Here's what you need: old fashioned rolled oat, flour, baking powder, cinnamon, nutmeg, unsalted butter, sugar, brown sugar, vanilla extract, eggs, raisin, powdered sugar, milk, warm water

Number Of Ingredients 14

2 cups old fashioned rolled oat, pulsed in food processor x10
2 cups flour
½ teaspoon baking powder
2 teaspoons cinnamon
½ teaspoon nutmeg
1 cup unsalted butter, room temperature and softened
½ cup sugar
1 cup brown sugar
1 teaspoon vanilla extract
2 eggs
½ cup raisin
2 cups powdered sugar
1 ½ tablespoons milk
1 tablespoon warm water

Steps:

  • Preheat oven to 350˚F (180˚C)
  • Pulse oats in a food processor or blender 10 times.
  • Add pulsed oats, flour, baking powder, cinnamon, and nutmeg into a bowl.
  • In a large bowl, beat softened butter with a hand mixer until creamy, add brown and white sugars, then beat until fluffy. Next beat in vanilla and eggs 1 at a time.
  • Pour the dry ingredients into the wet ingredients ⅓ at a time until it's gone and dough forms.
  • Fold in raisins or chocolate chunks.
  • Take 1 tablespoon of dough and roll it into a ball. Then flatten into a cookie shape and put on a well-greased parchment-lined baking sheet.
  • Bake 12-15 minutes. (Top rack = no brown bottoms, bottom rack = browned bottoms and a little more crispy).
  • Cool completely and make the icing in the meantime. Combine powdered sugar, milk, and warm water in a shallow bowl. Once the cookies have cooled, dip into the icing or dab icing on with a pastry brush. Dry for 10 minutes or until icing has hardened.

I just finished making these with my little girl and we thought they were great! She thought it was pretty neat that there were marshmallows in the cookies with the chocolate chips!! I was removing some from the cookie sheet and some of the marshmallow on some of them was coming away stringy and she said "I don't want that one Mommy, it's all full of hair! LOL!!!!!! They do melt and ooze a bit on the cookie sheet, so I scraped any bits off between batches. They came out nice and soft the way we like them, but this is just out of the oven, as they are still cooling as we speak! Hopefully they stay that way! I baked for the minimum 11 mins stated in the recipe and I also probably made them a little bigger than called for, because I only got 28 cookies. The yield was supposed to be about 6 dozen!! Recipe from TOH website. Grab a nice tall, cold glass of milk and enjoy, we sure did!!!!

1/2 cup shortening
1 cup packed brown sugar
1/2 cup sugar
2 eggs
1 1/2 teaspoons vanilla
2 1/4 cups flour

1 cup chocolate chips
1 cup mini marshmallows

Steps:

  • In a large mixing bowl, cream the butter, shortening and sugars.
  • Add eggs, one at a time, beating after each addition.
  • Beat in the vanilla.
  • Combine flour, soda and salt, gradually add to creamed mixture.
  • Stir in the oats, chocolate chips and mini marshmallows.
  • Drop by heaping teaspoonfuls, 2 inhes apart onto GREASED cookie sheets.
  • Bake at 350 for 11-13 minutes or until golden.
  • Cool 1-2 minutes before removing to wire racks to cool completely.

1 pouch Betty Crocker™ oatmeal cookie mix
Butter, water and egg called for on cookie mix pouch
12 large marshmallows
24 milk chocolate candy drops or pieces

Steps:

  • Heat oven to 375°F. Make cookie dough as directed on pouch, dropping dough onto cookie sheet by 24 rounded tablespoonfuls.
  • Bake 11 to 13 minutes or until cookies are light golden brown. Do not overbake.
  • Meanwhile, cut marshmallows in half with kitchen scissors. Unwrap candies.
  • Immediately after removing cookies from oven, place marshmallow half on center of each cookie, sticky side down. Set oven control to broil. Place back in oven with tops 4 to 6 inches from heat until marshmallows are light brown. This will not take long.
  • Immediately place chocolate candy on center of each marshmallow. Serve warm.

Steps:
