20 large ladyfingers
1 cup coffee
16 oz cream cheese
16 oz mascarpone cheese
1 tablespoon vanilla extract
1 cup milk, hot
½ cup sugar
4 teaspoons gelatin
2 tablespoons cocoa powder

Steps:

  • Dip the ladyfingers in coffee.
  • In two spring form pans lined with parchment paper, layer the coffee-dipped lady fingers in a single layer.
  • Freeze until the ladyfingers are frozen.
  • In a bowl, add the cream cheese, mascarpone cheese, and vanilla extract. Stir to combine.
  • Add the milk, sugar, and gelatin to a bowl and whisk until the gelatin has dissolved.
  • Pour the milk mixture through a sieve into the bowl of cream cheese.
  • Pour 1 cup (290 g) of cheesecake batter into a springform pan. Refrigerate until firm, about 2 hours
  • Add one layer of frozen ladyfingers on top of the refrigerated cheesecake layer.
  • Add another cup (290 g) of cheesecake batter on top. Refrigerate for two hours, and repeat with remaining batter and ladyfinger layer.
  • Refrigerate for 2 hours or until firm.
  • Dust the top with cocoa powder.

36 chocolate sandwich cookies, crushed
1 envelope unflavored gelatin
3 tablespoons espresso, brewed, cold
1 tablespoon rum, cold
⅓ cup water, boiling
1 cup sugar
⅔ cup dark chocolate powder
2 cups heavy cream, cold
2 teaspoons vanilla extract
8 oz whipping cream
8 oz mascarpone cheese
4 tablespoons powdered sugar

Steps:

  • Crush cookies in a bag and set aside.
  • Mix cold espresso and rum in a small bowl. Mix in gelatin and let stand for 2 minutes.
  • Add boiling water and stir until gelatin is completely dissolved.
  • Mix sugar and cocoa in large bowl.
  • Add whipping cream and vanilla. With an electric mixer, beat on medium speed until stiff.
  • Pour in gelatin mixture and beat until well-blended.
  • Add ½-inch (1.5 cm) layers of crushed cookies to dessert dishes, then scoop mousse into dishes and refrigerate for at least 30 minutes.
  • While mousse is chilling, whip cream in a cold bowl until soft peaks form. Add mascarpone and powdered sugar and continue whipping until stiff peaks form.
  • Scoop a dollop of whipped cream on top of the mousse and sprinkle with extra cocoa powder.

1 cup all purpose flour
¼ cup sugar
6 tablespoons nutella
2 eggs
3 tablespoons whole milk
1 tablespoon cocoa powder
2 teaspoons baking powder
1 teaspoon pure vanilla extract
1 ½ cups Nutella hazelnut spread
8 oz mascarpone cheese
8 oz heavy cream, whipped
¼ cup powdered sugar
⅓ cup espresso
2 tablespoons hazelnut liqueur
2 tablespoons coffee liqueur
1 tablespoon cocoa powder

Steps:

  • For the Cakes:
  • Preheat the oven to 350°F and place six cupcake liners into a cupcake pan. Set aside.
  • Whisk flour, cocoa powder, and baking soda together in a mixing bowl and set aside. In a separate bowl whisk eggs, milk and vanilla extract together and set aside.
  • Place the Nutella hazelnut spread and sugar into the bowl of a high speed electric mixer. Whip together until smooth with the whisk attachment.
  • Set the speed on low and slowly pour in the egg mixture, continue to mix, scraping the sides as needed.
  • Slowly add the flour mixture and continue mixing until combined, scraping the sides as needed.
  • Transfer the batter into the lined cupcake pan and bake for 20-22 minutes or until the toothpick comes out clean.
  • Let cool completely before assembling.

  • Place Nutella into a pastry bag.
  • Whip the heavy cream, mascarpone cheese and powdered sugar until you reach a thick frosting consistency. Place cream into a pastry bag and set aside.
  • For the Espresso Soak:
  • Mix together the espresso, hazelnut and coffee liqueurs.
  • To Assemble the Nutella Tiramisu Cakes:
  • Cut each cake into three slices. Then, brush each slice generously with the espresso soak.
  • Pipe equal amounts of Nutella and mascarpone cream to the bottom slice. Add the middle layer and repeat. Add the top layer of cake and frost with mascarpone cream and sprinkle with shaved chocolate or dust with cocoa powder.
