Spice up the appetizer table with this south-of-the-border take on a cheese ball. Pepper Jack cheese turns up the heat, cilantro and lime add fresh zest and a crushed tortilla-chip coating adds crunch.

1 1/2 cups shredded pepper Jack cheese (6 oz)
1 cup shredded sharp Cheddar cheese (4 oz)
2 packages (3 oz each) cream cheese, softened
1 tablespoon lime juice
1/2 teaspoon onion powder
1/4 cup sliced ripe olives
1/4 cup chopped fresh cilantro
3/4 cup nacho-flavored tortilla chips, crushed
Assorted crackers or tortilla chips

Steps:

  • In food processor, place cheeses, lime juice and onion powder. Cover; process until well mixed. Spoon into medium bowl. Stir in olives and cilantro.
  • Place crushed tortilla chips on waxed paper. Spoon cheese mixture onto chips. Roll to coat cheese ball with chips. Serve with crackers.

8 oscar myer ham slices
1/4 cup green onion, thinly sliced
1 teaspoon garlic powder
1 teaspoon red pepper flakes
poppy seed
wheat thins crackers

Steps:

  • Grab a mixing bowl and tear cream cheese into chunks.
  • Dice the ham and place ham into the bowl with the cream cheese.
  • Add the onions and spices.
  • With your hands mix the cheese, spice, ham, and onion together thoroughly and form into a ball.
  • Sprinkle the ball with poppy seeds and serve with wheat thins for dipping.

3 cups nonfat dry milk powder
1 2/3 cups water
1 1/3 cups Splenda granular, sugar substitute
1/2 cup fat-free half-and-half
1 large peeled diced mango

  • Pour evenly among 17 ice cream pop molds and insert sticks.
  • Freeze at least 4 hours.

1/2 cup neufchatel cheese, softened
2 tablespoons plain nonfat yogurt
1/2 cup shredded low-fat cheddar cheese
1/2 cup shredded reduced-fat monterey jack cheese
1 teaspoon minced onion
1 teaspoon prepared horseradish
1/2 teaspoon Dijon mustard
1/8 teaspoon ground red pepper
2 tablespoons toasted wheat cereal
1 1/2 tablespoons chopped fresh parsley
48 fat-free crackers

Steps:

  • Combine Neufchatel cheese and yogurt, stirring until smooth.
  • Add Cheddar cheese and next 5 ingredients; stir well.
  • Cover and chill at least 2 hours.
  • Shape cheese mixture into a ball. Wrap cheese ball in wax paper and chill.
  • Combine cereal nuggets and parsley. Roll cheese ball in cereal mixture just before serving. Serve with fat-free crackers.
