My grandma knew how to make the best pies every year for Thanksgiving. The crust is tender and flaky and so easy to make! You will never buy from the store again!

1 1/4 cups all purpose flour
1/4 teaspoon salt
1/3 cup shortening
4 to 5 Tablespoons cold water

Steps:

  • In a medium bowl stir together flour and salt. With a pastry blender cut in shortening till pea-sized.
  • Sprinkle water on one tablespoon at a time tossing with a fork. Push moistened dough to the side. Mix till all flour is moistened. Don't mix too much or the crust will be hard.
  • Form into a ball and roll out on the floured surface. Turn and flour the dough a few times till it's the size you need.

INGREDIENTS FOR SINGLE-CRUST PIE:
1-1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup cold butter, cubed
3 to 4 tablespoons ice water
INGREDIENTS FOR DOUBLE-CRUST PIE:
2-1/2 cups all-purpose flour
1/2 teaspoon salt
1 cup cold butter, cubed
1/3 to 2/3 cup ice water

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add ice water, tossing with a fork until dough holds together when pressed., Shape dough into a disk for a single-crust pie; for a double-crust pie, divide dough in 2 with 1 piece slightly larger than the other. Shape into 2 disks. Wrap and refrigerate 1 hour or overnight., On a lightly floured surface, roll 1 disk of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. , For a single-crust pie: Trim crust to 1/2 in. beyond rim of plate; flute edge. Fill or bake according to recipe directions., For a double-crust pie: Add filling to pie. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Bake according to recipe directions.

Another one pulled from my recipe box vault! My recipe card for this one is so worn. I only use this recipe for my pies. It's my gammies. Its got a wonderful flaky texture that just melts in your mouth. Ingredients may seem a lil different from today's recipes.... but it's been a favorite of my family's for generations.

3 c all purpose flour
1 c crisco, may use butter flavored if preferred
1 Tbsp crisco, may use butter flavored if preferred.
1 tsp salt
1 egg
1 tsp vinegar
7 Tbsp ice water (very last)

Steps:

  • 1. In a large bowl, sift together flour & salt, cut in crisco, until completely mixed in.
  • 2. Mix together egg & vinegar, mix into dough. Add ice water one tablespoon at a time.until dough is smooth, & just a little sticky.
  • 3. Break dough into two, form into a ball. Refridgerate for 30 minutes. Roll out dough with rolling pin, on floured surface. Fits both an 8 or 9 inch pie plate. Use to prepare your favorite pies!

Dough for single-crust deep-dish pie
1 cup sweetened shredded coconut, chopped
3 large eggs, beaten
2-1/2 cups 2% milk
2/3 cup sugar
3 tablespoons all-purpose flour
1 teaspoon vanilla extract

1/4 teaspoon ground nutmeg
Toasted sweetened shredded coconut, optional

Steps:

  • Preheat oven to 450°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. deep-dish pie plate. Trim and flute edge. 1/2 ounce sugar (1 tablespoon; 15g)
1 teaspoon Diamond Crystal kosher salt; for table salt, use half as much by volume or use the same weight (4g)
8 ounces unsalted butter, cold (2 sticks; 225g)
4 ounces cold water (1/2 cup; 115g)

Steps:

  • DOUGH: Whisk flour, sugar, and salt together in a medium bowl. Cut butter into 1/2-inch cubes (this size is important, as smaller pieces will melt too fast) and toss with flour mixture to break up the pieces. With your fingertips, smash each cube flat-that's it! No rubbing or cutting. Stir in water, then knead dough against the sides of the bowl until it comes together in a shaggy ball. Dough temperature should register between 65 and 70°F (18 and 21°C); if not, refrigerate briefly before rolling and folding. LAYERS: On a generously floured work surface, roll dough into a roughly 10- by 15-inch rectangle. Fold the 10-inch sides to the center, then close the newly formed packet like a book.
