1 large potato
140 ml warm water, from cooking potatoes
280 ml milk
1 1/2 teaspoons dried yeast
1 teaspoon sugar
1 1/2 tablespoons oil
700 g flour
1 tablespoon salt
150 g rolled oats

Steps:

  • Cook potato in enough water to cover.
  • Drain, retaining the water.
  • Measure 140 ml of potato water into a small bowl and set aside to cool to lukewarm. Don't discard the rest of the potato water - to this add the oats to soften.
  • Mash the potato well with a little of the milk.
  • When the potato water in the small bowl has cooled to lukewarm, add the yeast. Set this aside until it has a good frothy "head".
  • Mix remainder of milk and oil together.
  • Sift flour and salt into large bowl and make a well in centre.
  • Add the milk and oil, the mashed potato, frothy yeast, and the softened oats.
  • Mix well and knead until smooth and elastic - more flour may be needed but try to keep the dough as soft as possible.
  • Set aside to rise until double in size.
  • Knock back and knead very lightly.
  • Allow to rise a further 30 minutes and then divide into three and form into cob loaves.
  • Glaze with beaten egg and sprinkle with your choice of topping. I use either sesame seeds, poppy seeds or oats.
  • Bake 220 celsius for about 40 minutes.

This healthy oat bread is made with just 3 easy ingredients. It doesn't contain any yeast, wheat flour, oil, sugar, or eggs.

3 cups (276 grams) oat flour
2 tbsp (14 grams) baking powder (aluminum-free)
12 oz (1 ½ cups) plain whole milk yogurt

Steps:

  • Preheat oven to 350°F. Grease and line an 8 x 4 inch baking loaf pan with parchment paper. If you don't have this size baking pan see notes for other options.
  • In a large mixing bowl add oat flour and baking powder. Whisk until baking powder is evenly incorporated into the flour. If desired, you can also mix in 1/2 tsp salt. This will not affect the bread texture but will add a little more flavor to the bread. If you are trying to make a sweet bread, don't add the salt.
  • Add in the yogurt. When adding in the yogurt, make sure to not drain out any of the liquid from the yogurt that may be at the top. You want to use that liquid in the bread. Use a spatula to slowly add the yogurt into the batter. Keep folding in the yogurt until it is evenly and completely incorporated. Your dough should be very thick and very sticky.
  • Scrape your dough into the prepared baking pan. Use the spatula to help evenly spread the dough across the pan. Dampen your fingers with a tiny bit of water and then lightly press on the surface of the bread to smooth out the dough. If desired, sprinkle about 1 tbsp of rolled oats across surface and gently press the oats slightly into the surface of the bread so that they stick when baking.
  • Bake bread for about 40-45 minutes. The bread should be lightly browned on top and when you press on the surface it should bounce back and not sink in. Let bread cool before cutting and serving. Bread can be toasted or eaten as is with your favorite spread.

1 medium potato, peeled and diced
1-1/2 cups water
2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1 cup warm 2% milk (110° to 115°)
2 tablespoons butter, softened
2 tablespoons sugar
2 teaspoons salt
6-1/2 to 7-1/2 cups all-purpose flour
Additional all-purpose flour

Steps:

  • Place potato and 1-1/2 cups water in a small saucepan. Bring to a boil. Reduce heat; cover and simmer until very tender. Drain, reserving 1/2 cup liquid. Mash potatoes (without added milk or butter); set aside. , In a large bowl, dissolve yeast in warm water. Add the milk, butter, sugar, salt, 4 cups flour, potatoes and reserved cooking liquid; beat until smooth. Stir in enough remaining flour to form a stiff dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into loaves. Place in two greased 9x5-in. loaf pans. This flavorful bread is a slightly modified Gold Medal recipe. Preparation time is approximate. I like the bit of a "bite" that the lemon pepper adds, but feel free to substitute any herbs you like. Double amounts if using fresh herbs. I usually bake this as rolls or baguettes for sandwiches.

1 1/4 cups proofed sourdough starter
1 cup milk
4 tablespoons margarine
1/4 cup sugar
1 1/2 teaspoons salt
3 1/2 cups bread flour
1/3 cup oatmeal
1/4 cup potato flakes

Steps:

  • Place ingredients in bread machine pan in the order that they are listed.
  • Select dough cycle and press start.
  • Turn dough out on lightly floured surface and shape into desired loaf.
  • Place in greased loaf pan and let rise, covered, until 1 to 2 inches above edges of pan.
  • Be patient, this can take several hours, depending upon how active your sourdough culture is.
  • Uncover and bake at 350 degrees F for about 30 minutes, or until done.
  • Immediately turn out of pan and cool on wire rack.
  • Brush top crust with butter for a soft crust, if desired.
  • NOTE: You can use part whole wheat flour (up to 1 1/2 cups) in place of all white flour.
  • I recently made this and used only 1/2 cup of whole wheat flour.
  • It made a very nice, light wheat bread.

1-1/2 cups boiling water
1 tablespoon butter
2 teaspoons salt
1/2 cup sugar
1 cup old-fashioned oats
2 packages (1/4 ounce each) active dry yeast
3/4 cup warm water (110° to 115°)
1/4 cup molasses
1/4 cup packed brown sugar
6 to 6-1/2 cups all-purpose flour, divided

Steps:

  • In a small bowl, combine the boiling water, butter, salt and sugar. Stir in oats; cool to lukewarm. In a large bowl, dissolve yeast in warm water. Stir in the molasses, brown sugar and 1 cup flour. Beat until smooth. Stir in oat mixture and enough remaining flour to make a stiff dough. , Turn out onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape each portion into a ball. Cover and let rest for 10 minutes; Shape into loaves. Place in 2 greased 9x5-in. loaf pans.
