2 cups fresh cranberries
2 cups sifted all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 cup sugar
1/2 cup coarsely chopped pecans
1 cup milk
1 egg, slightly beaten
1 orange, rind of, grated
1/4 cup butter, melted
1 1/2 cups shredded cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Halve cranberries; set aside.
  • Sift flour, baking powder, salt and sugar together. Add cranberries and pecans to dry ingredient, coating well.
  • Combine milk, egg, orange rind and melted butter; add to dry ingredients alternately with cheese. Stir just to moisten ingredients. Pour into 9 x 5 x 3-inch greased loaf pan; spread evenly, making corners and sides slightly higher than center. Bake for 1 hour or until bread tests done. Cool for 10 minutes; turn out of pan. Bread slices easier if stored overnight.

Number Of Ingredients 13

2 cups all-purpose flour
1 cup sugar
2 teaspoons grated orange zest
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons shortening
1 large egg, lightly beaten
1-1/2 cups shredded cheddar cheese
1/2 cup orange juice
1/4 cup water
1 cup fresh or frozen cranberries, thawed and halved
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first six ingredients. Cut in shortening until crumbly. Combine the egg, cheese, orange juice and water. Make a well in the dry ingredients; stir in egg mixture just until moistened. Add the cranberries and the nuts., Pour into a greased 9x5-in. loaf pan. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Store in the refrigerator.

2 cups all-purpose flour
¾ cup white sugar
¾ teaspoon salt
1 ½ teaspoons baking powder
½ teaspoon baking soda
1 cup chopped cranberries
½ cup chopped walnuts
1 egg
2 tablespoons vegetable oil
¾ cup orange juice
1 tablespoon orange zest

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5 inch loaf pan.
  • Combine the flour, sugar, salt, baking powder, and baking soda. Add the cranberries and walnuts, and stir to coat with flour. Mix together the egg, oil, orange juice, and orange zest. Pour the egg mixture into the flour mixture, and stir until just blended. Spoon the batter into the prepared pan.
  • Bake for 50 minutes in the preheated oven, or until a toothpick inserted near the center comes out clean. Cool in pan for 10 minutes, then remove to a wire rack, and cool completely.

2 1/2 cups all-purpose* flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons vegetable oil
1 1/4 cups milk
1 egg
1 tablespoon orange peel, plus 1 teaspoon grated orange peel (grated)
1 cup chopped nuts (pecan, walnut)

Steps:

  • Heat oven to 350°.
  • Grease bottom only of loaf pan, 9x5x3 inches, or 2 loaf pans, 8½x4½x2 ½ inches.
  • Mix all ingredients; beat 30 seconds.
  • Pour into pan(s).
  • Bake until wooden pick inserted in center comes out clean, 9-inch loaf 55 to 65 minutes, 8-inch loaves 55-60 minutes; cool slightly.
  • Loosen sides of loaf from pan; remove from pan.
  • Cool completely before slicing.
  • To store, wrap and refrigerate no longer than 1 week.
  • *If using self-rising flour, omit baking powder and salt.
  • Apricot Nut Bread: Mix 1 cup finely cut-up dried apricots.
  • Banana Nut Bread: Decrease milk to 1/3 cup and omit orange peel. Mix in 1 ¼ cup mashed bananas (1 to 3 medium). Bake 9-inch loaf 65 to 70 minutes.
  • Cranberry-Cheese Nut Bread: Decrease nuts to 1/2 cup. Stir in 1 1/2 cups Cheddar cheese (about 6 ounces) and 1 cup cranberries, cut into halves. Bake 9-inch loaf 65 to 70 minutes.
  • Date Nut Bread: Omit milk. Mix 1 1/2 cups boiling water and 1 1/2 cups cut-up dates; cool. Stir into the batter.
  • Whole Wheat Raisin Bread: Substitute 2 3/4 cups whole wheat flour for the all-purpose flour and honey for the brown sugar. Mix in 1 cup raisins.

2 cups all-purpose flour
1 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup butter, cubed
1 large egg
3/4 cup orange juice
1 tablespoon grated orange zest
1-1/2 cups fresh or frozen cranberries
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350°. In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. In a small bowl, whisk the egg, orange juice and zest; stir into dry ingredients just until moistened. Fold in cranberries and walnuts. , Spoon batter into a greased and floured 8x4-in. loaf pan. Bake until a toothpick inserted in the center comes out clean, 65-70 minutes. Cool in pan 10 minutes before removing to a wire rack to cool completely.

1 tablespoon grated orange zest
1 ½ cups cranberries

3 cups sifted flour
1 1/3 cups sugar
2 1/4 teaspoons baking powder
1 1/2 teaspoons baking soda
2 tablespoons grated orange rind
2 tablespoons grated lemon rind
1/3 cup cold vegetable shortening
1 orange, juice of, plus
1 lemon, juice of, adding water to make 1 1/8 cups
1 1/2 cups sharp cheddar cheese, shredded
2 eggs, lightly beaten
1 1/2 cups fresh cranberries, coarsely chopped (or frozen)
1 cup walnuts, coarsely chopped

Steps:

  • Preheat your oven to 350*F.
  • In a large bowl, sift together flour, sugar, baking powder, and baking soda. Stir in orange and lemon rinds. Cut iin the shortening with a pastry blender or two knives until the mixture is like coarse meal.
  • In a medium bowl, stir together the mixed juices, cheese, and eggs. Add to the flour mixture, stirring until just combined; do not overmix. Fold in the cranberries and walnuts.
  • Pour the batter into a buttered and floured 9"x5"x3" loaf pan. Bake for 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean. Let cool completely. Serve warm with butter or cream cheese. Enjoy!

  • Wrap snugly in foil or seal in plastic bags. Refrigerate for up to 2 weeks. Freeze up to 3 months.
