oven & baje for 25 mins. Remove pies from oven, remove foil then put back into the oven for another 15-20 mins or until crust is done. Allow to cool before serving.
