2 pounds ripe Bosc pears (4 pears)
2 pounds firm Macoun apples (6 apples)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.
  • For the topping: Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
  • Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

1 cup brown sugar
1 cup rolled oats
1 cup all-purpose flour
½ cup butter, melted
3 cups apples - peeled, cored and chopped
½ cup white sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square pan.
  • In a large bowl, combine brown sugar, oats, flour and butter. Mix until crumbly. Place half of crumb mixture in pan. Spread the apples evenly over crumb mixture. Sprinkle with sugar and cinnamon and top with remaining crumb mixture.
  • Bake in the preheated oven for 40 to 45 minutes, or until golden brown.

3/4 cup Gold Medal™ all-purpose flour
3/4 cup old-fashioned oats
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup cold butter, cut in pieces
6 cups chopped (3/4-inch pieces) peeled tart apples (6 medium)
1/2 cup granulated sugar
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon ground cinnamon
1 teaspoon lemon juice

Steps:

  • Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In medium bowl, mix 3/4 cup flour, the oats, brown sugar and 1/2 teaspoon cinnamon until blended. Cut in cold butter, using fork or pastry blender, until mixture is crumbly. (Do not overmix.) Set aside.
  • In large bowl, mix Filling ingredients until well coated. Spread evenly in baking dish. Sprinkle streusel over top.
  • Bake 30 to 35 minutes or until topping is golden brown and juices are bubbling along edges.
  • Cool at least 20 minutes before serving.

I've been making this (or versions of it) since I was 12 years old. This is an evolved version of the "Quaker Oatmeal Apple Crisp". It is easy to make and to play with, try adding some chopped walnuts to the crisp or use a completely different fruit for the filling, such as peaches. It's great warmed up in the microwave but it's equally good straight out of the fridge. Wonderful comfort food for winter or exam time. Very easily converted into vegan by substituting margarine for butter.

2 cups cooking apples, peeled and sliced (about 2 large)
2 cups pears, peeled and sliced (about 3 large)
2 tablespoons brown sugar
1 1/2 teaspoons ground cinnamon

1 -2 tablespoon lemon juice
3/4 cup water
1 cup oats
1/3 cup all-purpose flour
3/4 cup brown sugar
1/4 teaspoon salt

Steps:

  • While peeling apples and pears, keep them in the lemon juice so they don't turn brown.
  • Place apples in a greased shallow 9” square baking dish.
  • Sprinkle (2 tbsp) brown sugar, ground cinnamon, ground nutmeg and water.
  • Combine remaining dry ingredients in a separate bowl; add melted butter, mixing until crumbly.
  • Sprinkle crumb mixture on top of the apples.
  • Bake at 375°F for 30-40 minutes or until apples are tender.
  • Serve with vanilla ice cream or yogurt, great by itself too.

4 to 5 ripe Bartlett or Anjou pears
1/4 cup cranberries, fresh or dried
2 tablespoons sugar
1/3 cup all-purpose flour
1/3 cup rolled oats, uncooked
1/4 cup dark brown sugar
1 tablespoon granulated sugar
1/4 teaspoon cinnamon
Pinch nutmeg and salt
1/2 cup or 1 stick unsalted butter, melted
Heavy whipping cream or ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel, core, and thickly slice the pears. Toss them with the 2 tablespoons sugar and the cranberries and turn them into a deep, buttered 2-quart baking dish. The fruit should be at least 2 1/2-inches deep in the pan; add more fruit, if necessary.
  • For the topping, in a bowl, stir together the flour, oats, sugars, cinnamon, nutmeg, and salt. Drizzle in the melted butter tossing the ingredients with a fork to blend. Be careful not to over mix because you want a loose crumbly mixture, not a bound-together ball of topping. Sprinkle the topping over the pears.
  • Bake for 30 minutes, until pears are tender and topping is browned. Serve warm with heavy cream or ice cream.

Steps:

  • Peel and slice apples put in 13x9 baking dish add flour, sugar and cinnamon and stir together.
  • Mix all topping ingredients and spread over apples. Bake at 300 for 45 minutes!
  • Great over ice cream!
