Move over poached and so long over-easy -- there's an even happier way to eat eggs. Say hello these nests of puffy whipped egg whites with a sunshine yolk center. Eat them on toast for the perfect start to your day.

Nonstick cooking spray
4 large eggs
Kosher salt
4 slices buttered brioche toast, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment and coat with nonstick cooking spray.
  • Coat 4 small bowls with nonstick cooking spray. Separate the eggs and put the whites into a medium bowl and the yolks in the small bowls (1 yolk per bowl). Add a large pinch of salt to the egg whites and beat with an electric mixer on low speed until stiff peaks form, 2 to 3 minutes.
  • Dollop 4 large spoonfuls of the egg whites onto the prepared baking sheet and make a small well in the middle of each with the back of a spoon. Bake the whites until they are firm, no longer wet and just beginning to turn brown, about 6 minutes. Gently pour 1 yolk into the well of each white. Bake until the edges of the yolk just start to set while still being runny, 3 to 4 minutes. Season with salt.
  • Serve on top of buttered brioche toast.

CUMIN GRILLED CHICKEN BREASTS

Yield 4 servings (1 serving equals 5 ounces chicken breast)

Nonstick cooking spray
4 skinless boneless chicken breast halves (5 to 6 ounces each) pounded to 1/2-inch thickness
2 teaspoons olive oil
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Spray a grill or grill pan with cooking spray and heat to medium-high heat. Rub chicken breasts with olive oil. Combine cumin, salt and pepper and rub spice mixture evenly onto chicken breasts. Grill until grill marks have formed and chicken is cooked through, about 4-5 minutes per side. Remove from heat, let rest for 5 minutes, then slice into 1/2-inch thick slices. Serve over coleslaw, if desired.

2 tablespoons canola oil (or olive oil for olive oil spray)
1 cup less two tablespoons water

Steps:

  • Buy a new plant mister bottle. Wash thoroughly before using.
  • Add two tablespoons of canola oil followed by 1 cup less two tablespoons of water.
  • Use these sprays the same way you would use commercial cooking sprays. Just make sure you shake it before each use.

Make your own Non-Stick cooking spray. I found this many years ago in a great cookbook. MAKE YOUR OWN CONVENIENCE FOODS by Don & Joan German. What I love about it is, "No propellents, no chemicals, no waste. And it lasts a long time.

1 cup unflavored vodka (any brand)
4 teaspoons liquid lecithin

Steps:

  • We've all seen PAM and other sprays for Non stick cooking.
  • Now you can make your own at a fraction of the cost and no additives at all. Just pure liquid Lecithin which is a derivitive of Soy Beans.
  • You can buy Liquid Lecithin in most health food stores.
  • Pour Vodka into a jar with a screw on lid. Add the lecithin and shake to dissolve. That's it!
  • If the idea of Vodka bothers you, you can use vegetable oil, corn oil or canola oil. But the oils will not dissolve the lecithin completely.
  • As your pan heats the alcohol will evaporate leaving nothing but a thin coating of lecithin. NOTHING sticks! And it's easy to wash up.
  • You can apply this with a basting brush, or a small spray bottle. I find a square of clean paper towel works best.
  • Use only as much as needed to cover the bottom of a pan. A little goes a long way. No refrigeration required.
  • Personally, I LOVE IT.
