Steps:
- Place the jalapeno pepper, garlic clove, and ginger into a food processor or blender; pulse until the jalapeno and garlic are finely chopped.
- Pour in the lime juice, honey, balsamic vinegar, and salt, add the cilantro leaves; pulse a few times to blend.
- Turn the food processor or blender on, and slowly drizzle in the olive oil until incorporated into the dressing.
- Season to taste with salt before serving.

CILANTRO-LIME CHICKEN SALAD
This is a recipe I developed and submitted to another website, Chicken breasts are cubed, stir-fried and added to a cilantro, lime juice, honey, and garlic dressing. Serve on a salad of mixed field greens, or over Jasmine Rice. Wrap in a flour tortilla or lettuce leaves for a lunch on-the-go. The prep time includes marinating time.

- Combine the lime peel strip, soy sauce, and chicken cubes. Place in a resealable plastic bag and marinate 1 hour, or longer.
- Heat the olive oil over medium-high heat. Remove the chicken from the marinade and discard the marinade.
- Stir-fry the chicken cubes in the olive oil, until opaque and slightly browned.
- In a separate bowl, whisk together the lime juice, olive oil, honey, garlic, salt, and pepper. Stir in the chopped cilantro. Mix well, pour over the chicken.

LIKE CAFE RIO/COATA VIDA CILANTRO LIME DRESSING
I've never actually had this dressing at the restaurant, but my husband has and HE says it tastes very close. The only thing I think I would change is to put the chopped cilantro in AFTER you put this into the blender. This is my version of a copy cat, but I don't know, because I've never had it. Let me know if you think it is close. I came up with this recipe because my husband does not like the cilantro ranch dressing.
