Yield Makes 6 servings

Number Of Ingredients 9

1 1/4 cups quick-cooking oats
2/3 cup reduced-fat (2%) milk
2/3 cup plain low-fat yogurt
1 teaspoon vanilla extract
2/3 cup fresh orange juice
1/4 cup honey
1 1/2 cups grated peeled red-skinned apples (about 2 medium)
1 cup chopped raw almonds
3 cups chopped fresh fruit (such as apples, pears, and peeled oranges)

Steps:

  • Mix first 4 ingredients in large bowl. Let stand 5 minutes to soften oats. Whisk orange juice and honey in medium bowl. Stir in grated apples and almonds, then 3 cups chopped fruit. Stir fruit mixture into oat mixture. DO AHEAD: Can be made 8 hours ahead. Cover; chill. Spoon into bowls.

Here's a healthy cereal that most children love. You make it the night before and it's all ready in the AM with just a couple of additions

1 cup uncooked rolled oats
1/2 cup uncooked rolled barley (, if you can't find rolled barley add another 1/2 cup rolled oats)
1 cup skim milk or 1 cup soymilk
1 tablespoon low-sugar apricot preserves
1/2 teaspoon vanilla extract
1 1/2 tablespoons honey
2 tablespoons raisins
2 tablespoons dried peaches, , chopped
1 tablespoon chopped raw cashews (, or other nuts)

Steps:

  • In a bowl combine the oats, barley, milk, preserves, vanilla& honey.
  • Cover bowl& refrigerate over night.
  • Before serving put in raisins, peaches& nuts.
  • Top with additional milk or yogurt.
