SIMPLE ROASTED OKRA

1 pound fresh okra, trimmed and halved lengthwise
1 tablespoon olive oil
1 teaspoon smoked paprika
½ teaspoon ground cumin
½ teaspoon kosher salt
¼ teaspoon black pepper
¼ teaspoon garlic powder
⅛ teaspoon cayenne pepper

Steps:

  • Preheat oven to 425°F. Toss together all ingredients in a large bowl until combined. Spread mixture in a single layer on a large baking sheet. Roast in preheated oven until okra is tender and browned, 20 to 25 minutes, stirring mixture halfway through cook time. Serve.

1 cup cornmeal
1/2 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
5 -7 drops Tabasco sauce
2 lbs fresh okra
6 slices uncooked bacon

Steps:

  • Wash and dry okra. Cut okra into 1/2 inch rounds.
  • Preheat oven to 400 degrees. Lightly oil bottom of 9x13 inch baking dish.
  • Combine cornmeal, flour, salt, pepper and Tabasco sauce in a large plastic bag. Add okra and shake to coat.
  • Arrange okra in baking dish in two layers. Top with bacon pieces. Bake for 20 minutes. Then stir lightly to make sure all pieces come in contact with bacon. Bake 5 to 10 minutes more, until bacon is browned and okra is crispy on the outside.

4 slices bacon
1 onion, chopped
3 cups sliced okra
1 (14.5-ounce) can diced tomatoes
Kosher salt and freshly ground black pepper

Steps:

  • In a heavy bottomed saute pan over medium-high heat, add the bacon. Render the bacon until crisp. Remove from pan and reserve. Add the onion and saute until tender, about 3 minutes.
  • Add the okra and tomatoes, making sure to add the reserved juice from the tomatoes to the saute pan. Season with salt and pepper and simmer for 15 minutes.

4 slices thick-sliced bacon
1 pound fresh okra, cut in half lengthwise
1 tablespoon canola oil
1 teaspoon Miss Brown's House Seasoning, recipe follows
Juice of 1/2 lemon (about 1 tablespoon)
Freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper

Steps:

  • Cook the bacon in a large cast-iron skillet until crisp, about 8 minutes. Remove to paper towels to drain, reserving the drippings in the skillet.
  • Add the okra to the drippings in the skillet. Add the canola oil if the skillet is dry. Sprinkle with the House Seasoning, and toss to coat. Saute until crispy and golden brown, 12 to 15 minutes.
  • Squeeze the juice from the lemon over the top of the okra. Crumble the bacon over the top and sprinkle with freshly ground pepper. Serve right from the skillet.
  • Stir together the garlic and onion powders, paprika, salt and pepper in a small bowl. Store in an airtight container at room temperature.

½ green bell pepper, chopped
2 celery, chopped

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.
  • Remove bacon from pan and saute okra, onion, pepper and celery until tender. Add tomatoes, salt and pepper and cook until tomatoes are heated through.
  • Garnish with crumbled bacon, if desired.

6 -8 slices of thick-sliced bacon, cut into pieces
1 medium onion, chopped coarsely
3 cups sliced okra (fresh or frozen)
3 medium tomatoes, cut up
salt & pepper

Steps:

  • Saute' bacon in skillet until it is browned. Add onion, cooking until the onion is transparent. Add the okra and continue cooking until it is tender and almost done. Add tomatoes and continue cooking 4-5 minutes more. Add salt and pepper to your taste. Serve as a side dish or over rice.

½ onion, chopped
1 clove garlic, minced
1 hot chile pepper, seeded and chopped
1 (16 ounce) can diced tomatoes, drained and juice reserved
1 sprig fresh thyme
salt and ground black pepper to taste
2 cups trimmed okra
2 tablespoons chopped fresh parsley

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crisp, about 10 minutes. Crumble bacon into a bowl.
  • Add onion and garlic to skillet over medium heat; cook and stir until soft and translucent, about 5 minutes. Add hot pepper and cook until tender, about 3 minutes more. Add drained tomatoes; season with thyme, salt, and pepper. Bring to a simmer over medium heat and cook 5 minutes more.
  • Add okra and enough reserved juice from tomatoes to cover. Simmer, covered, until okra is tender, about 15 minutes.

5 slices bacon
1 pound okra, washed, trimmed, and sliced about 1/2 inch thick
1 large sweet onion (preferably Vidalia), cut into 1/3-inch wedges
Coarse salt
Freshly ground black pepper
4 medium heirloom tomatoes, cut into 1/2-inch wedges

Steps:

  • In a large skillet, cook bacon over low heat until it is crisp and fat is rendered. Remove bacon and set aside.
  • Add okra to skillet and cook, stirring frequently, over medium heat for 5 to 7 minutes. Add onion wedges, 1/2 teaspoon salt, and 1/4 teaspoon pepper, and cook, stirring, for 5 minutes.
  • Add tomatoes and reduce heat to low. Continue cooking, partially covered, until tomatoes are just heated through, 3 to 4 minutes. Season with salt and pepper. Crumble bacon slices over tomatoes; serve warm.
