Sugar Free Oatmeal Raisin Spice Cookies Mix in a Jar image

My personal version of a recipe I found on www.budget101.com. I wanted to do more than just have a good sugar free cookie since the starchy carbs in the flour will also jack blood sugar. This version comes out fantastic! They are more cake like than a standard crisp cookie and stay wonderfully moist in a cookie jar. Not that they will actually last long enough to worry.

1 1/2 cups rolled oats
1 cup Splenda sugar substitute
3/4 cup flour
3/4 cup almond meal
1/2 teaspoon salt
2 teaspoons baking powder
1 cup raisins
1/2 teaspoon cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg
2/3 cup butter, melted
4 egg whites
1/2 cup light vanilla yogurt (1 single serving 4oz cup)
1 teaspoon maple flavoring

Steps:

  • Carefully measure each ingredient into layers in a 1 quart jar. Re-used glass ice tea jars work great as well. Judicious us of a slim rolled paper cone does wonders to keep the layers clean. If mix is to be shipped ingredients may be measured into a clear plastic disposable pastry bag or decorative food safe cello bag to reduce shipping weight and then carefully tied closed.
  • Be sure to attach instruction card or label with the following directions: Combine above listed ingredients (from the list of "additionally to make cookies from mix") with 1 package of "Sugar Free Oatmeal Cookie Mix". Drop by cookie scoopfuls 1" - 2" apart onto parchment lined baking sheets. Bake 10 - 15 minutes at 350oF. Cookies do not spread much so will still be rather round and cake like. Allow to cool 5 minutes on baking sheets before carefully removing to cooling racks to completely cool. Store in a cool dry place.

1 cup all-purpose flour
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 teaspoon baking soda
½ teaspoon salt
¾ cup raisins
2 cups rolled oats
¾ cup packed brown sugar
½ cup white sugar

Steps:

  • Mix together flour, ground cinnamon, ground nutmeg, baking soda, and salt. Set aside.
  • Layer ingredients in the following order into a 1 quart, wide mouth canning jar: Flour mixture, raisins, rolled oats, brown sugar, and white sugar. It will be a tight fit, make sure you firmly pack down each layer before adding the next layer.
  • Attach a tag with the following instructions: Oatmeal Raisin Spice Cookies 1. Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. 2. Empty jar of cookie mix into large mixing bowl. Use your hands to thoroughly mix. 3. Mix in 3/4 cup butter or margarine, softened. Stir in one slightly beaten egg and 1 teaspoon of vanilla. Mix until completely blended. You will need to finish mixing with your hands. Shape into balls the size of walnuts. Place on a parchment lined cookie sheets 2 inches apart. 4. Bake for 11 to 13 minutes in preheated oven, or until edges are lightly browned. Cool 5 minutes on cookie sheet. Transfer cookies to wire racks to finish cooling.

  • 1. Mix together flour, ground cinnamon, ground nutmeg, baking soda and salt. Set aside. Layer ingredients in order given in a 1 quart wide mouth canning jar. This award winning Oatmeal Raisin Cookie Recipe is made from ingredients stored in a mason jar in food storage and has a 3 year shelf life. The recipe not only won the blue ribbon at the state fair but also won the C & H Sugar award.

1 1/2 c regular rolled oatmeal
1 c flour
1/2 c sugar
1/2 c brown sugar, firmly packed
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 Tbsp dry powdered whole egg
1 tsp powdered vanillla flavoring
1/2 c raisins
1/2 c shortening
1/4 c water

Steps:

  • 1. Prepare the Recipe in a Jar: In the bottom of a wide mouth quart canning jar place oatmeal and flour
  • 2. In a bowl mix sugars, powdered egg, baking soda, baking powder, salt and powdered vanilla. Stir ingredients and place in a small sandwich baggie (use a baggie without a ziplock closure). Twist the baggie tight and place baggie of ingredients into the jar.
  • 3. Place raisins in a small sandwich baggie. Twist the baggie tight and place baggie of ingredients into the jar.
  • 4. Clean the glass rim of the jar. Seal the jar with a FoodSaver or use an Oxygen Absorber to remove the oxygen from the jar. Place the metal lid on the jar and the metal band.   • 5. To make the cookies: Open the jar and remove baggies. Discard the oxygen absorber. Place the baggie of the sugar mixture in a mixing bowl and add 1/2 cup shortening and 1/4 cup water. Mix until creamy. Add the flour/oatmeal ingredients and the baggie of raisins and mix. Note: If the raisins start to get a little bit hard soak them in 1/2 cup of hot water for 5-10 minutes. Drain the water off the raisins before adding them to the cookie
  • 6. Preheat oven 350 Degrees. Drop cookie dough from spoon on cookie sheet. Bake 11-13 minutes until lightly brown on the bottom of the cookie.
