Number Of Ingredients 5

1 cup semi-sweet chocolate chips (6 ounces)
1 (8 ounce) package cream cheese, softened
3/4 cup finely crushed vanilla wafer
1/4 cup seedless raspberry jam
3/4 cup chopped almonds

Steps:

  • In a microwave or heavy saucepan,melt chocolate chips,stir until smooth.
  • Cool slightly.
  • In a mixing bowl beat the cream cheese and melted chocolate until smooth.
  • Stir in the wafer crumbs and jam.
  • Referigerate for 4 hours or until firm.
  • Shape into 1 inch balls,roll in almonds.
  • Store in airtight container in the refrigerator.

Wonderful little treats, great to take to potlucks (they travel well). I have made these without using the dried fruit, and just with raisins, and they are still wonderful, but even better with the dried fruit!

Number Of Ingredients 10

2 tablespoons butter
1 2/3 cups sugar
2/3 cup evaporated milk
1/2 teaspoon salt
2 cups mini marshmallows
1 cup semi-sweet chocolate chips
1 teaspoon vanilla
1/2 cup chopped walnuts
1/2 cup raisins
1/2 cup finely chopped candied pineapple or 1/2 cup dried apricot

Steps:

  • Combine butter, sugar and salt in a saucepan over medium heat; bring to a boil, cook 4-5 minutes, stirring constantly (start timing when mixture starts to bubble around the edges of pan).
  • Remove from heat; add marshmallows, chocolate chips, vanilla, walnuts, raisins and candied pineapple OR apricots.
  • Stir vigorously for 1 minute (until marshmallows melt and are blended), working quickly, drop by teaspoonfuls onto waxed paper.
  • Store in an airtight covered container, in the fridge or out of the fridge.

I have made these for so many years during the holidays that I really don't remember where I got it. All I know is when I make them they all are gone really fast. They are so good and easy to make. I have given them as gifts and everyone wants the recipe.

Number Of Ingredients 7

1 8 ounce package on your favorite cream cheese, softened ( i used philadelphia brand )
1 6 ounce package of semi-sweet chocolate pieces, melted
3/4 c vanilla wafer crumbs
1/4 c of your favorite raspberry preserves, strained ( i used kraft )
finely chopped almonds or walnuts
cocoa powder
powdered sugar

Steps:

  • 1. Melt the chocolate pieces either in the microwave in a bowl for 30 seconds at a time; take out and stir after each heating until melted or in a double boiler pan. Stiring often until melted.
  • 2. In a mixing bowl combine cream cheese and chocolate, mixing until well blended.
  • 3. Stir in crumbs and preserves and mix well.
  • 4. Cover bowl with plastic wrap and place in refrigerater to chill for several hours or overnight.
  • 5. Remove from refrigerater and shape into one inch balls.
  • 6. Roll each ball in either the almonds, walnuts, cocoa powder or powdered sugar. A variety of coatings make a pretty presentation.
