MOM'S BEST SPAGHETTI SAUCE

A simple, slow cooked, authentic spaghetti sauce, as good as the restaurants serve...or better! The secret ingredient is baking soda, but do not taste the sauce right after adding it. Wait a while, and this sauce will not disappoint you. It is good right from the stove, but the flavors blend overnight. Best served with your favorite meatball recipe, where the meatballs cook in the sauce the last half hour. Be prepared to take a nap after eating.

4 (14.5 ounce) cans whole peeled tomatoes
2 (15 ounce) cans tomato sauce
4 (6 ounce) cans tomato paste
3 cups water
4 cups fresh sliced mushrooms
2 onions, chopped
4 cloves garlic, minced
4 teaspoons white sugar
¼ cup chopped fresh basil
salt to taste
ground black pepper to taste
2 pinches baking soda
¼ cup grated Parmesan cheese

Steps:

  • Mix together whole tomatoes, tomato sauce, tomato paste, water, mushrooms, onions, garlic, sugar, salt and pepper, basil, and 1 pinch of baking soda in a large saucepan. Bring to a boil, stirring. Reduce to a simmer, and cook for 4 hours minimum.
  • Stir in another pinch of baking soda; the sauce will foam. Simmer, stirring occasionally, until thick and almost brown. Make sure to scrape the sides of the pan in to the sauce.
  • After the sauce is fork consistency, stir in Parmesan cheese. Watch that the cheese does not burn. Taste sauce. If it is too tangy or acidic, add another pinch of baking soda and simmer another 1/2 hour.
  • Cool, cover, and refrigerate overnight. The next day, reheat and serve.

1 (12 ounce) bag frozen vegetarian ground beef (Boca Meatless Ground Crumbles)
3 garlic cloves, crushed
1 medium onion, chopped
1 green pepper, chopped
1 (8 ounce) package sliced baby bella mixed mushrooms
2 (15 ounce) cans tomato sauce
2 (12 ounce) cans tomato paste
1 (3 7/8 ounce) can pitted and sliced ripe black olives, rinsed and drained (this is drained weight)
1 bay leaf
2 (1 3/8 ounce) envelopes spaghetti sauce mix (Thick & Zesty)
3 cups water
1 tablespoon sugar
1 teaspoon oregano

Steps:

  • In a large soup pot, saute the burger crumbles, garlic, onion, green pepper and mushrooms in a bit of oil until vegetables are soft.
  • Add the rest of the ingredients and bring to a low boil, cover and simmer 1 1/2 hours stirring often.

1/2 cup butter
2 teaspoons minced garlic
1 (12 ounce) package thin spaghetti
1 cup grated parmesan cheese
1 pint whipping cream
1 tablespoon dried parsley flakes
1 teaspoon seasoning salt
1 teaspoon white pepper
10 -12 slices bacon, fried crisp, and crumbled

Steps:

  • In alarge skillet, melt butter and saute garlic until it is browned slightly.
  • Cook spaghetti according to the package directions, and drain.
  • Add spaghetti, parmesan cheese, cream, parsley flakes, salt, and pepper, and mix well.
  • Pour into a buttered 2 quart baking dish.
  • Cover and bake at 325 degrees until it is warm, about 15 minutes.
  • Uncover and sprinklethe bacon over casserole.

1 pound lean ground beef
1 onion, chopped
4 tablespoons chopped fresh parsley
7 tablespoons olive oil
1 (46 fluid ounce) can tomato juice
1 ½ (15 ounce) cans tomato sauce
2 teaspoons Worcestershire sauce
2 teaspoons salt
1 pinch ground black pepper
¼ teaspoon garlic salt

Steps:

  • In a large skillet cook ground beef with the chopped onions, parsley, and olive oil. Cook until onions are soft and ground beef is cooked through.
  • In a large saucepan, combine tomato juice, tomato sauce, Worcestershire sauce, salt, ground black pepper, and garlic. Add ground beef mixture and simmer for 1 hour.

1 jar of inexpensive (!) spaghetti sauce
1 lb ground turkey or ground beef
1/4 cup grated parmesan cheese
1/2 lb sausage (Italian is great)
1 tablespoon sugar
1 small onion
1 can mushrooms
1 clove garlic, crushed (optional)
Seasonings:
seasoned salt
garlic powder
a hefty dash of chili powder
another big dash of Italian seasoning
1-2 teaspoons olive oil (although you can use butter or margarine if you'd prefer)

Steps:

  • Saute the chopped onion, clove of garlic and mushrooms in olive oil. Empty the jar of cheap spaghetti sauce into pot. Add sugar and parmesan to the sauce and let cook on low. Move onions and mushrooms when done over to the pot of sauce *Do not drain the skillet!* Brown all of the meat together, seasoning the MEAT heavily and add to the sauce when browned. This can be served immediately or left on simmer heat all day, just stirring occasionally. Great for crockpots, too!
