1 1/2 cups unbleached flour
3/4 cup rolled oats
1 teaspoon baking powder
1/2 teaspoon salt
1 cup white sugar
2 tablespoons butter, softened
1/2 cup cinnamon applesauce
1 egg
1 teaspoon vanilla
1 cup chunky applesauce
1/3 cup raisins
1 tablespoon packed brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • Preheat oven to 375F degrees.
  • Combine flour, oats, baking powder and salt.
  • In separate bowl, beat white sugar and butter until blended.
  • Whisk in cinnamon applesauce, egg, and vanilla.
  • Add flour mixture to applesauce mixture and stir until well blended.
  • In small bowl, combine chunky applesauce, raisins, brown sugar, and cinnamon.
  • Spoon half of oat mixture into sprayed 8-inch baking pan; pour raisin filling over top, and spoon remaining oat mixture over filling, spreading evenly.
  • Bake 30 to 35 minutes or until lightly browned; cool on wire rack.

1/2 cup butter or margarine
2/3 cup firmly packed brown sugar
2/3 cup maple-flavored syrup
2/3 cup crunchy peanut butter
1 teaspoon vanilla
3 cups quick-cooking oats
1 cup wheat germ
1 cup graham cracker crumbs
1 cup cherry- or orange-flavored sweetened dried cranberries

Steps:

  • Grease bottom and sides of 13x9-inch pan with shortening. Melt butter in 2-quart saucepan over medium heat. Stir in brown sugar and maple syrup; heat to boiling. Boil 1 minute, stirring frequently; remove from heat. Stir in peanut butter and vanilla until mixture is smooth.
  • Stir remaining ingredients into peanut butter mixture, mixing well. Press evenly in pan. Cover and refrigerate about 2 hours or until firm. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.

2 tablespoons white sugar
1 egg white
1 tablespoon canola oil
1 tablespoon milk

½ teaspoon ground cinnamon
⅛ teaspoon salt
1 ½ cups rolled oats
½ cup chocolate chips

Steps:

1 tablespoon maple syrup
1 teaspoon baking soda
1/2 teaspoon ground allspice
2 cups rolled oats (quick cooking or old fashioned)
1 cup whole wheat flour
1 cup sugar
1/4 cup raisins (may substitute chocolate chips or butterscotch chips)

Steps:

  • Preheat oven to 350°F Coat a 9" x 13" baking dish with nonstick cooking spray.
  • Melt butter and syrup over low heat on stovetop or in microwave.
  • In a large bowl, combine butter mixture, baking soda, and allspice; mix well and let cool.
  • Add rolled oats, flour, sugar, and chocolate chips or raisins, if desired; mix well. Press dough into baking dish.
  • Bake 15 minutes. Immediately cut into bars; let cool completely then cut again.

2/3 cup firm packed brown sugar
2/3 cup crunchy peanut butter

1/2 cup chopped walnuts [or any nuts you like]
1/2 cup dried fruit (any you like - raisins, cranberries, dates, figs)
1/4 cup seeds (any you like - sunflower, pumpkin, flax, sesame)
1 tsp cinnamon
1 tsp kosher salt
1.25 cups skim milk
1 egg
1 tsp vanilla

Steps:

  • Preheat oven to 350* Mix dry ingredients. Mix wet ingredients. Pour wet into dry. Stir to combine. Pour into a 9×9 baking dish either coated in cooking spray or lined with parchment. Bake for 40 minutes. Cut into 9 squares. Makes 9 servings . Each bar is appx. 170 calories, 3 grams fiber and 5 grams protein. [Cut into 12 squares reduces calories to about 125 calories per square] While delicious, the only sweetness in these comes from the dried fruit. Add in 1/4 - 1/2 cup brown sugar if you like.
