NUTTY BUTTERSCOTCH CHOCOLATE CHIP COOKIES

A little bit of butterscotch morsels, chocolate chip morsels and pecans makes a delightful after school snack or a fun treat for the grandkids! I decided to add a little more to the usual chocolate chip cookies and this was it!

2 1/4 c all purpose flour
1 tsp baking soda
1 tsp salt
2 stick soften butter
3/4 c sugar
3/4 c packed light brown sugar
1 tsp vanilla extract
2 c chocolate morsels
3/4 c butterscotch morsels
2 eggs
1/2 - 1 c chopped nuts

Steps:

  • 1. Heat oven to 375 degrees. Stir together flour, soda, and salt in a small bowl. In a large mixing bowl beat butter, grandulated sugar, brown sugar and vanilla until creamy. Add one egg at a time mix well.Gradually add flour to mixture. Stir in chocolate chips and nuts. Drop by spoonfuls on greased cookie sheet. Bake 7-10 minutes depending on your oven.

A great variation on standard chocolate chip cookies. Makes 50 large or 100 small cookies.

½ cup butter, softened
½ cup unsalted butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
2 tablespoons milk
2 teaspoons vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
2 cups semisweet chocolate chips
1 cup coarsely chopped walnuts

Steps:

  • In a large bowl, cream the margarine, butter and both sugars until light and fluffy.
  • Add the eggs, milk and vanilla and beat until well blended.
  • Sift the flour, baking powder, baking soda and salt together and add to the butter mixture. Stir just until blended. Stir in the oats until well blended. Fold in the chocolate and walnuts.
  • Cover and refrigerate the dough for at least 1 hour.
  • Preheat oven to 350 degrees. Grease cookie sheets.
  • Take a teaspoonful (for small cookies) or a tablespoonful (for large cookies) of dough and shape the dough into balls. Flatten slightly into rounded disks. Place 2 inches apart on the cookie sheets and bake until the edges are slightly browned, about 10 minutes.
  • Remove from the oven and let cool on the sheets for about 10 minutes. Remove to wire racks to cool completely.

We like our chocolate chip cookies with a crisp crinkly top and a delightfully chewy center - perfection! I do include the guidelines for anyone who demands a perfectly chewy or completely crisp version as well. MAKE AHEAD: The cookies can be stored between sheets of wax paper in a container with tight fitting lid for up to 2 days.

2 cups all-purpose flour, for regular cookies or 2 cups self rising flour, for thicker cookies as in my photo
2 tablespoons all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, softened
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs, at room temperature
1 1/2 teaspoons pure vanilla extract
12 ounces semi-sweet chocolate chips (2 cups)
3/4 cup coarsely chopped walnuts (optional) or 3/4 cup pecans, lightly toasted (optional)

Steps:

  • Preheat the oven to 350° and place racks on middle and lower third tracks.
  • In a medium mixing bowl, whisk flour with baking soda and salt. If you are using self-rising flour you can skip this step, you wont need the salt or soda.
  • In a large mixing bowl beat the butter at medium speed until creamy with a handheld electric mixer. Add brown sugar and granulated sugar and beat until fluffy. Add eggs and vanilla and beat until smooth. Lower speed and beat in the dry ingredients. Stir in chocolate chips and nuts.
  • Place heaping tablespoons of the cookie dough at least 1 1/2" apart on 2 baking sheets and bake for about 11 minutes for soft and chewy cookies, about 13 minutes for chewy cookies or about 16 minutes for crisp cookies.
  • Leave cookies to cool on baking sheets for 2 minutes before moving them to wire racks.
