These healthy oat bran muffins are made with a mix of oat bran cereal and whole wheat flour. They're moist and delicious and perfect for a quick on-the-go breakfast.

3/4 cup whole wheat pastry flour (see note)
3/4 cup oat bran cereal
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon sea salt
2 ripe bananas (mashed)
1 Tablespoon flax egg (or 1 egg)
2 Tablespoons melted coconut oil
1/4 cup pure maple syrup or honey
1 teaspoon vanilla extract
1/2 cup grated carrot
1/4 cup raisins
1/4 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 375°F.
  • Line muffin tin with paper or silicone liners or coat well with cooking spray.
  • Make flaxseed egg by whisking flaxseed with 3 Tablespoons in a small bowl. Set aside.
  • Combine flour, oat bran, cinnamon, baking soda and salt in a large bowl.
  • Mash bananas in a bowl and add flaxseed egg, coconut oil, maple syrup, vanilla, carrots and raisins.
  • Pour wet ingredients into the bowl with the dry ingredients and mix until just combined. Be careful not to over mix.
  • Fill each muffin cup 3/4 of the way full, sprinkle chopped walnuts on top of each muffin (if using) and bake for 20-25 minutes or until a toothpick comes out clean when inserted into the middle of a muffin.
  • Remove from oven and let cool completely before enjoying.

This is not OATMEAL, but oat BRAN muffins. I have made these for about five years now, and I really love them. They are great made with cinnamon or cranberry applesauce, as well as plain applesauce. My daughter loves them and I hope you will enjoy them, too!

½ cup dark brown sugar
1 ½ cups oat bran
1 ½ cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon salt
2 eggs
1 cup chilled applesauce
4 tablespoons vegetable oil

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
  • Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
  • Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
  • VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.

I recently tried PaulaG's Pumpkin Fruit and Nut Muffins (#116356) and loved the wonderful moistness given to these by the apricots and raisins. So much so, I went looking through my cookbooks for recipes that might capture that same delightful quality. The original comes from "The 250 Best Muffin Recipes" but I've already started tweaking it a bit here. This has been updated since Roosie's review.

2 cups oat bran
1/4 cup oatmeal, regular not instant
1/2 cup mixed dried fruit (if you can't find pre-mixed dried fruit, make your own combination or use raisins)
1 teaspoon cinnamon
1/8 teaspoon nutmeg
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 egg whites
1 cup unsweetened applesauce
1/3 cup brown sugar (use a half cup if you like your muffins sweeter)
1/2 cup low-fat buttermilk (or use 1/3 cup non-fat yogurt plus skim milk to level it off to 1/2 cup)
2 tablespoons canola oil
cooking spray

Steps:

  • Preheat oven to 350 degrees (180c).
  • In one bowl combine all of the dry ingredients - oat bran, oatmeal, fruit, cinnamon, nutmeg, baking powder, baking soda and salt.
  • In a second bowl, lightly beat the egg whites by hand. Whisk in the yogurt, oil, applesauce and brown sugar. Fold the wet ingredients into the dry ingredients until just mix. Do not over beat as it will result in a tough lumpy muffin.
  • Spoon batter into lightly sprayed muffin tin. (Use paper liners if you prefer.) Bake 33 to 38 minutes, toothpick should be clean.

2 eggs
1 cup applesauce (unsweetened)
3/4 cup maple syrup or honey
2 tbsp unsulphured molasses
1/4 cup avocado or olive oil
1 tsp pure vanilla extract
1 1/2 cups oat bran
1 1/4 cups whole wheat or spelt flour
1/4 cup flaxseed
1 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup raisins
1/3 cup Medjool dates (pitted & chopped)
1/3 cup walnuts (coarsely chopped)
Cooking spray

Steps:

  • Preheat oven to 425 degrees F, line 12 muffin tin with unbleached parchment paper muffin liners and spray with cooking spray. Set aside.
  • In a large mixing bowl, add eggs, applesauce, maple syrup, molasses, oil and vanilla extract; whisk well to combine. Set aside.
  • In another medium mixing bowl, add oat bran, flour, flaxseed, cinnamon, baking powder, baking soda and salt. Stir with spatula to mix until no lumps, transfer to a bowl with wet ingredients and stir gently just enough to combine. Do not over mix and let batter sit for a few minutes to thicken, then stir a few more times.
  • Add raisins, dates and walnuts. Stir a few times just enough to incorporate.
  • Using an ice cream scoop, divide batter evenly between 12 openings of a muffin tin and bake for 10 minutes in preheated to 425 degrees F oven. Reduce heat to 375 degrees F (no need to wait for oven to cool off) and bake for another 10 minutes or until a toothpick inserted in the centre comes out clean.
  • Remove muffins from the oven, let muffins cool for about 5 minutes and transfer to a cooling rack to cool off a bit more.

1/2 cup uncooked oat bran
1/2 cup raisins

1 cup fat-free plain yogurt
1/4 cup egg substitute or 1 large egg
1 tablespoon canola or corn oil

Steps:

  • Preheat the oven to 425°F. Lightly spray a 12-cup muffin pan with cooking spray or line with paper bake cups. Set aside.
  • In a large bowl, stir together the flours, oat bran, raisins, sugar, baking powder, and baking soda.
  • In a small bowl, whisk together the yogurt, egg substitute, and oil. Pour into the flour mixture, stirring until the batter is just moistened but no flour is visible. Don't overmix; the batter should be slightly lumpy. Pour about 1/4 cup batter into each muffin cup.

  • Let the muffins cool completely before removing the paper bake cups. This will keep the paper from sticking and pulling off part of the muffin.

I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!

2 cups oat bran hot cereal, uncooked (I use Quaker)
1/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup honey (I haven't tried molasses yet) or 1/4 cup molasses (I haven't tried molasses yet)
2 tablespoons vegetable oil

Steps:

  • *Blueberry or banana variations are at bottom.
  • Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
  • Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
  • Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.
  • *NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.
  • These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.

BLUEBERRY NUT OAT BRAN MUFFINS

This is a delicious and lighter version of a type of oat bran muffin. You could vary the fruit - blueberries, strawberries, canned peaches, etc. They are incredibly delicious served with fresh strawberries. Yum!

½ cup packed brown sugar

½ teaspoon salt
1 ⅛ cups applesauce
½ cup egg substitute
2 tablespoons canola oil
1 teaspoon vanilla extract
1 ½ cups blueberries
¼ cup chopped pecans
½ cup low fat granola

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a 12 cup muffin pan with paper muffin liners, and spray liners with cooking spray.
  • In a large bowl, mix the oat bran, flour, brown sugar, baking soda, baking powder, cinnamon, and salt. In a separate bowl, blend the applesauce, egg substitute, canola oil, and vanilla extract. Thoroughly mix the applesauce mixture into the flour mixture. Fold in the blueberries and pecans. Spoon the batter into the prepared muffin cups. Sprinkle batter with granola, and press granola lightly to make it stick.
  • Bake 18 minutes in the preheated oven, or until a toothpick inserted into a muffin comes out clean. Cool on a wire rack.
