SAUSAGE HASHBROWN BREAKFAST CASSEROLE
Hash browns, sausage, eggs, and cheese. What's not to love? It can be made ahead of time and refrigerated until ready. Great to share at work, for an overnight guest, and Christmas morning!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch dish with cooking spray.
- Cook sausage in a large skillet, stirring occasionally, until no longer pink, 6 to 8 minutes. Drain fat and transfer to a bowl.
- Cook and stir hash browns to the same skillet until lightly browned, about 8 minutes. Place hash browns in the baking dish; top with sausage, shredded Cheddar cheese, and green chile peppers.
- Whisk eggs, milk, salt, pepper, onion powder, and garlic powder in a bowl. Pour over hash brown mixture.
- Bake uncovered in the preheated oven until bubbly and the top is golden brown, 35 to 40 minutes.

I got this recipe from a chef at a hotel where I was staying several years ago. I always make it for our family brunches. It is good for the ones who can't (or won't) eat eggs. It is a big family favorite.

Steps:
- Cook sausage and onion.
- Remove sausage and drain.
- In remaining sausage grease cook the potatoes.
- Mix together the sausage, potatoes, and 1/2 of the cheese.
- Place in a 9"x13" dish.
- Sprinkle rest of cheese on top.
- Bake at 350°until heated through.
- (This can be made ahead and refrigerated for a few days or can be frozen).

- In a large bowl, combine the hash browns, bacon, 1/2 cup cheese and salt. Spoon into a greased 13x9-in. baking dish. In another large bowl, beat eggs and milk until blended; pour over hash brown mixture. I had hashbrowns I needed to use and came up with this meal for dinner. We loved it! You can add some spices to it if you like. I added some poultry seasoning and cayenne to it. This was easy and delish!!

- 1. Bag of Hash browns Any Sausage you like sautéed with onions & a little poultry seasoning 6 Eggs 1 packet Country style White Gravy (prepared, as directed on package)
- 2. Saute sausage until browned. Add onion and cook for a few mins. Add Hash browns add poultry seasoning or any spice u like (cayenne) Mix everything well and cook until the hash browns are cooked (and somewhat browned)
- 3. In a bowl add 6 eggs and 1/2 cup of water (or milk) parsley, s+p to taste. Can also add a handful or parsley. Beat the eggs well and then a little at a time add the potato mixture stirring well so the eggs don't cook in the bowl.
- 4. Put potato mixture in a sprayed 9x13 pan. Top with prepared White Gravy (directions are on package) I added some scallions to the gravy.
- 5. Bake 375 for 45 mins and add some cheese for the top. Bake for another 15 mins or until cheese is melted and casserole is done. (Depending on how your oven temperature is)
OPEN-FACED BACON AND HASH BROWNS OMELET
All amount can be adjusted to taste. You can use cooked potatoes, finely cubed in place of the hash browns, just make certain that the potatoes are cold before browning them. This is really good!

- Cook the bacon in a large non-stick skillet until crisp; remove and reserve some of the bacon drippings.
- To the same skillet at in the thawed hash browns, cook stirring with a wooden spoon until lightly browned and tender.
- Add in the green onion, jalapeno pepper (if using) and tomatoes; cook for about 3-4 minutes.
- Chop the bacon then sprinkle over the tomatoes and green onions.
- In a bowl whisk together the eggs with cream, salt, pepper and hot sauce (if using) until well blended.
- Pour over the hash brown mixture.
- Gently lift the edges of the omelet and tilt the skillet so that the uncooked portion of eggs flows underneath.
- Cook over medium heat until the omelet begins to slightly brown underneath; remove and sprinkle with grated cheese.
- If desired you can place under the broiler for a couple of minutes to melt the cheese.
- Slide the omelet onto a platter, then slice into wedges.
BREAKFAST HASH BROWNS, BACON AND EGG BAKE
This has it all in one dish. I love this for holiday mornings or Sunday Brunch. It uses refrigerated crescents for it forms a "crust" on the top.....yummy. Be sure to remember that this dish needs to sit in refrigerator overnight.

- Spray 11x7 inch glass baking dish with nonstick cooking spray.
- Spread potatoes evenly in baking dish.
- Add cheese; stir gently to mix.
- Beat eggs thoroughly in medium bowl.
- Add milk, Mrs. Dash seasoning, salt and hot sauce; beat until well blended.
- Pour over potato-cheese mixture.
- Top with bacon.
- Cover; refrigerate at least 8 hours or overnight.
- When ready to serve, heat oven to 350.
- Uncover baking dish; bake 30 minutes.
- Remove baking dish from oven.
- Seperate crescent dough into 4 rectangles.
- Carefully place rectangles over hot potato mixture so corners of rectangles meet in center; do not seal seams.
- Carefully press edges to sides of baking dish.
- Return to oven; bake an additional 15 to 20 minutes or until potatoes are tender and crust is deep golden brown.
- Let stand 10 minutes before serving.

- Beat eggs and milk, set aside.
- In a large bowl, mix hashbrowns and oil.
- Press along the bottom and up the sides of a 9x13 baking dish.
- Bake at 475* for 15 minutes.
- Layer the sausage, cheese, and onions over the potatoes.
- Pour the egg/milk mixture evenly over the top.
- Turn oven down to 350* and bake for 30 minutes until firm.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place bacon in a 10-inch skillet and cook over medium heat, turning occasionally, until crisp, about 10 minutes. Use a slotted spoon to remove bacon to a paper towel-lined small bowl. Discard half the bacon fat using a spoon.
- Cook sausage in the hot skillet until browned on both sides, about 5 minutes. Remove to the bowl with the bacon.
- Heat canola oil and butter in the same skillet over medium heat. Add hash browns and onion. Sprinkle 1/2 teaspoon garlic powder, onion powder, 1/4 teaspoon salt, and 1/4 teaspoon black pepper on top and stir together. Spread out the hash browns; cook, without stirring, until browned, about 5 minutes. Turn hash browns over and sprinkle Cheddar cheese evenly over the top.
- Stir remaining garlic powder, eggs, and milk together in a bowl; season with salt and pepper. Pour egg mixture over the Cheddar cheese-covered hash browns in the skillet. Sprinkle bacon and sausage pieces on top.
