2 ½ cups all-purpose flour
¼ cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, room temperature
¾ cup brown sugar
¾ cup white sugar
2 large eggs
2 tablespoons vanilla extract
½ cup chocolate-hazelnut spread, such as Nutella®
½ cup chopped toasted hazelnuts
1 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet or line it with parchment paper.
  • Combine flour, cocoa powder, baking soda, and salt in a bowl. Mix with a whisk to break up any lumps.
  • Beat butter, brown sugar, and white sugar with an electric mixer in a large bowl until smooth. Beat in eggs one at a time until completely incorporated. Mix in vanilla and chocolate-hazelnut spread.
  • Slowly add in flour mixture and stir just until combined. Fold in chopped hazelnuts and chocolate chips. Drop the dough onto prepared baking sheet by tablespoons or with a cookie scoop.
  • Bake in preheated oven until edges look dry and cookies are fragrant, about 12 minutes. Allow to cool for 1 minute on baking sheet before transferring to a wire rack.

2 cups ground hazelnuts
1 ⅔ cups all-purpose flour
1 ½ cups confectioners' sugar
¾ cup butter, softened
2 egg yolks
1 pinch salt
½ cup Nutella® hazelnut spread

Steps:

  • In a large bowl, mix together hazelnuts, flour and sugar. Mix in butter, egg yolk and salt until combined. Form into ball; wrap in plastic wrap. Refrigerate for 3 hours.
  • Preheat oven to 300 degrees F. Roll dough into 48 small balls, about 2 tsp each. Arrange balls, about 2 inches apart, on parchment paper-lined baking sheets.
  • Bake, in batches, for about 18 minutes or until just set and lightly golden brown. Let cool completely on cooling rack.
  • Spread or pipe 1 tsp Nutella® hazelnut spread over the bottoms of half of the cookies. Sandwich with remaining cookies.

¼ cup butter, softened
¼ cup honey
3 tablespoons brown sugar
1 egg yolk
1 ½ cups all-purpose flour
½ teaspoon baking soda
½ teaspoon gingerbread spice mix
1 pinch salt
½ cup Nutella® hazelnut spread
3 tablespoons confectioners' sugar
1 tablespoon lemon juice

Steps:

  • In a bowl, mix together butter, honey and brown sugar. Mix in egg yolk.
  • In a separate bowl, mix together flour, baking soda, gingerbread spice mix and salt; add to butter mixture and knead for 1 minute. Cover with plastic wrap; and refrigerate for 1 hour.
  • Preheat oven to 320 degrees F.
  • On a sheet of parchment paper, roll out dough to 1/6-inch thickness. Using small gingerbread-man cookie cutter or other small shaped-item (such as a glass), cut out gingerbread men.
  • Transfer gingerbread men to parchment paper-lined baking sheet; bake on center rack for 8 to 9 minutes or until slightly golden.
  • Let cool on rack for 15 minutes.
  • Spread 1 1/4 tsp Nutella® hazelnut spread on the back of one gingerbread man then sandwich with another gingerbread man.
  • Repeat with remaining gingerbread men and Nutella® hazelnut spread. Mix together confectioners' sugar and lemon juice, adding juice to the sugar, a 1/2 tsp at a time, to make smooth paste. Transfer to piping bag and decorate cookies with icing.

2 egg whites
1 ⅓ cups confectioners' sugar, divided
2 ⅔ cups ground hazelnuts
1 ½ teaspoons ground cinnamon
½ cup Nutella® hazelnut spread
1 teaspoon lemon juice

Steps:

  • Preheat oven to 250 degrees F; position rack in center of oven.
  • Using a mixer, beat together the egg whites and 1 1/4 cups confectioners' sugar for 4 to 5 minutes or until soft peaks form.
  • Reserve 2 tablespoon into a small bowl for the icing used later - combine only this portion with 1 teaspoon of lemon juice. Gently mix hazelnuts and cinnamon into remaining egg white mixture until combined.
  • On work surface, roll out dough between 2 sheets of parchment paper to 1/8 inch thickness. Using a 2-inch star cookie cutter, cut out 48 cookies, re-rolling scraps once.
  • Arrange cookies on 2 parchment paper-lined baking sheets. Using 1/2 inch round cookie cutter, cut out rounds in the center of half of the cookies (these will be tops of sandwich cookies).
  • Spread "icing"-like mixture on the top of the cookie (with the cut out) using a teaspoon.
  • Bake, in 2 batches, for about 10 minutes or until cookies are set. Let cool completely. Spoon Nutella® hazelnut spread into piping bag fitted with small round tip. Pipe 1 teaspoon Nutella® hazelnut spread onto half of the cookies (without round cut outs).
  • Dust remaining cookies with remaining confectioners' sugar; place over Nutella® hazelnut spread on bottom halves of cookies.

3 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1¼ cups Nutella
4 tablespoons unsalted butter, at room temperature
1-1/3 cups granulated sugar
2 eggs, at room temperature
1 teaspoon vanilla extract
1 teaspoon instant espresso powder
1/3 cup milk
2 cups hazelnuts, toasted and finely chopped
1 cup powdered sugar

Steps:

  • 1. Combine the flour, baking powder, and salt in a medium bowl; set aside. With an electric mixer on medium-high speed, beat the Nutella, butter, and granulated sugar until light and fluffy, about 2 minutes. Add the eggs, vanilla, and espresso powder and mix until incorporated. Reduce the speed to low and alternate additions of flour mixture and milk, starting and ending with the flour, and mixing until just combined after each addition. Fold in ½ cup of the hazelnuts. Refrigerate the dough until firm, at least 2 hours and up to 24 hours. 2. Preheat oven to 375 degrees F. Line baking sheets with parchment paper. Place the remaining hazelnuts and the powdered sugar in two separate bowls. Using a medium cookie scoop (or about 2 tablespoonfuls), roll the dough into balls, roll in the hazelnuts, then roll in the powdered sugar. Place the balls 2 inches apart on the baking sheets. Bake until the edges are set and the middle still looks a tad soft, about 10 minutes. Cool for 5 minutes on the baking sheet, and then transfer to a wire rack to cool completely. Store cookies in an airtight container at room temperature.
