NUTTY COCONUT BREAD (ABM)
Not a sweet bread. Adapted from Electric Bread. This is a very tender yet chewy bread with a pleasant nutty crunch. I prefer to use all walnuts instead of walnuts and pecans. You can bake this on the regular or rapid cycle. You can also mix this on the dough cycle. Shape and let rise about 40 minutes, and bake in the oven, 400° F. for about 30 minutes. Any way you bake it, you'll like it! Time will vary according to your machine. This makes a 1 1/2 pound loaf.

COCONUT AND MACADAMIA NUT BANANA BREAD
I have no clue where I got this recipe but I found it written down in my handwriting. I used to make this when I was in high school and it was always a big hit!

Steps:
- Preheat oven to 350.
- Sift together flour, baking powder, baking soda, and salt into a bowl.
- In a large bowl, with an electric mixer, cream the butter with the sugars.
- Beat in vanilla, eggs (1 at a time), zest, banana, and sour cream.
- Add flour mixture slowly and beat until it is just combined.
- Stir in the macadamia nuts and coconut.
- Pour batter into a greased (I use butter and a little flour) 9x5x3 inch loaf pan.
- Bake in center of preheated 350 degree oven for 40-50 minute or until tester comes out clean.
CARIBBEAN COCONUT BREAD
This is one of my favorite recipes, handed down to me from my boss's recipe box. It is great as a breakfast muffin, snack, or with a meal. Everyone will love this. Feel free to make it your own. Add nuts, raisins, coconut milk, or make it just how it is.

- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with butter.
- Combine flour, sugar, coconut, baking powder, and salt in a large bowl; stir once or twice with a wooden spoon. Add eggs, milk, water, oil, coconut extract, vanilla extract, and cinnamon. Mix well until batter is blended.
- Pour batter into the greased loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pan for 15 minutes. Invert onto a wire rack to cool completely.

I found this to be a light wheat bread, not sweet and not "yeasty". Very basic wheat bread. I have made it with walnuts and with pecans. . .both are good. See what you think! Recipe from the cookbook that came with my bread machine and I am supposed to put my ingredients in wet to dry. . . check your bread machine to make sure this is the order you are also supposed to follow (many do dry to wet). Recipe makes a 1 lb loaf

COCONUT, SULTANA & HONEY LOAF (ABM / BREAD MACHINE)
I'm feeling quite proud of myself here as I kind of (literally only just) invented this (ok, ok - I was inspired by the nicest Peshwari Naan I've had in ages!), but this really works as a loaf. It's gorgeously light and fluffy, absolutely huge considering it doesn't require all that much flour and has a wonderful sweet taste that could even be used with (certain) savoury foods and types of meat as well as just butter or honeys or fruit preserves. Perhaps using part coconut milk instead of some of the water would be even nicer but I was being stingy and didn't want to open the can :) This one is just begging to be made again - I got so many compliments about this bread - even from a friend who doesn't like coconut much who said I was onto a winner! It's just SO nice!

Steps:
- Weigh the main ingredients into the bread machine and select Raisin or Speciality Bread and preferred Crust type - I chose normal crust which worked nicely - and start the machine.
- At the beep, if you trust your machine not to mash up the fruit like mine always does, add the sultanas with just an incredibly light dusting of cardamom (or omit it if you don't like cardamom). For my machine I ignored the beep and waited until just over 3 minutes remained of the 2nd knead cycle and that worked great - guess it depends how squishy your sultanas are :).
- Cool on a wire rack.
- Makes a loaf just under 1 1/2 Lb which you won't be able to stop eating!
- Cooking time listed is the baking time for my machine.
