EASY BOSTON BAKED BEANS
Easy Boston Baked Beans with a rich, sweet sauce.

Steps:
- Preheat oven to 325 degrees F.
- Spray a 9x13-inch baking pan with nonstick cooking spray.
- Rinse and drain beans, then spread in the bottom of prepared pan.
- Lay bacon slices on top of beans in the pan.
- Sprinkle diced onion over bacon.
- In a saucepan over medium heat, whisk together molasses, salt, pepper, dry mustard, ketchup, brown sugar and Worcestershire sauce.
- Bring to a boil, remove from heat, then pour over beans in the pan. Use a spoon to spread evenly over the top.
- Cover dish with foil and bake for 3 hours, or until beans are tender and heated through.

Steps:
- Soak beans 2 hrs.
- Preheat oven to 350 F.
- Drain beans and cover with fresh water Bring to a boil and simmer for 1.5 hours. Drain and reserve 1 cup of the cooking liquid.
- Add the molasses, sugar, mustard pepper and reserved fluid to the beans.
- Cut 2-3 slices from the salt pork and place these in the bottom of a heavy based casserole dish. Pour in the bean mixture and top with remaiing salt pork. Cover tightly and bake for 4.5-5 hours or until beans are tender and deeply browned.
- Using two forks, shred the meat on top and mix into the beans.
- Serve hot.

The beans can be made ahead. After cooking, cool them to room temp and refrigerate in an airtight container for up to 4 days. Note: It is NOT NECESSARY to soak the beans before using in this recipe; hence the long cooking time. Do not use old dried beans for this recipe.

- Adjust oven rack to lower-middle position; heat oven to 300 degrees.
- Add salt pork and bacon to 8-quart Dutch oven; cook over medium heat, stirring occasionally, until lightly browned and most fat is rendered, about 7 minutes.
- Add onion and continue to cook stirring occasionally, until onion is softened, about 8 minutes.
- Add 1/2 cup molasses, mustard, beans, 1 1/4 teaspoons salt, and 9 cups water; increase heat to medium-high and bring to boil; cover pot and set in oven.
- Bake until beans are tender, about 4 hours, stirring once after 2 hours.
- Remove lid and continue to bake until liquid has thickened to syrupy consistency, 1 to 1 1/2 hours longer.
- Remove beans from oven; stir in remaining tablespoon of molasses, vinegar, and additional salt and pepper to taste.

- Sort beans and rinse with cold water. Place beans in a Dutch oven; add enough water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour or until beans are softened., Drain and rinse beans, discarding liquid. Return beans to Dutch oven; add 6 cups water. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until beans are almost tender., In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 2 tablespoons drippings. Saute onions in drippings until tender. Add garlic; cook 1 minute longer. Stir in the ketchup, brown sugar, molasses, syrup, Worcestershire sauce, salt and pepper., Drain beans, reserving cooking liquid; place in an ungreased 3-qt. baking dish. - Clean beans of pebbles and rocks.
- Put cleaned beans in pot. Set aside.
- Mix sugars, molasses, and mustard. Add salt and pepper. Mix into beans.
- Add enough water to cover beans.
- Place salt pork down into beans. You can opt to cut it up, or leave it whole, like my gram used to do.
- You can also put the onions in whole, or opt to chop them up. She used to keep them whole, so us kids could fight over them lol.
- Bake in bean pot, at 200 degrees, all night or 8 hours If not done, finish in the morning.
- When beans are ready to be eaten, turn oven up to 450 until beans start to boil, then turn back to 200, until ready to serve.
- Note: If beans look like they are drying out, just add water as you are cooking.
BOSTON BAKED BEANS
This signature dish of Boston, Massachusetts dates from the 17th century, when the Puritan sabbath - a day on which work was forbidden - was observed from sundown on Saturday until Sunday evening. The baked beans would be started on Saturday morning and then left to cook slowly until dinnertime so that the Puritan housewife did not have to break the sabbath to cook a meal. Leftover beans would then be served for Sunday breakfast or lunch. Boston baked beans were often baked in communal ovens by the local baker, who would collect bean pots from the townspeople on Saturday morning and return the pots of baked beans in time for dinner that night. One of my most treasured possessions is my grandmother's bean pot.

- Soak the beans overnight in water to cover by 3 inches. Or, alternatively: place the beans in a saucepan with water to cover by 2 inches; bring to a boil and boil for 2 minutes; remove from the heat, cover, and let stand for 1 hour.
- Drain the beans and place them in a large saucepan with 8 cups of water. Bring the beans to a boil over medium-high heat. Add the whole onion, reduce the heat to low and simmer, partially covered, until beans are half tender, about 30 minutes. Drain the beans and discard the onion.
- Meanwhile, in a small saucepan of boiling water, blanch the salt pork for 3 minutes. Drain and set aside.
- Preheat the oven to 250 degrees Fahrenheit.
- In a bowl, combine the chopped onion with the molasses, brown sugar, dry mustard, salt, pepper, and cloves. Stir in 2 cups of water.
- Place the beans and reserved salt pork in a 2 1/2-quart casserole or bean pot. Add the bay leaf. Pour the onion-molasses mixture over the beans. Cover tightly and bake for 3 1/2 hours.
- Remove the cover, stir the beans, and continue baking, uncovered, for 30 minutes longer, discard the bay leaf before serving.

CLASSIC BOSTON BAKED BEANS

- Soak beans in cold water to cover overnight in a large bowl. Drain in a colander.
- Heat oven to 300 degrees. Arrange onions in the bottom of a bean pot or Dutch oven. Top, working in order, beginning with tomatoes, and continuing with bay leaves, dry mustard, cloves, brown sugar, and salt and pepper. Add soaked beans and pour over molasses. Top evenly with salt pork. Add 5 cups water and cover.
- Transfer to oven and bake, without stirring, until the beans are tender and the liquid has thickened, about 6 hours. Check the beans every 45 minutes, adding hot water, if necessary, to keep beans slightly soupy at all times. Remove from oven, and adjust seasoning with salt and pepper, if necessary, before serving.
