1 pound Italian turkey sausage links, casings removed
1 large onion, chopped
1 large green pepper, chopped
1-1/4 cups sliced fresh mushrooms
2 garlic cloves, minced
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 teaspoon Italian seasoning
1 teaspoon chili powder
6 cups uncooked spiral pasta
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • Crumble sausage into a large nonstick skillet. Add the onion, green pepper and mushrooms. Cook over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. , Stir in the tomatoes, Italian seasoning and chili powder. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. , Meanwhile, cook pasta according to package directions; drain. 2 cups uncooked egg noodles
2 pounds Italian turkey sausage, cut into 1-inch slices
1 large onion, chopped
2 medium carrots, sliced
1/2 cup chopped green pepper
1/2 cup all-purpose flour
2-1/2 cups milk
1/4 cup Worcestershire sauce
1/4 teaspoon rubbed sage

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large skillet, cook the sausage, onion, carrots and green pepper over medium heat until meat is no longer pink. Stir in flour until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Drain noodles. 12 large plus 6 medium cabbage leaves
2 packets (3 ounces each) instant multigrain rice mix
1 medium onion, finely chopped
1/2 cup finely chopped sweet red pepper
1/4 cup minced fresh parsley
3 teaspoons Italian seasoning
1-1/4 teaspoons salt
1 teaspoon garlic powder
1 teaspoon pepper
1-1/2 pounds lean ground turkey
3 Italian turkey sausage links (about 4 ounces each), casings removed
1 bottle (46 ounces) V8 juice

Steps:

  • In batches, cook cabbage leaves in boiling water until crisp-tender, about 5 minutes. Drain; cool slightly., In a large bowl, combine rice mix, onion, red pepper, parsley and seasonings. Add turkey and sausage; mix lightly but thoroughly. , Line bottom of a 6-qt. slow cooker with medium cabbage leaves, overlapping as needed. Trim thick veins from bottom of large cabbage leaves, making V-shaped cuts. Top each with about 1/2 cup filling. Pull cut edges together to overlap, then fold over filling; fold in sides and roll up. 1/4 cup butter
1 large onion, diced
1/2 head cabbage, chopped (approx 6-7 cups)

  • 1. Cook noodles according to package. Drain and set aside.

In this quick weeknight meal, an entire head of cabbage is cooked in the fat left behind by sweet Italian sausage. Goat cheese adds tang and helps create a cream sauce that ties everything together. Feel free to use this recipe as a guideline to come up with your own variation: Try it with your favorite shape of pasta, swap out the thyme for dill, parsley or another herb, or substitute the goat cheese for Parmesan.

8 ounces dry rotini or other shaped pasta
4 tablespoons extra-virgin olive oil
8 ounces sweet Italian sausage, casings removed
1 small head savoy cabbage (about 1 1/2 pounds), quartered, cored and thinly sliced
1 medium yellow onion, thinly sliced
1 teaspoon fresh thyme leaves
1 cup heavy cream
4 ounces goat cheese

Steps:

  • Bring a large pot of heavily salted water to a boil. Add the pasta and cook, stirring occasionally, until al dente, about 7 minutes; drain.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet or Dutch oven over medium. Add the sausage and cook, breaking apart with a wooden spoon, until fully cooked and crumbled, about 5 minutes. Using a slotted spoon, transfer the sausage to a plate, leaving the fat in the pan.
  • Add the cabbage, onion, thyme, 1 teaspoon salt, 1/2 teaspoon pepper and the remaining 2 tablespoons olive oil to the skillet. Cover and cook, stirring regularly, until the cabbage has completely wilted and starts to brown, about 15 minutes.

½ cup butter
2 cloves garlic, minced
¼ cup olive oil
1 large head green cabbage, shredded
salt and pepper to taste
1 pound smoked sausage, sliced

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. 1 tablespoon egg white, lightly beaten
2 teaspoons cornstarch
1 1/2 teaspoons plus 1 tablespoon rice wine or dry sherry
Salt to taste
1 1/2 teaspoons water
1/2 pound turkey cutlets, cut across the grain in 1/4-inch thick slices
1/2 cup chicken or vegetable stock
1 tablespoon soy sauce (more to taste)
1/2 teaspoon sugar
1 tablespoon minced garlic
1 tablespoon minced ginger
1/4 to 1/2 teaspoon red pepper flakes, or 1 to 2 serrano or Thai chiles, minced
6 ounces soba noodles (2 bundles)
2 teaspoons sesame oil
2 tablespoons grapeseed oil, peanut oil, sunflower oil or canola oil
1/2 medium cabbage, shredded (about 4 cups)
1 bunch scallions, thinly sliced, dark green parts separated
1/2 cup coarsely chopped cilantro

Steps:

  • In a large bowl stir together egg white, cornstarch, 1 1/2 teaspoons of rice wine or sherry, salt to taste and 1 1/2 teaspoons water. When you can no longer see any undissolved cornstarch add turkey and stir until coated. Cover bowl and place in refrigerator for 30 minutes.
  • Combine stock, soy sauce, remaining rice wine or sherry, salt to taste and sugar in a small bowl and stir until salt and sugar dissolve. Combine garlic, ginger, and pepper flakes or minced chile in another bowl. Have everything within reach of your wok.
  • Cook the soba in a large saucepan and toss with 2 teaspoons sesame oil. Do not drain the water. Bring it back to a boil and turn the heat down so that water is at a bare simmer. Carefully add turkey to the water, stirring so that the pieces don't clump. Cook until turkey turns opaque on the surface but is not cooked through, about 1 minute. Drain in a colander, then on paper towels.
  • Heat a 14-inch flat-bottomed wok over high heat until a drop of water evaporates within a second or two when added to the wok. Swirl in grapeseed oil, peanut oil, sunflower oil or canola oil and add garlic, ginger and chile mixture. Stir-fry no more than 10 seconds and add turkey, cabbage and the light parts of the scallions. Stir-fry 2 minutes. Add noodles and the broth mixture. Reduce heat to medium and stir-fry 1 to 2 minutes. Add cilantro and dark green part of the scallions and stir-fry another 30 seconds to a minute, until well combined. Serve, garnished with cilantro sprigs if desired.
