Old Fashioned Cucumber Salad is a creamy, mayo based, slightly tart salad that is perfect for those Summer cookouts or game day parties.

1 english cucumber ((approx. 2 cups))
1/4 red onion, (thinly sliced)
1/3 cup milk
1/3 cup mayonnaise
2 tablespoons white vinegar
2 tablespoons granulated sugar
2 tablespoons dill
1/4 teaspoon kosher salt
1/8 teaspoon black pepper

Steps:

  • Wash the cucumber skins with a vegetable brush under water; then slice them as thin as you can using a sharp knife or a mandoline slicer.
  • Add the cucumbers to a bowl along with the remaining ingredients, mix well and cover. Refrigerate for at least 2 hours or up to overnight to allow the salad to marinate; then serve chilled.

Both of my grandmothers made this salad every summer when their gardens produced baskets of cucumbers. It's a cool, fresh side dish for any meal. One of my grandmas omitted the green pepper and the celery seed. She also put ice in it to chill it quickly and cut the vinegar taste.

7 cups sliced cucumbers
salt as needed
1 cup sliced onions
1 cup sliced green bell pepper
2 cups white sugar
1 cup white vinegar
1 tablespoon celery seed
2 teaspoons salt, or to taste

Steps:

  • Place cucumber slices in a colander and liberally sprinkle salt over cucumbers; set aside until water starts to release from cucumbers, about 15 minutes. Drain and rinse cucumbers.
  • Mix cucumbers, onions, and green bell pepper together in a bowl.
  • Whisk sugar, vinegar, celery seed, and 2 teaspoons salt together in a bowl until dressing is smooth; pour over cucumber mixture and stir until evenly coated.

This was my Dad's recipe and one of our family's all-time summer favorites.

2 large cucumbers, peeled and thinly sliced
1 sweet onion, thinly sliced
1 tablespoon sea salt
1 ½ cups mayonnaise, or more to taste
2 tablespoons vinegar
1 tablespoon white sugar
1 teaspoon dried dill weed
1 teaspoon garlic powder
1 teaspoon ground black pepper

Steps:

  • Mix cucumbers, sweet onion, and sea salt together in a bowl. Cover bowl with plastic wrap and let sit for 30 minutes.
  • Turn cucumber mixture into a colander set over a bowl or in a sink; let drain, stirring occasionally, until most of the liquid has drained, about 30 minutes more. Transfer drained cucumber mixture to a large bowl.
  • Stir mayonnaise, vinegar, sugar, dill, garlic powder, and black pepper together in a bowl with a whisk until smooth; pour over the cucumber mixture and stir to coat vegetables with the dressing.
  • Cover bowl with plastic wrap and refrigerate at least 2 hours.

I have always loved cucumbers in vinegar. My grandmother used to fix them and this tastes like hers. I can remember her saying that she started hers like her pickles so getting most of the water out of the cucumbers must be the trick. I can remember her putting left over onions and tomatoes into the vinegar mixture after a meal. Laura and I love this in the summer.

4 cups pickling cucumbers, peeled and sliced thin
1 tablespoon salt
3/4 cup white vinegar
2 tablespoons sugar

Steps:

  • Place sliced cucumbers in bowl;sprinkle every few layers with salt.
  • Cover cucumbers with a plate and weight them down with a heavy can.
  • Let stand at room temperature for 2 hours.
  • Drain cucumbers and press out remaining liquid.
  • Stir together vinegar and sugar; pour over slices.
  • Cover and refrigerate at least 4 hours.
