CHILI CON CARNE WITH BEANS
This is my father-in-laws recipe for chili. I love to make it on a cold winter night. Sometimes I serve it with Corn Chips in the bottom of the bowl, topped with the chili and then top the chili with grated cheddar cheese

- Saute meat, onions and garlic until done.
- Add remaining ingredients and simmer for 2 hours.
- The beer is optional but does add a good flavor and, of course, the alcohol is cooked out during cooking.

Steps:
- In a large skillet, over med.
- heat, warm the oil.
- Add onions and cook, stirring occasionally, until tender, about 20 minutes.
- Meanwhile in a 4 to 5 quart heavy flameproof casserole or Dutch oven over med. heat, combine beef and pork.
- Season with salt and cook, stirring often, until meat has lost all its pink color and is evenly crumbled, about 20 minutes.
- Scrape onions into casserole with meats.
- Stir in chili powder, cumin, oregano, cocoa, cinnamon and cayenne pepper.
- Cook, stirring, 5 minutes.
- Stir in tomato juice and beef stock.
- Bring to a boil then lower heat and simmer, uncovered, for 1 hour.
- Taste, correct seasonings and simmer another 30 minutes or until chili is thickened to your liking.
- Stir in garlic. To thicken chili further or to bind any surface fats, stir in the optional cornmeal.
- Stir in the beans and simmer another 5 minutes.

- Fry bacon until crisp.
- Remove bacon and drain on paper towel.
- Brown half the beef cubes in pan with bacon drippings five minutes.
- Place in slow cooker.
- Repeat with remaining meat. Stir bacon and remaining ingredients into 3 1/2 quart slow cooker.
- Cover and cook on low setting about 10 hours or until beef is tender.
- Stir occasionally.
- If you don't have a slow cooker place in large pot, cover, place on stove under low heat and follow directions above.

- Combine the ground beef and onions in a kettle until meat is brown.
- Drain fat.
- Then add the remaining ingredients, except for the flour and 1/2 cup of water.
- Stir to blend.
- Cover and simmer for 1½ hours, stirring occasionally.
- When done, mix the 3 tbsp of flour with the 1/2 cup of cold water into the chili, mixing well until desired thickness.

Some people like beans in their chili, some do not. This chili has no beans, but if you like beans, you can easily serve them on the side.

Steps:
- Brown beef in a large deep pan.
- Drain fat.
- Add the garlic, 6 tbsp of the chili powder, and cumin, stirring to coat beef.
- Add the tomato sauce and the beef broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour (add some water if your heat is too high and chili gets too thick).
- Add masa gradually, stirring after each addition, until chili reaches desired thickness.
- Simmer 15-20 minutes more, then season to taste with salt and add cayenne, paprika, and last tbsp of chili powder.
