1 c butter, softened
1 1/4 c dark brown sugar, packed
3 large eggs
2 tsp vanilla extract
2 c flour
1 tsp salt
1 tsp baking soda
2 tsp cinnamon
3/4 tsp nutmeg
1/2 tsp cloves or allspice
2 1/4 c quick cooking oatmeal
1 1/2 large granny smith apple, peeled and diced small (eat other 1/2 or use 2 medium)
1 bag(s) cinnamon chips, 10 oz.
1 1/2 c chopped walnuts
glaze or white chocolate for garnish

Steps:

  • 1. Heat oven to 350 degrees. Prepare cookie sheets with parchment paper.
  • 2. In mixer bowl cream butter and brown sugar; about 2 minutes.
  • 3. Beat in egg and vanilla.
  • 4. Sift flour, cinnamon, nutmeg, cloves, baking soda, and salt.
  • 5. Mix flour mixture into creamed mixture just until blended.
  • 6. Add oatmeal, apples, cinnamon chips and walnuts till blended.
  • 7. Scoop dough onto cookie sheets 2 inches apart. Bake for 10-12 minutes until edges are light brown.
  • 8. Let cool a few minutes and remove to cooling rack to cool completely.
  • 9. Drizzle with melted white chocolate or with a powdered sugar glaze. I used melted white chocolate and it was delicious... Enjoy!

1 cup butter, softened
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
3 cups oats
1 cup cinnamon chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat butter and brown sugar together in a bowl using an electric mixer until smooth and creamy. Beat eggs and vanilla extract into creamed butter until incorporated. Mix flour, baking soda, salt, and cinnamon into creamed butter mixture until batter is just mixed; fold in oats and cinnamon chips. Drop batter, 1 to 2 tablespoons per cookie, onto a baking sheet.
  • Bake in the preheated oven until edges are lightly browned, 10 to 15 minutes.

1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
½ teaspoon salt
½ teaspoon ground nutmeg
½ cup shortening
¾ cup white sugar
2 eggs
1 cup rolled oats
1 cup diced apple without peel
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats and apples. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Let cool on wire racks.

I got this recipe from the back of a bag of Hershey's Cinnamon Chips. My father loves these cookies and is always asking me to "make a batch". They are chewey and sweet and delicious and you won't believe how fast they go.

1 cup butter or 1 cup margarine, softened
1 cup packed light brown sugar
1/3 cup granulated sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
2 1/2 cups quick-cooking oats
1 (10 ounce) package hershey's cinnamon bark
3/4 cup raisins

Steps:

  • Preheat oven to 350°.
  • In large mixing bowl cream butter, granulated sugar and brown sugar.
  • Beat in eggs and vanilla.
  • Add flour and baking soda, mixing well.
  • Mix in oatmeal, cinnamon chips and raisins (batter will be heavy).
  • Drop by heaping teaspoonful onto ungreased cookie sheet and bake for 10-12 minutes or until they look golden around edges.
  • Let cool for about 1 minute and then remove to wire rack to finish cooling.

  • Lightly grease cookie sheet.
  • Beat butter, brown sugar, egg, apple juice and vanilla in large bowl until creamy.
  • Stir together flour, baking powder, baking soda and salt.
  • Add to butter mixture; beat until blended.
  • Stir in oats.
  • Add cinnamon chips, apple and raisins; stir until blended.
  • Drop by teaspoons onto prepared cookie sheet.
  • Bake 10 minutes or until edges are lightly browned.
