A recipe that my mother made frequently in the summer. It's a nice light salad when it's hot outside.

1 onion, finely chopped
3 cucumbers, thinly sliced (peeled or not)
1/2 teaspoon salt
1 dash black pepper
dill, to taste
parsley
1/3 cup sugar
1/4 cup oil
1/2 cup white vinegar or 1/2 cup cider vinegar

Steps:

  • Mix together onion, cucumber, salt, pepper, dill, and parsley.
  • In a separate bowl, combine sugar, oil, and vinegar. Pour over cucumber mixture. Toss.
  • Marinate several hours in the refrigerator before serving.

3 medium cucumbers, sliced
1 cup sugar
3/4 cup water
1/2 cup white vinegar
3 tablespoons minced fresh dill or parsley

Steps:

  • Place cucumbers in a 1-1/2- or 2-qt. glass container. In a jar with a tight-fitting lid, shake remaining ingredients until combined. Pour over cucumbers. Cover and refrigerate overnight. Serve with a slotted spoon.

Number Of Ingredients 8

1 teaspoon salt
1 cup white vinegar
1 1/2 cups sugar
1 teaspoon celery seed
1/4 cup vegetable oil
5 cups cucumber slices (about 3 Persian or Kirby cucumbers; see Cook's Note)
1 medium sweet onion, thinly sliced into rings
1 large yellow bell pepper, thinly sliced

Steps:

  • In a medium saucepan, bring the salt, vinegar, sugar, celery seed and vegetable oil to a boil, then remove the pan from the heat and allow to cool.
  • In a large bowl, toss the sliced cucumbers, onions and peppers with the liquid mixture and refrigerate for at least 2 hours and up to overnight. Serve cold.

3 medium cucumbers (about 2 1/4 pounds), peeled, halved lengthwise, and thinly sliced
2 tablespoons kosher salt
1/4 cup plus 2 tablespoons sour cream
3 tablespoons chopped fresh dill
1 tablespoon white distilled vinegar
Pinch of cayenne pepper
Freshly ground black pepper

Steps:

  • In a large bowl, mix the cucumbers and salt and set aside at room temperature for 1 hour.
  • In a colander in the sink, drain and rinse the cucumbers thoroughly under cold running water. Set aside to drain for 10 minutes.
  • Press down on the cucumbers to extract as much liquid as possible. Transfer the cucumbers to a large bowl and mix with the sour cream, dill, vinegar, cayenne, and season with pepper to taste. Serve immediately, or cover and refrigerate for up to 24 hours.

Grandma Varga's Hungarian Cucumber Salad (Uborkasalata) image

This is the best cucumber salad I have ever had. This is my grandmothers recipe, (she was from Nagyszentmiklos) and this is a perfect companion dish for chicken paprikas, although I could make a meal out of it. This will quickly become your favorite way to eat cucumbers!

8 medium cucumbers or 15 kirby cucumbers, peeled
1/4 cup finely chopped fresh dill
1/4 cup kosher salt
1/2 pint sour cream
2 tablespoons white vinegar
2 garlic cloves, minced
1 teaspoon Hungarian paprika

Steps:

  • Slice cucumbers very thinly, preferably using a mandolin.
  • Take a colander, put in a small layer of cucumbers, then sprinkle with a small amount of the salt.
  • Continue this method until all the salt and cucumbers are used up.
  • Cover the cucumbers with a plate inside the colander, and put a very heavy weight on top.
  • Make sure the colander is in a large bowl, because the cucumbers will lose alot of water.
  • Let them sit for 1 hour.
  • In the meantime, chop the dill and finely mince the garlic, put aside.
  • After 1 hour, take a handful of cucumbers, and squeeze out as much juice as you can, and continue until they are all done.
  • Rinse thoroughly with water, drain well.
  • After the cucumbers are done, return to the colander, and weight down one more time for about 15 minutes.
  • You do not have to squeeze out the juice again with your hands Combine all ingredients in a large bowl, except the paprika.
  • After mixing thoroughly, put in a nice serving dish, and sprinkle with the paprika.
  • Chill for at least 2 hours.
  • Enjoy.
  • Nutritional information shows a high amount of sodium, but the vast majority is pressed out by your hands. The main function of the kosher salt is to purge the moisture out of the cucumbers.
