NUTTY SANDWICH COOKIES

Yield 40 to 50 small sandwich cookies

1/2 cup confectioners' sugar
1/4 cup granulated sugar
1 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 stick unsalted butter, at room temperature
Coarse, raw, sanding or brown sugar, for topping (optional)
3/4 cup pistachios, almonds, pecans, peanuts or hazelnuts, plus more for topping (optional)
Jam, lemon curd, chocolate-hazelnut spread, melted chocolate or frosting, for filling

Steps:

  • Preheat the oven to 325 degrees F. Line 2 baking sheets with parchment. Pulse the nuts, confectioners' sugar and granulated sugar in a food processor until finely ground. Add the flour, cinnamon and salt and pulse until combined. Add the butter and pulse to form a soft dough.
  • Roll heaping teaspoonfuls of dough into balls and arrange 1 1/2 inches apart on the prepared baking sheets. Lightly flatten the balls with your fingers. Sprinkle with coarse, raw, sanding or brown sugar. Press a whole nut into the top of some of the cookies or sprinkle with chopped nuts.
  • Bake the cookies until lightly golden, about 15 minutes. Let cool 3 minutes on the baking sheets, then transfer to racks to cool completely. Spread your choice of filling on the flat side of a cookie; sandwich with another cookie. Repeat with the remaining cookies.

These little finger sandwiches look great on a buffet or at tea time. They taste great and are so simple to make. You can use any kind of nut bread, but I prefer pumpkin or banana nut bread.

3 (3 ounce) packages cream cheese
1/4 cup orange juice, plus
2 tablespoons orange juice
3/4 cup chopped raisins
24 slices nut bread (thin slices)

Steps:

  • Blend the cream cheese with an electric mixer on slow speed for about 1 minute to soften it up.
  • Add the orange juice and raisins to the cream cheese and stir with a spoon to mix.
  • Spread the cream cheese spread on 24 thin nutbread slices to make 12 sandwiches.
  • Make two diagonal slices across each sandwich to make 4 triangular sandwiches.
  • You can trim the breadcrusts off the sandwiches if you like.

Steps:

  • In a medium bowl combine carrots, pecans, garlic and green olives with enough mayo to moisten and hold mixture together.
  • Spread four slices of bread with a light coating of mayo, and spoon carrot mixture on bread and top with another slice of bread. Cut sandwiches in half and serve.

1/2 cup mayonnaise
1/2 cup pecans, chopped
1 cup black olives, chopped
2 tablespoons olive juice
pepper, to taste

Steps:

  • Let cream cheese stand at room temperature until soft. Mash with a fork and add mayonnaise.
  • Add chopped pecans, olives and olive juice. Stir well.
  • Add pepper to taste.
  • The mixture should be mushy.
  • Store in pint jars for 24 to 48 hours. It will thicken.
  • Good on crackers, thin toast, or thin bread and lettuce.

1 1/2 sticks unsalted butter, room temperature
1 cup old-fashioned rolled oats
1 cup plus 2 tablespoons unbleached all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1/2 cup packed dark-brown sugar
1/3 cup granulated sugar
1/2 cup smooth peanut butter
Turbinado sugar, for sprinkling
4 tablespoons unsalted butter, room temperature
3/4 cup smooth peanut butter
1/4 cup confectioners' sugar, sifted
1/2 teaspoon kosher salt

Steps:

  • Cookies: In a saucepan over medium heat, melt 1/2 stick butter. Add oats and cook, stirring, until toasted, 5 to 10 minutes. Spread mixture onto a parchment-lined baking sheet; let cool completely.
  • In a bowl, whisk together flour, baking soda, and salt. Beat remaining 1 stick butter with granulated and brown sugars on medium-high speed until pale and fluffy, about 3 minutes. Add peanut butter; beat until well combined.
  • Gradually add oat mixture and flour mixture; beat on low speed until combined. Roll out dough between 2 sheets of parchment 1/4 inch thick. Slide dough with parchment onto baking sheet and refrigerate until chilled, about 20 minutes.
  • Preheat oven to 350 degrees. Remove top layer of parchment; cut out cookies using a 2-inch round cookie cutter. Place cookies on parchment-lined baking sheets, spaced about 1 inch apart; sprinkle with turbinado sugar. Bake until golden, about 10 minutes. Let cool completely on sheets.
  • Filling: In a medium bowl, beat all ingredients on medium speed until smooth. Transfer mixture to a pastry bag fitted with a 1/2-inch round tip (such as Ateco #806).
  • Pipe filling in a spiral motion on bottom sides of half of cookies. Top with remaining cookies to form sandwiches. (Filled cookies can be stored in an airtight container at room temperature up to 3 days.)
