Quick Coffee Cake With Cinnamon-Oat Streusel image

Our fabulous quick coffee cake takes about 10 minutes to make (bakes in 35) and has a streusel made with oatmeal, brown sugar, and butter.

Number Of Ingredients 14

1/2 cup brown sugar
1 teaspoon cinnamon
2 ounces/1/4 cup butter (softened)
1 cup oatmeal (quick-cooking)
2 large eggs (room-temperature)
1 cup milk
1 cup of sugar
1/4 cup oil (vegetable)
1 teaspoon vanilla
2 cups flour (all-purpose)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/8 teaspoon nutmeg

Steps:

  • In a medium bowl, combine the brown sugar, cinnamon, and butter and mix together with a spoon until blended. Stir in the oatmeal until the mixture is crumbly.
  • Set this topping aside while preparing the batter.
  • Heat the oven to 375 F. Grease a 13 x 9-inch pan with unsalted butter, or solid shortening, or spray with a nonstick cooking spray containing flour, and set aside.
  • Crack the eggs into a large bowl and beat with a fork or wire whisk until combined. Add the milk and mix well until smooth. Add the sugar, oil, and vanilla and mix until blended.
  • Sift together the flour, baking powder, baking soda, salt, and nutmeg. Add the dry ingredients to the egg mixture and mix with a spoon for 20 to 30 strokes just until combined and all the dry ingredients are moistened. The batter will be lumpy but that's OK. That's what makes the cake more tender.
  • Pour the batter into the prepared baking pan. Sprinkle the reserved oatmeal streusel mixture evenly over the batter.
  • Bake the coffee cake for 25 to 35 minutes until it is puffed and golden brown, and a toothpick inserted in the center comes out clean. Let cool for about 15 minutes, and cut into squares to serve.

This was originally Maple Oatmeal Bread tweeked with some hot brewed coffee. I got the idea from TOH. It turns a pretty golden brown.

1 cup hot brewed coffee
3/4 cup boiling water
1/2 cup maple syrup
1/3 cup vegetable oil
1 cup old fashioned oats
1/2 cup sugar
2 teaspoons salt
2 (1/4 ounce) packages active dry yeast
1 1/2 cups warm water
2 eggs, lightly beaten
5 -6 cups bread flour

Steps:

  • In a bowl, combine the coffee, water, syrup, vegetable oil, oats, sugar and salt. Let sit for a couple of minutes until it cools slightly.
  • In a large mixing bowl, dissolve yeast in warm water. Add the oat mixture, eggs and 2 cups of flour; mix well.
  • Stir in enough remaining flour to form a soft dough.
  • Turn onto a floured surface and knead until smooth and elastic about 6-8 minutes.
  • Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled.
  • Punch dough down. Trun onto a lightly floured surface, divide into two.
  • Shape into loaves. Place in two greased 9 X 5 X 3" loaf pans.
  • Cover and let rise until doubled.
  • Bake at 350F for 40-45 minutes or until golden.
  • Remove from pans to wire racks to cool.

Nova Scotia oatmeal molasses bread is a rich and delicious loaf of brown bread, perfect for sandwiches, toast and to mop up soup. Very easy to make, with only a few ingredients, but will fill your home with a mouth-watering aroma.

2 Cup Boiling water
1 Cup Rolled oats
1/2 Cup Molasses
1/2 tbsp Salt
1 tbsp Butter (Try for unsalted)
2 1/4 tsp Active dry yeast
1/2 Cup Warm water
5 Cup Plain or Bread flour

Steps:

  • In a heatproof bowl, add the boiling water to the rolled oats and let stand 1 hour.
  • Add molasses, salt, butter, and with warm water and mix.
  • Lastly add flour with yeast and mix thoroughly to distribute the yeast evenly.
  • Let rise all day or overnight... until doubled in size.
  • Beat thoroughly and put into two greased bread pans and then let rise again for 30min.
  • Bake in a hot oven (425°) for 10 minutes then reduce heat to 350° and bake 35 minutes more.
  • Resist the urge to cut into the loaf and drench in butter.

1 cup warm water (70° to 80°)
1/2 cup molasses
1 tablespoon canola oil
1 teaspoon salt
3 cups bread flour
1 cup quick-cooking oats
1 package (1/4 ounce) active dry yeast

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available., Check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed. Bake according to manufacturer's directions.
