GRANDMA'S SANDWICH LOAF

My grandmother used to make this for special events and Holidays! It's super easy and super delicious!!

Number Of Ingredients 8

5 pound(s) chicken (boned)
2 1/2 cup(s) miracle whip or if you prefer mayonaise
1 1/2 cup(s) celery about 2 1/2 medium stalks chopped in medium pieces
1 pinch(es) salt and pepper
2 large loaves of white bread whatever kind preferred ( i use regular white bread)
2 can(s) cranberry sauce
4 package(s) cream cheese, room temperature
2 tablespoon(s) milk

Steps:

  • In large bowl mix all ingredients together till thoroughly covered with Miracle whip or Mayo.
  • spread Chicken salad onto the white bread, then add a layer of bread with cranberry sauce. Repeat this process 1 more time and cover with 1 more slice of white bread.
  • After you have lined a long serving dish with four sections side by side, then you will take your cream cheese (using a mixer) whip all 4 pkgs together in a bowl.Add the 2 tbsp milk to help the blening process. Then frost your loaf and garnish with parsley or whatever you prefer to dress it up a bit. Chill until ready to serve about 2 hours

One of my very favorite dinners. This is my gramma's meatloaf, and the only one I'll eat. I do not accept any tomato products, chunks of veggies, hardboiled eggs or wild spices in meatloaf. If you need a meatloaf coated in ketchup this is not the one! Pure comfort food, and what could be better than leftover meatloaf in a sandwich.

1 cup milk
2 eggs
2/3 cup fine cracker crumb
1/2 cup finely chopped onion
1/2-3/4 teaspoon poultry seasoning
1 teaspoon salt
1 dash pepper
1 tablespoon dried parsley
1 1/2 lbs ground beef

Steps:

  • Preheat oven to 350°F.
  • Mix together milk and eggs until well blended.
  • Stir in cracker crumbs until most liquid is absorbed.
  • Mix in onion and seasonings.
  • Add meat and combine well.
  • Shape into a loaf in a shallow baking pan, or lightly pack into a loaf pan.
  • Bake 50-60 minutes.
  • Remove from oven and let rest 5-10 minutes before slicing.

Sandwich loaf meets the 21st century thanks to our updated version with bean-couscous salad and hummus.

2 filone bread rolls
1 cup black bean-couscous salad
1 container (10 oz) white bean hummus with roasted pine nuts and herbs

Steps:

  • Cut rolls in half horizontally.
  • Spread 1/2 cup salad on bottom half of 1 roll. Top with remaining bottom half of second roll. Spread with remaining 1/2 cup salad. Cover with 1 top of roll. (Save remaining top half for another use.)
  • Using butter knife or icing spatula, spread hummus on top and sides of loaf. Garnish with nuts from hummus.
  • To serve, cut into 4 slices.
