Here's an oatmeal bars recipe that's beyond easy! These healthy breakfast bars are irresistibly tasty and great for busy mornings and snacks.

1 cup creamy peanut butter (no sugar added, or sunflower butter for nut free)
1/2 cup honey (or agave syrup* for vegan)
4 cups Old Fashioned rolled oats
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon

Steps:

  • Mix together all the ingredients in a bowl until it forms a sticky dough. If the mixture is dry and not sticky, add a bit more honey and/or peanut butter; different peanut butter brands perform differently here.
  • Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
  • Freeze the bars for 15 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 16 squares or 32 rectangles. Store refrigerated for up to 2 weeks. You can eat right away, or refrigerate for about 1 hour for a more solid texture.

3/4 cup old-fashioned oats* (AKA large flake oats (not quick oats or instant oats))
1/2 cup granulated sugar
1/4 cup packed brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter (melted)
1 large egg yolk (discard the egg white)
1 tablespoon packed brown sugar
2 cup blueberries* (fresh or frozen - see baking time adjustment if using frozen)
1 tablespoons lemon juice (freshly squeezed)
1/4 cup granulated sugar
2 teaspoons cornstarch

Steps:

  • Preheat the oven to 350F degrees. Line an 8x8 baking pan with parchment paper leaving an overhang around the edges. Or line with aluminium foil leaving an overhang around the edges and grease with non-stick cooking spray.

1 cup butter, softened
1-1/2 cups packed brown sugar
2 eggs
1/3 cup molasses
1 teaspoon vanilla extract
4 cups quick-cooking oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup chopped walnuts
1 cup semisweet chocolate chips
1 cup butterscotch chips
1 package (5 ounces) dried cranberries

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in molasses and vanilla. Combine the oats, flour, baking powder, salt and cinnamon; gradually add to creamed mixture and mix well. Stir in walnuts, chips and cranberries., Drop by tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 10-12 minutes or until edges are lightly browned. Remove to wire racks to cool.

1 tablespoon white sugar

1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square pan.

  • combine all ingredients, except preserves.
  • reserve 1 cup mixture.
  • press remaining mixture into a greased 9x13 inch pan.
  • spread with preserves to 1/2 inch of pan.

1 cup all purpose flour
1 cup old fashioned oats
1/4 teaspoon salt
3/4 teaspoon baking soda
10 tablespoons unsalted butter (melted)
1/2 cup light brown sugar (packed (it should be soft and fresh))
1 1/2 teaspoons pure vanilla extract
generous 3/4 cup jam or preserves

Steps:

  • Preheat oven to 350°F. Line an 8x8 pan with foil or parchment paper (leaving overhang on two sides for easy removal). Spray with nonstick spray.
  • In a medium bowl, combine, flour, oats, salt and baking soda.
  • In a large bowl, whisk butter, brown sugar and vanilla until well combined (this will take at least one full minute). Add dry ingredients and stir with a rubber spatula or wooden spoon until combined.
  • Pull out about 3/4 cup (a little less than half) of the cookie dough and set that portion aside (it will be the topping). Dump the remaining dough into the prepared pan and press it down into a flat even layer. Bake for 10 minutes.
  • Remove from the oven and carefully spread the jam on top of the cookie base. Take the reserved cookie dough and crumble it over the top of the jam layer. Return to the oven and bake for 14-16 more minutes, until the topping is light golden brown. Place the pan on a wire rack to cool. These bars are soft when they are warm (they likely won't hold together). To firm them up they can be stored at cool temp or refrigerated.

1 egg

1 1/2 cups Gold Medal™ all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups semisweet chocolate chips (9 oz)
1 can (14 oz) sweetened condensed milk (not evaporated)
5 bars (2.07 oz each) Snickers™ candy bars, chopped (about 2 cups)

Steps:

  • Heat oven to 350°F. In large bowl, beat brown sugar and butter with electric mixer on medium speed until blended. Beat in vanilla and egg. On low speed, beat in oats, flour, baking soda and salt until well blended. Reserve 3/4 cup mixture for topping. Press remaining mixture in bottom of ungreased 13x9-inch pan.
  • In 2-quart saucepan, heat chocolate chips and condensed milk over medium heat about 5 minutes, stirring frequently, until chips are melted and mixture is smooth. Pour over crust.
  • Sprinkle chopped candy bars evenly over chocolate mixture. Crumble reserved oat mixture over candy.
  • Bake 32 to 37 minutes or until golden brown and set. Cool on cooling rack at least 2 hours. For bars, cut into 6 rows by 6 rows.

  • In a bowl, cream butter and brown sugar until light and fluffy. Add eggs and vanilla; mix well. Combine oats, flour, baking soda and salt; add to the creamed mixture. Spread two-thirds into an ungreased 15x10x1-in. baking pan; set aside. , For filling, heat the milk, chocolate chips, butter and salt in a microwave-safe bowl until chips are melted.
